      When you make ginger bug, weather you chop it finely or grated, I see you use the chopped form to make beverages with and not the grated one, how do you use the grated ginger bug form? Do you use a Tbs. of grated ginger bug to make your beverage?

      Oh this sodqa is SO good! I've been making fermented sodas for about 5 years now and my family loves them!
      This strawberry soda is especially tasty but the blueberry is our favorite.😁😁.

      I have a question. I have a gallon glass carboy with an airlock on the lid. Is there anything I can make or ferment in it other than beer or alcohol?

    I don't know if this would be helpful, but I saw this idea in wine making some years ago, and you may find it useful. For the bottle fermentation, you could stretch a helium quality balloon over the top of the bottle. It will expand when the fermentation causes gases to avoid pressure on the glass.

    Update from 4 days ago. The uneven temperatures in my house were playing havoc with my homemade soda pop. I had resigned myself to waiting for warmer weather...and then I ran out. I might not be the brightest bulb in the string, but I'm determined. I racked my brain for a warm spot. My fridge is too well insulated to be warm on top. Rice bags were unreliable. No yogurt maker or seed starting pad. An ah-ha moment came when I was making coffee. We have one of the Bunn coffee makers that stays warm all the time! I made up a bottle and wrapped it with aluminum foil to keep it dark. Eureka! Soda pop! And it doesn't take up extra counter space, because it sets back out of the way in the space between the coffee maker and the wall; I never push my coffee maker up against the wall. I'm a happy woman ☺️

    I used the info you provided to make many berry sodas, ginger ale and hard cider. I bottled them all in Grolsch Beer bottles with ceramic top. Grolsch also makes capped bottle cases which are much cheeper. The bottles are very thick and green in color. None have ever broken if someone would like to try. Thanks for what you do, Mary.

    I may sound weird but I have some sort of a sleeping disorder and woke up at 3 AM one morning and didn't know what to do, I opened one of your videos cause I really wanted to fall back asleep and believe it or not I fell asleep listening to your sweet voice.     I've been playing with this recipe ever since I first saw your video. I have 2 different bugs, a ginger and a grape. I think I am settling in on the ginger one, even when I'm making grape soda. I will say I'm having great success cutting back on regular sodas and I haven't had any withdrawal symptoms at all! I've poured my soda over ice forever. That cuts the bad a little. I now fill my big to go cup with ice, before work. I add a splash of elderberry syrup, fill it half way with my homemade soda and the rest of the way with whatever store bought soda I have. This will last all day. As the ice melts I just add more ice, stretching it out longer. The flavor holds nicely. I do drink a lot of water during the day, too. Truly, I could drink my ginger bug grape soda, cold, straight from the fridge all day long. But that kind of defeats the purpose 🤣 You have no idea how thankful I am to have found this video.

    Thank you, Mary! I thought this was so neat! My grandchildren rarely ever get sodas if Mommy can help it and I am so proud of her for that. But I want to try this for my grand children! Grandma can now try to make them a "healthy" soda. :) I feel this would be both Mommy and Grandma approved.

    Well its a good recipe that ginger bug. I had only 6 strawberry left, so put in jar sliced,added ginger bug, then rest water. I let it sit 4 days.its been in refrigerator since 27th january. I opened it two days ago. It about blew my head off. Still lots of gas, and fizzy. Real nice. Thanks for the great videos.

    A short update on the Grolsch beer bottles with ceramic tops. I made a batch of mixed berry soda and put the bottles on the counter but had to drive 100 miles to care for my wife's father for several days. When we got back my wife opened a bottle and the contents shot up onto her, the kitchen curtains and the ceiling but the bottle was fine and I've used it since. Next time I'll remember to put it in the fridge.

