    I use oat flour in my oatmeal cookies. Just grind some oat groats into flour and use that instead of whole wheat. It really tastes good.

      Yes that'll work too, the texture is just different. Probably a lot smoother of a texture?

      @ I don’t have a grain mill yet but I do have a powerful 700g spice/grain grinder that I’m going to use until I can get a grain mill. I’m hoping it will work well enough. I will be joining your grainies membership soon!

    I make oatmeal cookies, all the time for my husband and just a tip we looove is one cup of dark chocolate chips, and one cup of raisins that hits the spot 👌🏻

    Goodmorning Felicia I only use shortening for emergency candles lol…I do render beef tallow and lard these days avoiding most vegetable oils …I’m assuming either one of those would work? Changing to whole grains later in life but so far so good..thanking you so much for your passion and dedication to help all those who need it …given so freely and thanking your family for sharing you with us as well..stay blessed …

      I have the same philosophy about shortening! I'm going to try these with tallow and see what happens ..

      I use lard in pretty much everything that calls for oils or shortening!

      I have used lard in this recipe with no problem BUT, you may be able to taste it a teensy bit. I think it depends on the quality of your lard though.

      @ yes! You MAY be able to taste it slightly! If you can get your hands on leaf lard which is the fat around organs, it has a significantly more mild taste and is best used in pies, cookies, any type of baking really

      @pmctee Organic palm fruit shortening isn’t hydrogenated, so it’s not bad for you like regular shortening.

    Those look delicious. I do have grain arriving tomorrow. Haven’t ordered a grain mill yet. I just watched your video on Oates. Good to learn 0:38 they are not as long lasting for storing.

    In your recioe you put, "quick" oats, I use reg Old fashioned oats I hope it will work

    Good morning Felicia. I have a dessert recipe that I’d like to convert to freshly milk and I know that I use soft white wheat but how do I convert? It? Thank you for all that you have done and taught us throughout the years and I cannot wait for your book to come out. I’m so excited.

      Trial and error lol But a general rule of thumb is for every 3-4 cups of all-purpose flour called for in a recipe you MAY need to increase the soft white wheat flour by 1/2 a cup. This isn't a set-in-stone rule, but I have found it generally to be true with cookies :-)

    I am looking into getting an oat flaker. I have a Kitchenaid mixer. Do you know if the Messerschmidt attachment is a good one? I also looked at Mock Mill's Flake Lovers Flaker. Do you recommend one over the other and why? Thank you so much.

      I have the Messerschmidt for my Bosch and it works fine. I do have to baby it a little bit because sometimes grains get a little stuck and I just have to move them around to feed them through again. But it gets the job done 😀

    What would happen if I just put in additional butter to avoid using shortening. I’m not sure how easy it is going to be to find locally. Azure Standard has it, but the smallest size available is 4 lbs!!
