Cambodian chicken curry
We start to make red kroeung and here is a video of the most common kroeung:

Ingredients :
4 shallots
4 stalks of lemongrass
3 cm of galangal
5 cloves of garlic
2 fresh chili peppers
1 Tbsp chili powder (not in the video)
5 kaffir lime leaves
1 tsp turmeric
1 tsp shrimp paste
400ml coconut milk
4 star anise
~ 1kg of chicken
5 tsp sugar
600ml of chicken broth or water + 2 Tbsp of chicken broth powder.
2 Tbsp roasted peanuts
2 tbsp fish sauce
As many carrots, potatoes and onions as you want.
Eat it with baguette or Somen noodles
