Royal Icing
3 eggs whites room temperature
1 pound powdered sugar (confectioners)
1 teaspoon cream of tartar
Combine ingredients, beat at high speed 7-10 minutes.
Dries quickly-keep covered.
DECORATING BUTTERCREAM
2 CUP SHORTENING (SWEETEX)
1 CUP MILK (CANNED MILK IS GOOD)
2 TSP VANILLA
1 TSP. ALMOND EXTRACT
½ TSP.BUTTER FLAVORING
3 LB. POWDERED SUGAR
2 tsp. salt
Mix together and beat 10 minutes until light and fluffy it
will keep in refrigerator for about 2 wks. Is enough
to ice and decorate an 8 or 9 inch double layer cake.
You can cut the recipe in half if you don't need that much. In this video I am using Pastry Pride Whip Topping. It can be found at
most restaurant supply stores and Cake decorating supply stores. Riches Buttercream is also a good option.

When using buttercream over a large area, I have found that patience is key to a good result. In some regards, buttercream can be more tricky than a fondant. I've also found that Swiss Meringue buttercream to be the easiest to work with.

Your tutorial is by far the best I've seen! When I watch other videos on how to do it they make it seem complicated but when I watched your video I can understand how to do it. :) Thank you! By the way not sure if I missed it in the video or not but how long do you freeze the cake after it's done baking?

Let the cake cool when you take it out of the oven, when it is cooled wrap it up in a plastic bag or foil to make sure that it does not get freezer burn. You can then freeze it for however long you want! But I would say at least freeze it until it is stiff enough to split and fill so that your cake doesn't fall apart. Hi liz! Lovely video! I want to make a 12x18 sheet cake for my daughters bday. How many boxes of cake will I need? And as for spatula what do you recommmend to use on this type of cake?
+Alison Flores Hi Alison, I use 2 boxes for an 18x12. Are you asking about the "dry wall tool" ? I highly recommend buying this in the hardware store , they are very inexpensive and work well! Hi Grisel, if you are just starting out I would recommend that you buy a 1/4 sheet pan, an 8' round and a 10" round. Those are the basics. Wilton brand pans are very good. Did you see the message about the sheet pan dimensions?

Mikyla Millard Hi it's typically called a "bench knife" it can also be called a "scraper" the one in this video is actually a Dry Wall tool that can be purchased at the hardware store in the paint department.

In my videos, I use pastry pride. Its basically stabilized whipped cream. Its delicious, easy to decorate with, and not as sugary as buttercream.

Hi Grisel, a quarter sheet is 9x12 a half is 12x18 a full is 18 x24. I like wilton Commercial pans the best, they are heavier and bake a more level cake. You can find them on like or at kitchen stores or even Walmart. L

Susan Kang Hi Susan, I know some decorators do that, I just never have. Using these tools it isn't necessary most of the time.

I loved this cake and decided to make it for a friend's baby shower, could you tell me about how many cups of butter cream did you use? I would like to make plenty so I won't be interrupted by having to make more half way in the process. Also, what size is the glass plate did you use? My cake will be a 15" and I'm thinking mine should be a 19', what do you think?
jadangie 12 I would use about 3 or 4 batches for a 1/2 sheet cake. I just used a half sheet pan and bought a half sheet board which is normally a few inches out from the cake already. As you can see in the video, you can always trim the cakeso that you have more room for borders. Thank you so much for watching and don't forget to send pictures of your cake!!!

Hi, I actually use a cake mix most of the time. I add butter instead of oil and milk instead of water. I like the stability and regularity of using a mix.

Can you frost with cream cheese frosting?
+Carmencita Villafane That's tricky. I have done a lot of cakes in cream cheese icing at the grocery stores. However, cream cheese is really not stiff enough to decorate with, and a lot of times, it melts right off of the cake :( If you can find the kind they use at the grocery stores, you might have a little better luck.

Great tips Liz...question?? if I put a damn 1/4 inch from boarder and filled middle with raspberry filling ... when trimming the edges , I see alot of the boarder being cut off...wouldn't the raspberry filling start to coming out the side , because most of the damn would be cut off....Thanks for another great tutorial
Susan Kang Hi Susan, good question, you really try not to cut too far into the icing dam. You kind of have to judge how far in to cut. also you don't want to cut off more that you need to, just to make your cake fit the board or to shape the cake. Thakns
Does the vanilla pudding just add flavor or help with the consistency as well?

I read in one of the comments that the filling that you are using in the cake is pudding and pastry pride. Do you just use pastry pride in place of milk?
Hi Hildred, yes and no. I use a small amount of milk to dissolve the pudding, then add the pastry pride and the Whip. The Pastry Pride creates the volume. Thanks

Sweety Sisters One tip is to use heavy/thick aluminum pans this helps alot. If you don't have those wrap a damp piece of towel (strip) around the cake. This prevents the sides from baking too quickly. Also push your batter up around the sides of the pan and out of the center.

Get a strip of foil long enough to wrap around your pan and wet a piece of towel and fold the foil around it and wdap it around your pan
