Low Net Carb Cottage Cheese Donut With Yeast Recipe - Made of Bamboo Flour, Keto And Gluten Free

  • These awesome bamboo fiber donuts are great for a low carb snack. Mixed with cottage cheese and bamboo fiber they have a dense bites with a moist texture. Just like real donuts from your favorite donut shops. With a sweet topping these will quickly become a family favorite!

    Full Recipe
    100g coconut milk
    8g dried active yeast
    100g bamboo baking flour (80g bamboo fiber and 20g powdered whole psyllium husk)
    45g sweetener
    1 tsp baking powder
    pinch salt
    2 large eggs
    110g cottage cheese
    2 tsp rum extract
    50g melted unsalted butter
    Steps
    Heat 100g of coconut milk until just warm (not hot).
    Then blend 8g (2tsp) of dried active yeast with the coconut milk and leave for 5-10 min to begin fermenting before use.
    In a separate bowl crack 2 large eggs.
    Then add 110g of cottage cheese,
    2 tsp of rum extract and mix.
    Warm the liquid mixture up to room temperature.
    Fill a large bowl with warm water and place the bowl with the egg mixture in it for a few minutes. Stir them a few times.
    Melt 50g of unsalted butter.
    Measure the dry ingredients:
    100g of bamboo baking flour (80g of bamboo fiber and 20g of ground whole psyllium husk),

    45g of sweetener (stevia erythritol),
    1 tsp of baking powder and
    a pinch of salt.
    Mix them thoroughly.
    Pour the melted butter to liquid mixture and whisk to combine.
    Then add the fermented yeast and mix them.
    Stir the dry and liquid ingredients with a spatula thoroughly.
    Then allow your dough to rest for at least 5 minutes.
    Squeeze the dough with your hands to bring it together into a ball.
    Knead the dough lightly with your hands for 5 minutes, use a silicone sheet as the dough is actually a little sticky.
    If the dough is too soft and sticky, knead it on a floured surface.
    The dough shouldn't cling to your hands, but if it does, sprinkle with flour.
    At the beginning of kneading, the dough may fall apart,
    or you may feel an air bubble in the middle of the dough.
    Don't worry, just reshape or press the air bubble out and continue kneading.
    At the end of the kneading, the dough will be smooth and will not fall apart.
    This is the consistency of the dough after 5 minutes of kneading. When kneaded, it takes on an elastic texture.
    Place the dough onto a floured silicone mat and sprinkle it with flour.
    Roll the dough out until you get about 1/2″ thick dough.
    Use 2.5” round cutter, cut as many rounds as you can.
    Re-roll the remaining dough and cut as many as you can.
    Place them into a silicone lined baking sheet, and push a hole through the middle.
    Rise for about 30 minutes on a warm place.
    Preheat oven to 120F (50C) then turn it off. Then put the donuts inside the oven and let rise.
    Then turn oven on to 300F (150C). Bake them at 300F for 20 minutes (start counting the 20 minutes after the oven has heated up to 300F).
    (If you use allulose sweetener, bake them at 270F for 20 minutes and covering the top of the donuts loosely with parchment paper will prevent the top from burning.)
    Then heat ½ inch oil in a pot to fry doughnuts on medium-high heat.

    Drop some of them at a time and allow to become golden before turning to the other side, about a few seconds per side.
    Place the hot donuts onto a cooling rack and let them cool completely. This is key with bamboo fiber dough because when hot, the inside of the dough is like slime ( as if it were still raw and wet).
    Frost them and flavor them any way you like! I top mine with white chocolate, sugar-free hazelnut spread and sugar-free strawberry jam.

    Can you use a mixer to knead the dough? If so would you know for how long and what speed?

      You can use it on medium-low speed for 5 minutes.🙃
      (if you find that the kneading hook doesn't reach the dough and just spins around along without it, you can adjust the dough with a spatula.)

      I use carton coconut milk. There's a difference in texture, the cottage cheese makes the dough chewier, but it stays fluffy-soft.
