Thanks a lot my dear Guru. My Aaya used to made this flour in house. That broomstick was looking very convenient.Now only got the ratio of both the rices.I used to buy readymade flour. I sprinkle hot water if dough becomes dry (huge amount) and lightly knead.

4 measure raw rice + 1 measure parboiled rice(also called as idli rice) ...wash well and soak in water for an hour or two...drain the water(plants love this water) and use a clean cotton towel to spread this rice for about 20-30 minutes...it should not become too dry...when you touch it , should feel damp...that time...use the flour mill to grind into nice flour... in a large kadai, dry roast on medium flame till all the wetness is gone....sift again...sprad on a plate....cool off under fan or on the counter for a day or two and can be store in a dry air tight container for upto 3 months... from this flour ididappam is made as per family needs... idiappam recipe.... the flour one cup keep in a large thick bottom bowl... boil water(no measurement) ,add 1/2 tsp salt, and pour little by little on the flour and mix into a soft dough( not too soft) use the idiappam mould and steam cook for 3-4 minutes and serve hot with kurma or chutney or sweet coconut milk.... as the dough cools off, it becomes difficult to use in the mould, so use different plates to form the shapes and steam cooking can be done one after the other....enjoy!
