When I lived in The Netherlands, after visiting a Sensi Cafe, it was always a visit to the nearest Shoarma store and they have some really good ones there but then, when I was visiting friends in Tel Aviv, Israel, I had some Shoarma which made the ones in The Netherlands taste like garbage. OMG fresh meat, great seasoning, and portions enough to feed General Patton's army. The sauces they had were just out of this world and that's when I started to make my own Shoarma because my then-girlfriend managed to get the recipe from her Grandfather who started a rather large chain of Shoarma stores in Tel Aviv. (and nope, I didn't run into the Zoohan)
Ummm those all only look good but you can 100% find much much better especially in the DC area. Your list only has 2 east coast locations and missed great locations from parts of the east coast that have high Lebanese populations.

I’ve had each of the Chicago places and none of them are as good as Palm Palace in Ann Arbor, MI

Shawarma is actually from Lebanon, in other countries it has another name.
If they are using wagu it won’t be economically priced.
