This video presents the basic water activity measurement method foods. I have explained the origin of water activity in foods by discussing its energy state, chemical potential, fugacity, vapour pressure, and relative humidity. In addition, simple experimental set up is discussed followed by the progress of the commercial water activity measurement instruments for foods.