    When i started making water kefir awhile back i bought beer that is in one of those bottle donated the beer to a friend and got the bottles back to make the sodas. Works like a charm still have all the bottles so i will be trying this with the ginger bug mix

    Hi Mary! What nice videos you have here! I appreciate your hints tips, and of course recipes.
    By way of giving back, I do have one idea to share that might be useful for you and your followers. When it comes to fermented beverages, I have to deal with the being a little absent-minded at times. There is a strong possibility that A beverage fermenting on the counter could get overlooked for a day, and this means that pressure can build to the point where it becomes a problem. Lol. So what I’ve started doing is taking my small pressure cooker, which is 6 L, and I start off with filtered water which I boil to sterilize to make sure there’s no other culture going to take that water, and Once it’s cool, I’ll go ahead and add the matter that I want to ferment, including the sugar. I was really surprised to discover the honey works just as well, (which was unexpected since it’s actually Antimicrobial). In any case, once I’ve got everything mixed in, with a yeast culture sometimes even, I put the cover from my pressure cooker back on there. Pressure cookers are made with automatic valves right on the top. They’re steel or aluminum, and the lids lock right on there. They pretty much eliminate the danger associated with pressure causing exploding.
    Once bubbles are visible, I taste it and see if I need to add any more honey or anything else, make adjustments, and refrigerate in swing top bottles just as you suggest.
    There are also bottle lids that will automatically let off pressure, once it builds to a given level, and they’re not expensive. They’re not strictly necessary, but they sure are a help for those of us are a little forgetful. There are inexpensive discs for Mason jars that are made of silicone and have a mechanism built into lit off some of the pressure there too. That eliminate some of the necessity of having to remember to burp the culture every day.
    If you have to leave the brew on the counter for a few extra days, you can always add more sweetness to the pot if it gets too tart.
    Thanks for your awesome work. I think everybody that learns from your channel will be healthier for it. That is no small contribution!

    Oh, my goodness! This is lovely! I immediately went to the fridge and tasted my raspberry ferment learned from Heidi of Rain Country. Absolutely divine. Next up-soda. I can't wait. I really want to try that. If it's the fruit starter, have you tried making ferments with it or baking with it? I am so excited about that because I hate using whey in ferments.       @@MarysNest Yes. It's her fruit starter. Just use any and all fruits- just like the ginger bug. I haven't used it in anything , yet. The summer garden is goin' in and I'm under the gun.     Thanks for this video! I've made ginger ale for about a month now and just made a mint soda. I tried watermelon but left the pulp in so it wasn't tasting very good, gonna try that again. I had a pint of strawberries i was gonna freeze and then thought, hmmm, strawberry soda????? I tried straining the puree through a cheesecloth but it didn't go. So now I'm making a bit of a syrup with water and added sugar. We'll see how it goes!

    Hi MARY😃 I make a lot of fermented drinks 👍 kombucha, water kefir, June, ginger ale ,root beer, 😃and a lot of fruit sodas, since I live in Miami they are available to me year ❤round, but the🍓🍒 berries are very expensive so I never experimented with berries, I will have my wife go on Sunday to Whole Foods and buy me enough strawberries and blueberries. 🍓to make a few berrie sodas.
    I will be making the strawberry soda on Sunday when I come back from work. I'm going 😞to sleep now I have to be at work😠 by 12 a.m. thank you for your teachings.👍👍

    I followed your instructions to make the ginger bug. Then I followed your instructions to make the strawberry soda! Day 2, today, I opened up the lid and got showered with fizz! Haha haha strawberry Fizz all over me first thing this morning! I'm sorry but it was kind of fun! Anyway I am sitting now and enjoying rich in probiotic strawberry fizzy soda!       Gardening in Gnome town - I understand completely!! But let your nose and eyes be the judge. If you see mold, throw it out. If it smells bad, throw it out.     I love this, another inspiring video Mary!
    I haven’t made any soda yet, only kombucha, but I think this summer I had better try the ginger beer, my. Kids love ginger beer and I’m certain homemade will be a winner.
    I think the strawberry look delicious 😋
    Great explanation and plenty of information.
    I’m not sure I could let all that wonderful carbonation escape my bottles, but I also have a few stories of opening explosions (that blew through the opening bags, I use to catch excited brews) one day there was so much kombucha on the roof, floor cupboards, me and even outside - through the flywire, that I didn’t know where to begin with the clean up 😂
    It’s funny now that my kitchen is clean and I am dry......

