  • Fermentation of anything and everything is possible using just some salt.Fermentation is a process by which you leave your vegetables or fruits to develop beneficial bacteria and microorganisms at room temperature. This is done by putting the veggies in a glass jar; covered in brine, or water that comes out of them after salting them. Then you leave them in a cool dark place for anywhere from 3 days to a week. You should taste for the right amount of tanginess as per your liking and decide the duration of fermentation accordingly. After the fermented veggies are sour to your liking, leave it in the refrigerator while you eat it everyday. A well fermented vegetable will almost never go bad in the refrigerator. There are people who ferment them for even 6 months. But, I think that it would be too sour for my taste. During this process the natural bacteria grow by consuming the carbohydrates from the food and producing lactic acid which makes them sour. The Salt curbs the growth of the harmful bacteria and thus provides a conducive environment for the good bacteria. A complex colony of beneficial bacteria is formed inside the fermented foods. This depends on the vegetable that you are fermenting, the natural bacteria present in the environment depending of the region, the room temperature, and various other known and unknown factors. In the rare cases where this may develop a mold, I am sharing a resource of all the information you may require about it. I am also sharing information about how wonderful this food is and why it is generating recognition of being a super-food. Probiotic sauerkraut and fermented salsa are the most versatile and can be eaten with everything. Hope you make you own ferments and it helps maintain a healthy lifestyle to fight corona. Good luck!

    Wow!!! Thank you so much for sharing. Love your strong positive energy. Just getting into fermentation.and I'm having a blast w different vegetables. So much fun watching you make different vegs. I especially loved the green onion on the round bread(naan?). I had not thought of that. I'm Hispanic and will be fermenting green onions and serving them the way you did for my tacos.     Thank you for this! I found you from looking into fermented recipes. I have known about the benefits of probiotics for many years, even before the corona, but I never knew how simple it could be to make them ourselves. Probiotics can be so expensive, but fermenting isn't expensive at all.

      I am not sure if it is just as good. Not too much research happens on Indian foods, so it is hard to tell. But I know that they are probiotic.

    I have Corona, 6 days in. I went 2 days without fever's, thought it was over. Today, the worst day yet. Haven't been able to eat much, trying to get supplements down in a shake but I can't get milk products down so that too isn't working. Can't taste or smell anything.

      I am so sorry to hear that. I hope you are taking hot liquids(water) every couple of hours with turmeric and ginger. Also smell eucalyptus oil by putting a few drops in a hankie. Eat half a love from time to time. Best wishes. Keep me updated once you get well.

    Do you use ordinary tap water (to make brine using Himalayan salt) Because I’ve always wanted to do fermentation for health reason but have not due to people informing one must use filtered or alkaline water etc. Please, is ordinary tap water perfectly fine to use? Also, do you know if a little apple cider vinegar (ACV) put into the brine would help with the fermentation bubbling? You mentioned sugar, can you add sugar and salt together to dampen the sourness of fermentation? Can you eat the white mould? Thank you.

      1. I use filtered water.
      2. Some sugar is used in some recipes. Salt and sugar can be used together.
      3.you can ferment with salt alone too.

      Mostly as a side dish. U can put it on meats. If you are making a roll with meats yous can stuff sauerkraut. I add mine to soups just before serving too.

    Can I just ferment carrots, radish, turnip together after finely slicing them and using only brine (no added spices), just like we make Sauerkraut? If yes, how long that would last if I keep it in the fridge after it has been made? Thank you!

      You can ferment them with salt and once fermented it will last in the refrigerator for years.

      You can taste it after a day or two to check for the level of sour that you like and decided the fermentation period accordingly.

      You can even do cucumber without brine. It will leave its own water and ferment only for a day.

      No fermentation cannot be done in cooked vegetables. Cooking will kill all the beneficial bacteria that helps in fermentation.

      It doesn't because you eat the salt level that would be in any other food not more than that. It's not a salty food. Also you can add less salt and eat less.

      It should be like sea water.
      I dont know if all fruits can be fermented. They can turn sour too quickly.
      You can drink the ater or add it to a drink.
      Outer skins can be fermented.

    I read the probiotics that we eat in the form of food daily, all the good bacteria present in them are destroyed in the stomach only. So, they do not reach the intestines at all. Please share your thoughts on this

      I am not an expert but I have read the few strains of bacteria survive stomach acid. So eating a variety is a good idea. Especially sauerkraut and kimchi.

      Sorry to hear that. So basically salt everything to stop bad bacteria. The brine should be like sea water. Add any firm veggies, non starchy. Ferment for a couple of days at room temperature and then the fridge.

      You can look up this information online. There is a slight difference because of temperature, season and location etc

      Eating a variety is good as each ferment has a different combination of cultures. Kimchi, sauerkraut and kefir are considered superiors. But I think that is because more research is done in them and are more popular.

      @@radharanient no yeast for vegetables or millets required. For millets add a dry red chilli. I hear it helps in fermentation. Although I haven't fermented millets

    My wife adds mustard powder to brine to "pickle"carrots/onions etc.to have oil less pickles.I guess mustard aids fermentation process. Try and opine.

      Yes absolutely and it's delicious. People make Kanji too with Mustard and ferment. The more variety you have the better.
