Just dug up a bunch of these while digging a new septic field by hand. We ate a bunch raw. They were small and tender and reminded me of a very mild radish. I put them in some spicy green coconut curry with pork and they were fantastic. I put them in at the end and they soaked up the spiciness and just lit up our mouths when we bit into them. I will definitely go get some more while they're still small and tender. Thanks for encouraging me to eat these things.

Yeah, it is sometimes call the Rattlesnake Weed.

The roots are seasonal. The heat of Florida puts them on hold until fall. You can find the roots before and after the heat. The leaves are edible but are a famine food (they don't taste good.)

Yeph, they grow from Texas to Virginia (and in California and are cultivated in New York state.)

    Hi Green Deane,
I have just a couple more of your video to watch before I run out:-( I really enjoyed them all so far! Keep them coming. Thanks for creating them. A real joy to watch.

It puts on a root in one season, and they grow from there next year. In ideal soil and conditions they can reportedly get up to three feet long. Four to five inches is the largest I've seen here.

It is strange how things are priced sometime. Where I grew up, lobster was for the poor people. We would gather up a lot of them and cook them in a big drum over an open fire. I loved the legs. I would squeeze the meat out with my teeth.
These are somewhat rare here in Alabama, at least in this area. We have heavy clay soil and these seem to prefer a more sand and sand to silt soil. I will keep an eye out for them. I am taking a trip to Mobile this week so I might see some.

Check out the Native Plant Society. They would know. Also Delena Tull has a good book for your area Edible and Useful Plants of Texas and the Southwest.

Thanks.... it would bring down the price, clear a lot of places of Stachys and reduce the amount of bad chemicals being used to get rid of it, let alone the savings. And yep, I start work on 47 as soon as the rain stop...

I have a very large patch of these in my backyard. The bees LOVE them and so do I. But I had no idea the rhizomes were edible.

You know with the "suruvalist" shows like man vs wild, and survivorman becomming more and more popular across the US I have seen a big growth in an interest in wild edibles, I bet you could get a nice size group of poeple of all ages and backrounds to go on walks together learning about plants, and other wild edibles...I know in the city there are guides who do tours through the parks talking and teaching about the same things...

I have them growing prolifically in a raised bed - literally off the ground. I tried to transplant some and they died. I watered them a lot, but that didn't seem to help. I suspect I separated them too brutally from the parent plant. You know how tangled up they are. Can you advise how to get the best clump to transplant? Thank you

Will this plant survive in Massachusetts? We want to move some plants from our garden in South Carolina to our home in Massachusetts but don't want this plant to follow us. Some of the plants we are moving are tubers and we don't want to accidentally bring along the stachys floridana if it will survive our climate.