I would like to try this fermented soda...but since i hate plastic bottles i concern about the swing top glass bottle which you remind to be careful with that. so what's the best way to avoid them accidentally explode if i would like to make some bottles at once and plan to keep them in the house ? and what if i would like to carry them outside ? or send to a friend ... does any shake during travel would possibly makes the bottle explode ? please your advice

I just watched your video of ice cream without an ice cream maker and I must say I loved the part with you and your husband, you were both so cute.     I have been following your video for a while and trying to make the fermented berries. I still have some wonder if I release the carbon dioxide after 2 days and leave it another 2 or 3 days, it still has bubble and this will create alcohol inside?

    Sounds great!! Great idea! Do y'have recipe for a lemon/lime soda? I'd actually also like to make my own coke out of coke syrup (I know, I'm bad) but would think it might still be waay healthier than to get an actual Classic Coke. I was no soda head by any stretch but sure do miss the occasionaly coke. Especially w/ pizza, ha!

    Mary, I’m confused. What is the difference between water kefir, fermented twice and flavor added, and soda pop? Why do you need the ginger bug?       Thank you so much for visiting. This is an excellent question. The commercial bread yeast used to make bread is different than the wild yeasts and good bacteria used to make fermented beverages such as the soda here. But read on...
      Commercial bread yeast focuses on - as the name implies - yeast - and specifically yeasts that have been selected for certain traits for consistently rising bread. Unfortunately, many of the health giving traits of wild yeast have been bred out of commercial bread yeast.
      On the other hand, the fermentation process with this soda focuses on both wild yeast and good bacteria. So if you start this process with commercial bread yeast, your final product will not be as health giving and most likely be sweeter than if you use the natural fermentation process because you will not have the same level of good bacteria to eat most of the sugar.
      As a side note...You may want to consider - instead of bread yeast - trying the yeast that brewers use to make wine or beer. I have not tried this but I think the final product might be closer to natural fermentation than using commercial bread yeast. Experiment and please keep me posted. I will be very interested in hearing about your results. HOWEVER...
      All of this said...the point of natural fermentation is to achieve a level of good bacteria in your foods that support good health. Experimenting with different ferments helps you learn to understand which ferments best agree with you and make you feel well or improve your health. Might it be sourdough? If so, you can actually use some of your starter to make your soda. Might it be kombucha or water kefir...you can use a bit of those to ferment your soda. Fermentation is really a process of trial an error and experimentation.     Can you explain why you think kombucha is healthier than the fermented fruit soda? I made my own wild cherry soda and garden grapes soda and have been consuming a glass of it every evening for the enjoyment but also for the probiotic benefits. Sounded like you thought that wasn't the best idea and I should be consuming kombucha instead.

    The uneven temperature in my house this winter is making my fermenting a chore. I've tried heating wheat bags which works but I have to be really cautious about keeping them heated evenly. I'm too cheap to buy a seed starting pad and I don't have a yogurt maker. I can hardly wait til warmer weather.

      Bonnie King - Great question. No two ferments are the same so that can be a somewhat difficult question to answer. However, generally, any sediment will sink to the bottom overtime and the rest of the beverage will be clear. You can either pour off the clear part to drink or you can shake it and incorporate the sediment on the bottom to make a more cloudy drink. Hope this helps. Love, Mary🤗❤️🤗

    Hi Mary, made a first batch of bug and then the soda with strawberries, filtered water and I don't remembering the first batch was organic strawberries...but I think it was. It came out great. So I made a second batch a few days ago and it got real moldy after 3 days...today is day 4. Not sure what was wrong but I was wondering think I should throw it out? Or could I turn it into vinegar?.

      So sorry to hear that it got moldy. You should discard it and start over. These things can happen - especially during warm weather. Sometimes the molds can just take over before the good bacteria can get a foothold. Love, Mary

    Would it work with swerve instead of sugar? Would good bacteria feed on swerve or stevia?

      Hi Nicole, That is an excellent question! Unfortunately, I don't think it will work because the yeast and bacteria need a more substantial food to eat which I don't think swerve would offer. White sugar, cane juice, etc. work best. And the yeast and bacteria eat a lot of the sugar, as with water kefir and kombucha, so the final beverage is not very sweet. It is more like the old fashioned medicinal ginger ales made as a traditional healing food. Love, Mary
