    Very nice recipe. My mom رحمها الله used to make the same thing but I can't tell ou if it's the same method!
    It's nice to keep your traditions alive.

    Thank you! I've thrown away a shameful amount of eggplant from many, many horrible recipes. I can finally stop buying the store versions made with unhealthy vegetable oils now that I've found your video. I bought a Lebanese cookbook and she says to boil the eggplant for 1 minute!!! My husband and I thought maybe the eggplants would get soft by sitting in the olive oil, hahaha, that didn't happen. I can't wait to surprise my husband with your recipe!

    Hi Elvanca, after 2days of draining the eggplant smells spoil for me. Any tips how to avoid it? I have to throw it. I'm looking forward to make it perfectly. I love makdous so much ♥️

      +1, also can we use lemon juice instead of citric acid?
