Don't forget about cutting out those pin bones up near the top of the fillet (where the bones came off the spine)...feel for the bones and cut a small V-notch up there and the pin bones should pull right out. The pin bones generally run up until you hit the tail section, or the last 6" or so of the fillet in the tail section. Takes some practice before you get them out just right.
My favorite fillet knife, (Eagle Claw -w- ceramic sharpener) was in my backpack after cleaning and filleting an 80lb halibut in Seward AK, and I didn't remember it was there until I was two or three spots from the TSA inspection at the airport, so it's tossed in the trash. If i'd have put it in the checked baggage, i'd still have it. There was a sign at the inspection station saying "NO KNIVES OR ULUS PERMITTED IN CARRY ON LUGGAGE" with a drawing of an ulu.

Damn!! Great vid, I have never seen anybody trim the belly like that, but it makes sense, it is always difficult filleting with that belly left on.. I should say yes and no not too difficult but this makes the process way easier cleaner efficient should I learn something else again! You guys are rocking it!
