And as far as whiting goes a double dip and fry. Dry your nuggets cover with seasoned flour mix then an egg wash then a breadcrumb and seasoning mix dip and fry it makes the small nuggets a little bit bigger and crunchy.
Eat it all the time from catching them on the beach on the east coast. Typically pan sear it, but have also made fish fingers with an egg wash and coating them with crushed ritz crackers. My kids love them!
Whiting was my target species on the St. Augustine pier for 20 years. lightly blackened is pretty fantastic. really just a little salt/pepper/garlic is enough. it's a really clean fish. 14inches is on the bigger side. they cap out at about 17inches. also Whiting head is a really good bait for reds.
I keep the fillets on salted ice water until I'm ready. Then I press them into a mixture of 3/4 c cornmeal, 1 tbl flour, and 2 tsp blackening season. You should press hard enough so the cornmeal sticks. Then, most importantly, let the fillets dry for at least 15 minutes. Then, I shallow fry them in oil. Great for po boys. This fish is fried a lot up in Maryland/DC/DMV area. I stole their recipes for a whiting sandwich.
blackened whiting tacos are excellent. Thin fish so doesn't take a ton of seasoning. If you let the fish cool on a rack it will stay a lot crispier. All around excellent fish and easy to catch from the beach.
I like this video a lot cause it's more relatable. Only so many people have boats, whereas just about anyone could do this. Will be interesting to see if the view count ends up reflecting this for the community as a whole.

I'm an avid surf angler and whiting are fantastic! I like em fried, baked, grilled, or in the air fryer. Typically I marinate mine in a honey teriyaki and they're so good, my wife eats em and she doesn't like fish very much :-)

I like to cook it Everglades heat and some Cajun season together. I also like some style of Old Bay on it too. Don’t forget to add lemon, salt, pepper and butter. Quick and simple
I like to marinade it in a little soy sauce, garlic and some gochujang. Either grill fast and hot or pan fry. Then make lettuce wraps with some jasmine or sushi rice.
Me and my Forman finished up work, then fished off the beach at Jamaica Beach Galveston and seriously the only thing caught the whole day was a lure that I Iost off a hard cast ...😂
We call them kingfish at home which of course they are not. Not sure why this is but that's what I grew up calling them. We use blood worms or mole crabs as bait.

Everglades Seasoning, EXCELLENT.. I have that as well. I used it tonight on my pork chop.. Deer Meat For Dinner uses it. THUMBS UP!!

I just tried whiting for the first time also this weekend. I would definitely recommend anyone trying it. Not fishy at all but had great texture.
They always use to fry whitening at fish fry fund raisers.
