You don't have to peel it first. I don't peel it. I cut the onion first in half and then peel it. it's easier that way.

My mum gave me an avocado as a gift because I've been feeling sad recently. I think this sandwich may be a worthy destination.

Life hack for removing the avocado pit: hold the half of the avocado with the pit in one hand with the pit facing up, take your straight-edge chef knife and carefully but firmly tap the pit with the blade. It will sink in several mm deep which is enough to then rotate the blade 90° to pop the pit loose and extract it without having to dig a fork or your fingers into the delicious, green meat of the avocado. If you get a ripe avocado (and you can discern the ripeness by removing the stem and looking for a dark green color underneath) this method will guarantee you a perfect, unmarred avocado 100% of the time.
If you then get good with a spoon and loosen the meat around the edges of the skin, you can get two perfect avocado halves that you slice in to restaurant-quality avocado slices. Or you can leave them in the skin, dig out a little bit more of a depression around where the pit was, and crack an egg into them and bake them for a *delicious* avocado and egg bake. Melt cheese over top for added decadence.
If the avocado is ripe enough, you might also be able to just peel back the outer skin and have a much easier time of things.
Or, at least, this is something *I*'ve done whenever I've had ripe avocados on hand.
Yeah, that's how I do it. No idea where I learnt that, but when I did it changed my life. That's after my first major change of course: being in an avocado financial position.
