Ive been making cheese chips with cheddar and other types at 250 for 35 minutes with good results, does the mozzarella require a higher temperature for this recipe?

One of two things could have happened. If the scoops are too big or too close together they will spread into each other. If this happens just let them hardened and cool completely then you can cut or break them into desired size pieces

They're best eaten the day you make them. You can store them in an airtight container for a couple of days but they will start to lose their crispness
