A friend of ours moved up here to Montana from California and he brought his Santa Maria style grill with him. Cooking on that thing is so great. He also would go back to California a few times a year and load his truck up with red oak so when we'd have cook outs it was as true to Santa Maria as it could get. We'd cook tritips, chickens, baked potatoes, sausages, and grill up some garlic bread. I wish places up here sold red oak because it's such a great and unique flavor. I'd love to do some ribs or pulled pork using a bit of red oak.
Nice! I do have a Gabby's grill SM attachment for my 22 weber and wished it had carbon steel instead of expanded metal grate. However, because it fits on the rim, there is a larger cooking surface and fits my Paella pan perfectly..I discovered using an SM for paella is fantastic....also the surface area is large enough for me to use the lid of my 18 inch to cover my grate for paella or cover whatever I'm cooking to add some smokiness. I'm a good ol boy from NC and never tried tri-tip on a weber (cooked many when I was a young California hippy]) until i got the attachment....now I'm hooked and that cut of meat has become easier to find in this part of the country now that Whole Foods and Wegmans carry it.
Replacing my Gabby's with this one. My Gabby's worked for awhile before the side slots wouldn't hold the grate in and the spun-iron grate eventually warped. This grill looks like way higher quality.

I love how the tri tips plump when you cook them correctly. So juicy. Fantastic for sandwiches the next day, too. Salt/pepper/garlic for the traditional seasonings.

I bought a Traeger IronMan last year and committed to using it to learn it. I just fired up the 26" weber and remember why I love it! I can get 1000 degrees at the grate (before the thermocouple melted) and smoking has so much more smoke flavor! I love the Traeger as well. It's an oven. Set the temp and it will hold that until it runs out of pellets. With bigger pieces of meat, they tend to smoke over a long period of time, they're perfect for the Traeger. Because of that, I may replace the weber 26 with a 22. There are so many more accessories available! But I need one of these Santa Maria's one way or the other! Thanks for the great video!
Ry, I have a similar Santa Maria attachment and use it often. It's so useful to be able to moderate the heat by turning a wheel. Plus cooking over wood with the fat dripping on the fire is ideal for great flavor. That grate looks strong. May be worth the extra money from what I paid since I have concerns my grate may fail sooner or later. Until it does, the attachment works very well.
Hello Ry! I'm a subscriber and all but this video just popped up so I'm a little late to the convo but boy this is a cool thing and a cool company! Thank you. And just an FYI the reason this attachment is designed and named for the Santa Maria Style Tri Tip is because when the Pit Masters start the fire (after the overnight dry rub with secret recipe Santa Maria Blend) the wood of choice is Red Oak and since they are also typically feeding an event the grills are commercial size and the fire needs to start large and then last. So it's a lot of logs to start with and then, once the Red Oak starts to burn down to "cooking" embers the fire is still pretty hot but they have to put the meat on the grill to get the party started. So, as the cooking faze goes on and the fire matures they simply adjust the grate height to maintain the optimal distance from the heat. With this rig they can also easily raise the grate for fire "maintenance" while the meat is on the grill. Their grills are typically like 6'x4' or something so it's a big deal. If you ever get the chance go to an event catered by the Santa Maria Elks Tri Tip Team, drop your tongs and Go!!!! They are and always will be the Gold Standard and not just for Tri Trip but also for the time tested ability to flawlessly, efficiently and deliciously grill for 4000 people for lunch! Weber kettles are a lot of fun to mod. My kettle is almost unrecognizable because of the Spider Grills Venom fan and the Santa Maria attachment. Guests look at it in awe. Next up will probably be the rotisserie and pizza oven extender for the kettle. Amazing what you can do with an inexpensive Weber kettle.
Great looking tri tip. A little fresh horseradish sauce for me please. The Weber is all I use since my kids are grown and gone. Nothing beats the flavor of charcoal and wood.
Ry, Video was great (as always) and that Tri Tip looked delicious. Looks like something I need, but my wife says it's something I want. Lol. Anxiously waiting for you to do more cooks on the Santa Maria so I can convince the wife that I do "Need" one. I already have a 22" and 36" Blackstone Griddle, 22 " Weber Master Touch, Char Griller gas/charcoal combo with side box smoker, charcoal and gas Weber Go Anywheres, and a couple more. On my son's birthday and then again on my wife's birthday, I had three of the units going at once. Like you, I really enjoy grilling and especially when we have friends over. Keep them coming. Ron
The best part of those is that you don't need to a two zone fire. You can sear over the entire grate and you can finish cooking on the same grate. You're not splitting the cooking grate in half and losing some of your cooking surface.
I think it’s a huge bang for the buck. I do everything in it. Smoked pork butt, brisket, smash burgers on the SnS plancha, picanha on a skewer, rotisserie chicken (with the special attachment) You can end up spending a lot on accessories but that makes it fun
My Goodness, that’s more than I gave for my Weber Master Touch Premium from Costco. I guess I lucked out, mine closes tight as drum. I also did the spring hack on lid just for added precaution and put a gasket around top lid before I used it so it would be installed on a good clean surface. Thanks for the review.

