    Not sure how you manage, Jan, producing these great videos and working hard from dawn to dusk and beyond. You are a fine farmer. This new cheese project is exciting. THanks for documenting it and I am sure it will be a success. You Dutch people know how to do things right. Good on you.

    After your last video where you were musing over a name for the cheese business I did a bit of a deep dive on Gouda labeling. Lots of it is aged 1 to 3 years and as much as 17 years. In order to have a cheese cave capable of storing that much product I can understand the height. Lots of them are named simply after the farm ie Kielstra Holsteins. A nice picture of your dairy barn with a windmill a few Maple Leaves and a couple of Saskatchewan Wheat Sheafs included somewhere should tell the story.

    Curious how you plan to sell what will be quality cheese in Canada. On my visits to Canada (about a dozen so far) I have never seen good cheese sold in supermarkets unlike in Europe. I get my Gouda from a little shop in Amsterdam or Rotterdam.

    I hope she does well, my own experience and to spread the risks and increase incomes she should avoid making just one product (cheese). You have the main ingredient in abundance, milk, you can easily make ice creams , buttermilk, kefir or even butter.... when a buyer turns up or orders he gets a bit of everything and that keeps your cash flow going....
    It is a shame that you cant make the most of your international subscribers du to the nature of the products (has to be refrigerated) and some restriction regarding import of dairy products to Europe.....but good luck and all the best.

      They previously trenched a milk line from the parlour to the cheese house. Most likely a separate business is in the process of being created to handle the cheese production side of things. The farm may have covered the construction cost of building the shell of the new cheese house & then either lease or rent the building to the cheese business.
