    Should fry the paste until it’s dry and add coconut milk a little at a time. Continue cooking it out until it’s dry and enriching it with the coconut milk and it helps develop the flavor of the paste

      is this legit or just your way? i've seen other channels from thai people who boil the coconut milk first then add the paste

      @@bluebellbeatnik4945 Late reply but 30 or 40 years ago I did attend a cooking class in Chiang Mai and the teacher definitely started by boiling the coconut milk until it split. No other ingredients were added until that happened however, the paste had already been fried off in another pan. This is a simplified recipe but it still works.

      @@bluebellbeatnik4945 Boiling coconut milk converts into saturated fat and cholesterol, always add coconut milk to curries and soups after turning off the flame or just gently simmer.

    Absolutely Great looking curry! I’m always cooking Thai pumpkin curry for my family and so I KNOW how truly beautiful this is! I usually use palm sugar or brown sugar but besides that our recipe is exactly the same😋Thanks for sharing this beautiful video❤️

    This was the 2nd recipe I made from your page and it was a hit! I used the 'taste of asia' paste I bought from Walmart. And I used bell peppers and carrot (what I had in the fridge). Thanks again!

    Asian and Indian food is sooooo scrumptious and flavorful that I no longer enjoy eating mediterranean food which now seems too bland. Curries especially are my favorite.

    Love it. Authentic or not, I prefer this a little hotter and drier (ie., not a soup) compared to a green curry. It's disappointing when you go to a restaurant and both the green and red are too similar to eachother!

    You need to pour your Coconut milk and slower, so you're sauce doesn't break. But the pumpkin Is an interesting new twist...

      This is a good soup version...very similar in taste. www.allrecipes.com/recipe/146035/the-best-thai-coconut-soup/
      Also, as long as you have the curry paste, coconut milk, fish sauce, brown sugar, and chicken broth you can go wherever you want to with this dish. You can just add more chicken broth to make it more soupy and you can try any meat you like and put any veggies in it that you enjoy as well...I recommend butternut squash!
      Also, don’t be scared to add some rice noodles (like vermicelli)...you can top with some bean sprouts, a sprinkle of shallots, cilantro, lime and some Thai🌶 for an extra kick....it’s soooo delicious🤤

    Dont just pour meat and vegetables in the pan like making a stew, and you have added the coconut milk waaaaay too early! The way this video shows doesn’t make the vegetables nor meat taste its best because it was not fried with the sauce, the chicken aroma was not released and it was tossed in the “sauce”. Not the most delicious way of cooking Thai curry. (I showed to my chef friends and they all criticized heavily on this “incorrect” method of cooking thai curry.) You should really learn how to cook thai curry chicken properly… 😢
