A Stirling engine works based off of the expansion and contraction of the working fluid (air) as it is cooled and heated. So, the candle heats up the air, which pushes the piston up to the cold water, which cools down the air, and expands the balloon, which elastically pushes the piston back down, restarting the cycle. Stirling Engines have no evaporation, and in order to work must actually retain their working fluid within the system, as opposed to a steam engine which releases it to push the piston.

No, the purpose of the Gamma Type Stirling engine is to pass the hot air into the cold air intake. So your piston MUST go from the very top (to let the air pass through the chamber) and then go down (to let the hot air create pressure in order to lift it up)
I like the videos but in both you skip what the piece that is around the wire between the lower can and upper that keeps the steam in. The steam on the one I built keeps coming out of there,
