What makes avocado turn brown and ugly is oxidation, which happens when in contact with air. I'm this case, both the air tight container and the lime juice help to keep it sealed away and thus prevent oxidation from happening. With that said, a week might still be a bit too much time, but it should hold decently enough for 4 to 5 days if properly sealed and in the fridge.
As someone who never cooks because I basically live with a woman who's a chef these recipes are amazingly clear explained and to then see you go through all the comments and reply to every one of them. Bravo sir.

Here's a quick tip:: I don't know why that is, but if you put the avocado seed back on top of the smashed avocado it keeps the green color and doesn't turn brown 😀

I did a double take when I worked out the calories at around 400 per serving (note: I don't like avocado, so I skipped the lime avocado topping). It tasted great to me, but if you like heat I would double the chili powder and add another jalapeño. I plan to add some hot sauce to the next portion to spice it up.

Hi Jack, I love this recipe and the fact you can freeze it for approx 3 months is a big bonus for me as I sometimes with bad weather I'm unable to leave my house for days on end. When I cook my rice and water is gone I stir it to break it up a bit then I put this slices of butter on top of the rice and replace the old to allow butter to melt then stir well to break up rice good and mix butter well into it. Everyone loves the rice this way better than plain rice. Can I still freeze the dish with buttered rice? Please and thanks tons

What happens to the avocado and pico de gallo when you warm the meal up in the microwave? I would think those parts of the dish are supposed to be cold whilst only the chicken and rice are warm? Or is it all supposed to be eaten cold?
I've noticed this on multiple burrito bowl recipe videos, but how do you get the chicken to cook so fast? When I cook chicken thighs it literally takes 30-40 minutes on 425 Celsius to properly cook them, and that's with cutting them up as well.
This looks and sounds lovely, but shouldn't the avocado be stored separately so that the meal can be heated up later? Or is warm avocado actually okay?
Couldn’t parsley work as a substitute for the cilantro/coriander, if someone don’t want the cilantro flavour? (If they have the «cilantro-tastes-like-soap gene» for instance).

When you reheat this in the microwave do you reheat everything you added at the end such as the sour cream, lime/smashed avo and pico de halo and hot sauce or do you leave that out and add it fresh after you reheated the meat and rice? Just seems like heating it all together would make it all hot and not taste fresh/nice? Please let me know :)
You are supposed to heat it up later, right? It’s a bit confusing that you are adding avocado, salsa and sour cream right away, but it’s weird to heat them up or?

Coriander is such a different flavour to parsley and it’s not going to be the same with parsley. I’d recommend just leaving it out

The water is cooked into the rice with the perfect ratio. There’s no need to drain anything