That looks like a fun Weber kettle accessory! The Santa Maria gives you some variables on the intensity of the heat that you cook over on the kettle. It looks like solid construction. However, it's a bit pricing for how often I would use a feature like that.
This looks fun, but Gabby’s Grills (think I got that right?) has had a similar Santa Maria rig for a few years, and if I recall right it was much more affordable and shipped fully assembled. I’ve enjoyed it tremendously, cooks pretty much just like the product you showed, and I will say this looks a little higher quality. Regardless, tri-tip was on point, and as a,ways great video. Would be interested to see a comparison video between this and the one I mentioned and purchased.
I've had a Gabby's for about five years. Initially, one of the side welds wasn't right and kept popping out. The spun iron grate also warps after awhile. I'm replacing it with this one.
I like the idea of the ring sitting inside the bowl, but it looks like you lose some grate space. OTOH, once your coals burn down, you can get a lot closer to the fire grate than if you had the versions that perch on the rim. I do like that cooking grate - beefy.
I've admired the Santa Maria grills for quite a while now but they were just too expensive to buy as a separate cooker. This looks like a beauty. The hard part will be getting my wife on board for the spend since she thinks I have too many cookers in the yard as it is LOL. Great video as always. Wish me luck!
What Jeremy was getting at is that the tri-tip can dry out if smoked too long and over 135 internal temp, which is usually how it's served at bbq places. The way Ry cooked it is literally textbook. When he cut into it I too said "oh wow!" as he did... lol

I feel like the coast live oak would be the traditional oak. I've never cooked with red oak, being in Central California. It's my understanding red oak is an Eastern US variety. I can't imagine the taste would be that great of a difference. Don't expect to see much california coast live oak for sale. It's illegal to move cut wood outside of many of our coastal counties due to spread of diseases and invasive species.

I have found that the Weber kettle will set inside of a 55 gallon drum, just add vent holes in the drum. Much more stable
I don't think I would ever get one of these but they are definitely cool looking and I wouldn't knock anyone for getting one.

The bark has no effect. Hugely well known BBQ joints leave it on.

Ry, I may be way off, but I was taught to always take the bark off before cooking. Am I off base?
I've never done that.
Any thoughts on welding that? I assume they don't for shipping purposes and can be done clamped as you did.

I like to smoke it with a sear near the end.

Haven't had that issue. Lump charcoal on its own can get VERY hot so open fire that's rising probably won't be a problem.
Awesome Tri-Tip, you should try Susie Q's original Santa Maria seasoning on a Tri-Tip.

I don't know. It's just another way to cook and really fun.

Whatever is available, in your area. Oak usually. But, hickory, pecan, cherry, whatever, will work.
