  • This is a 2 ingredient easy sauerkraut recipe. If you use a food processor it is ready in minutes. I always have some fermented foods in my fridge as they are high in probiotics and aid digestion and nutrient absorption. I enjoy the taste of these along with meats and veggies. They compliments sandwiches and even Indian foods very well.
    Sauerkraut is considered a super food for its various benefits. Probiotic fermented cabbage is extremely low in carbs, high in vitamins, minerals, full of probiotics, fibre and enzymes. It is believed to benefit digestion, your immune system, eyes, heart, energy, bones and eyes. Go ahead and try this keto recipe. It is simple and a very healthy addition to your low carb lifestyle.     I muddle my salt and cabbage until it turns soft and makes it's own water then I put in jars doesn't need no brine makes it's own when muddled with salt cabbage ferments and sours that's why it's called sauerkraut

    Can I store it in plastic jar as I am always afraid of buying glass jar as I drop utensils frequently, or any other storage optical like clay pot

      Thanks. Ideally glass is the most non reactive. Plastic can leach chemicals into your food and contaminate it. So buy cheap jars and use them a bit carefully.

    Good video thank you. I don't understand how water comes out of it though it it is completely sealed? Or do you leave it open slightly. Do you have to open it each day to release any gas?

      You can release the air built up everyday if your jar is air tight.

    Amazing video and very helpful too.I have some questions, the jar that you have used,
    Is that air tight ?
    If it is air tight ,won't it explode with all the water that comes out during fermentation,coz I can see that there is a rubber there to make it air tight?
    If not, what is it called ?
    Does it attract bugs ?

    I like it tangy, so I could leave it for a few more days? I wonder if there is a difference in the nutritional benefits in leaving it a bit longer to ferment, too?

      It only gets healthier as you ferment it longer. Of course up to a limit. I have tried fermenting for a month too. But it gets a bit too tangy for me. Although I would not recommend going further than a week on your first try.

      As far as the health benefits go, it mainly has more of the healthy bacteria and is more alkaline. I am sure there is an increase in Vitamin B content too.

      @@SonalsFood yes especially Vitamin B12. Btw did you notice mold developing around the leaf? I have prepared two jars one 6 days and second 3 days back. I see mold appearing on top of the brine. Should I just scoop out the mold and continue fermenting or should I start eating it.

      Prachi Gupta you can add it to salads. Eat it with meats or fish. I even eat it with Indian food on the side in place of onions.

    Did you completely soak the last cabbage leaf in the brine or it can be a little outside water?

      Swati Kain cover it as much as possible. Some of it was outside the brine. I normally discard it out. You can also put an inverted glass bowl on top to push the leaf down.

    The usual method is to add salt directly to cabbage leave it for 20-30 minutes and then massage it. The water come out of cabbage is used as brine, no need to separately make brine and add it
    However, I will definitely try this (save me time and effort for massaging).

      Its kenwood brand. But unfortunately none of the spare part are available in India. So I will advice against buying it.

      Glass is the most preferred. Plastic will react with it and leach into the sauerkraut.

      Keep it in a cool dark place for 3 days and then refrigerator. You don't need to open it but you can.

    Hi, thank for the video. I take it that you washed the outer surface of the cabbage since it is not yet cut. Is that sufficient? Won't there be pesticides, pests inside the cabbage? 🤔

      The sprayed pesticides not not go inside. So I dont wash cabbage or any veggies after cutting. If you cant find organic. then fermentation makes it better.

Or gone bad and with in how many days can i eat that after fermentation and should i keep it in fridge after fermentation?

      I find that 3-7 days of fermentation works well for my taste. But even 1 day is fine. Ferment in cool room. And after it is fermented to your liking store in refrigerator. Once you ferment leave the jar open for a 1 min. Take some out and if it smells rotten then its bad. But if you have enough salt it won't rot.

    I tried preparing upper 30% turned brownish and smells and some flies and bubbles too. Did it spoil or prepared wrong

      It can get brownish on top. You can discard that. But there shouldn't be flies. Was it not covered. I would discard this batch.

      Ionized salt has chemicals. It is preferred that you use sea salt or pink salt. But if you don't have any then you can use the ionized salt.

      Let it sit outside for 3 days and then after that in the refrigerator. No need to strain the water.
