Looked good! Well done!. Glad to see it done with lump! You should try just salt, ditching the water pan when it reaches 180-190° internal, flip the butt (no wrap) & let it finish. It crisps up the bark nicely and is awesome when you add little more salt, black pepper, cayenne, vinegar sauce & chop it with a cleaver (no pull). I think you’ll like it. #ncbbq. 🍻
