It's the result of hard work and good diet. In my village I have seen lot of old people above the age of 90 years they still have head full of hair and all their tooth intact, they have always done hard work which requires lot of strength and throughout their life their diet remained unchanged. They are like soo strong still I that age it's amazing. They say that the secret is "keep it simple and always keep the body working not just the mind"
She looks 20yrs younger! Bless her. Imagine... she went through WW2, witnessed Europe as a union, and going strong through this crazy pandemic. My total respect for her!
Not only do these pasta ladies make great meals, they are so strong to roll the dough, never use measuring cups, and can walk up big hills, & steps! I salute them & love this channel
A good nonna is as strong as an ox. Always working to take care of her family and provide a beautiful home for everyone to feel welcome in. I remember my nonna fondly, I'd do anything to speak to her one more time. She passed away nearly 10 years ago and i think about her every day.
Pesto is my favorite of all the sauces! My uncle brought the recipe to my mom, after being stationed in Italy. She grew basil and made pesto for years. It was lovely indeed, from the freezer in February, a taste of summer when it was still 5 months away. Lovely nonna seems well too aware of the times we live in.
She carried sand in a bucket on her head as a child. That sounds like the women in Africa carrying water on their heads in palanganas. The culture of the world is more alike than not. We human beings separate ourselves from each other when we're really mostly one species. This woman reminds me of the grandmother's I saw in villages in Nigeria and Ghana. The ingenuity, and love in the kitchen is universal human culture.
Lovely video, that dough she was rolling looked fantastic. You could see the quality [well to me anyway] in the texture as she was separating the taglioni on the board. So light, soft & smooth. I know its also hard work, but it must be so rewarding for you to travel to all these little nooks of Italy, seeking out, meeting & spending time with these foundations of Italian food. Plus we get to share in it, so thank you.
I love the similar techniques used by Isolina and Marietta in another video eg the rolling and ‘slapping’ of the pasta, and separating the strands after cutting so they don’t stick.
It... is. I'm in Riomaggiore, Cinque Terre, and the weather is mild during winter, with beautiful sunsets. The trofie pasta and pesto is glorious, and the oil in the store is from the hills surrounding the towns. Lovely people, and the brutal hiking up and down the hills makes for good fitness. There are many paradises on Earth, and this is one of them.
Isolina making pesto a la Nadia.. the right way. Nothing compares to those Mediterranean pine nuts. The ultimate pine nuts with a wonderful taste and texture. And to have a marble table top shows how seriously she takes her pasta making.
Its awesome watching your channel! Having gone to culinary school and working in nicer restaurant for. almost a decade, its ingrained in you that there is one right way to do things, especially when it comes to doughs. And then I come here and theres as many ways to make pasta as there are amazing grannies to show us!
@@pastagrannies Vicky you doing the best, i miss my granny but this makes me so happy to see the deep passed on culture being passed on with so much respect. Much love to you Vicky
Temos muitas "nonas" assim aqui em São Paulo/Brasil. A influência italiana é muito forte em nossa comida devido a imigração italiana no início do século XX.
Congratulation for your network :D I am from Camogli (Genoa), this of Isolina is very traditional recipe of Ligurian Pesto and "taggen" (that is the regional dialect name for tagliolini). I leave you some adice: to make it even richer this great plate, add green beans and, when season permits, also fresh fava beans to your special Pesto recipe for a 100% Ligurian meal ;D Ciao.
But it’s the traditional way to serve pasta al pesto with potatoes and green beans ,this lady doesn’t like green beans, but it’s the usual combo. Sometimes when the season is right green beans can be substituted with fresh and tender broad beans... delicious anyway!
That color is so beautiful -- nothing like the dark and bitter-looking pestos of most videos. Only the Italia Squisita channel also has beautiful pesto.
C’era un tizio piuttosto famoso che 700 anni fa aveva già sviluppato il concetto: “Ahi serva Italia di dolore ostello Nave senza nocchiero in gran tempesta Non donna di provincia ma bordello”
Actually, in many provinces of northern Italy, is quite common to hear it still nowadays. And not only among elderly people. "Eh, povera Italia!" is kinda alternative to (maybe) the more common: "Eh, poveri noi!"
@@stefano_etrusco bravo👏👏ogni tanto rispolverare i classici è un antidoto a questi tempi volgari.... per fortuna c’è la nostra buona cucina, pesto in primis, a risollevarci...
i love this and i love the slow pace of it all; i admire the raw 'unedited' way about the filming. additionally, its so wild how in the US, we tend to bring this elevated luxury to "authentic" meals when it is completely opposite at its foundation. Videos like these make me question life in America lol.
My nonna used the exact same pesto recipe, which i havent seen made anywhere else. She was a nanny for an aristocratic family in Genoa during the late 1930's. The family chef taught her this recipe. We are now 4 generations down still making it the same way.
A spectacular pasta and pesto instruction. She’s so wonderfully serious. I love her comment: “Poor Italy. Where have we ended up.” It seems she may not appreciate the new neo-fascist government. She certainly remembers the government of the 1930s. I also love that she doesn’t like green beans with her pasta, potatoes and pesto; therefore, she doesn’t use them.
Genau das gleiche Rezept für das grüne Pesto habe ich schon seit Jahrzehnten. Dazu selbstgmachte Spaghetti mit Tomatengeschmack. Super lecker. Danke für das Video, das mich an das Rezept erinnert hat.😊
Glorious!!! This is the first time I've seen a marble pasta table.. is it a regional choice, or some other reason? Isolina is pure delight. Thanks Vicky!
hi Didi , the Carrara marble quarry is not far away so marble appears more here than in other regions- I personally love the Ligurian sinks! best wishes Vicky
Beata Isolina! A 94 anni ancora così in forma. Anyway I come from the same region, Genoa and putting Pecorino in the pesto is a sort of sin! Only Parmesan. But there you go, Deiva is only 60 Km away and they have their own version.
Isolina looks fantastic for 94 years old.
94 and looks 60! Long healthy life
Not only does she look good, her motor skills are very sharp.
Right !!! She is up moving around on her own ive been people in there 60s look like her at 94 !!

@memyself I guess it is "sfoglina" in italian, expert in pasta making and rolling.
One of my life goals is to rock an apron like that when I’m 90.
Especially hand made for Nonna Isola .... and making sure she's color coordinated :)
@Joe Second that's right - do it now!
Rock it now, life is short

A marble mortar is good-quality equipment, but still, to make a blender-smooth pesto with one that nonna is fearsomely strong. Much respect.
"Braccio di ferro." As Lucy would say, "Those nonnas have guns like prize fighters!"
Yep I love my marble mortar
God bless this Channel and everyone they interview.
I can't believe she is 94 years old, so adorable and beautiful lady
Very agile for 94!
Amazing right

That mortar and pestle is downright gorgeous. I cannot even believe that she is 94 and can still exhibit such skills. God bless!
The more we automate our daily lives, the more we are losing all that incidental fitness that this generation had to use just make it through the day.

Sadly true. I used to help my mom with real whipping cream. Not sure I could do it now. 😂

Protect the nonnas! Absolutely magic Isolina!
I like the addition of potato! Never thought of that.
My husband’s Italian grandmother used to add diced potatoes to her pesto pasta as well! It was neat to see it here too.

Me either. I was taught you didn't mix two starch ingredients. Sounds good though.
Oh gosh I spent all the summers of my childhood in Deiva Marina. Such good memories😊
