Steamed Vegetable Dumplings are made with dry tofu, glass noodles and vegetables. Two sauces are just perfect to serve with, vinegar with ginger and spicy sauce. It is always good to make batches to save in the freezer for a perfect lunch or an appetizer.

1 pack of dumpling wrappers
For the filling:
Dry tofu (or firm tofu or carrots)
Cabbage (or bok choy or napa cabbage)
Bella mushrooms (or button mushrooms or shiitake mushrooms)
Glass noodles (aka bean thread noodles)
Green onions
Salt
Light Soy Sauce
Vegetable oil
Sesame oil

I never thought of putting glass noodles in dumplings before! I’ll have to try that next time! My favorite are probably the more traditional ones, like pork, chives, Napa Cabbage 🥬 and I season the filling the same as you. I’m allergic to mushrooms 🍄 so I use pork or shrimp 🍤! My favorite dipping sauce is definitely the spicy Sichuan style! Chili oil, Chinese vinegar, soy sauce and green onion! I always look forward to your videos and today was my birthday and I had shrimp and napa cabbage dumplings from my freezer! Coincidence! Many thanks, Ling! Adding glass noodles 🍜 in dumplings are pretty common in Korea... 🔎 for "Mandu" recipe.. & u will find plenty.... 😁

Your dumpling folding skills are amazing. Also that black vinegar is sooooo strong. I use just a splash in my dishes and sometimes that's too much. I wish I liked it more. Your second sauce though is top notch!

Now I know what to do with pressed tofu. Whenever I make goi cuon or dumplings I like to use rice vermicelli instead of cellophane noodles. I haven't made dumplings in a long while because I'm lazy and buy them from the Asian grocer in town. Plus I had trouble sealing them but now thanks to you I know what I was doing wrong. Looks delicious. I'm assuming you get those dumpling wrappers in an Asian market. The wrappers in the supermarkets are generally too thick.
If they are too thick, you may roll again with a rolling pin.

During business in Shanghai i usually got a dozen steamed dumplings at the hotel breakfast everyday. On the final day i might eat a few more! After checking in at Pudong airport if i have time i usually get dumplings with hot soup inside ( xiaolongbaozi , have to eat carefully ) and then another box or two of steamed dumplings near the gate to eat on the plane.
I like to eat dumplings without any sauce they taste and chew marvelous just plain. But eating so many dumplings each day, my sodium level was probably pretty high. Oh, I miss travel to Shanghai...

Chinese black vinegar is fermented from glutinous rice you may compare to balsamic vinegar 😊
