    Wat was the need for water if I still have to leave it in fridge to defrost.its what I do anyways

      Salt helps melt ice quicker and preserve salinity, thus getting a layer of salt water will help defrost quicker, plus serves as a mild antibacterial.

    can this be done on all kinds of fish? I know it is a bit of a stupid question. looking at trying to make some dorado negiri, as well as salmon, but all I have available is supermarket freezer fish.

      Usually, it works for all fish. However, I asked the chef of a Michelin 3-star sushi restaurant in London, and he replied by:
      1. Normally we blanch in boiling 3% salt water for a few seconds till the outside is just about to cook. Following with an ice bath and a thorough dry with a clean cloth.
      Please make sure the smell is fresh and not off. Please eat at your own risk.
      Hope you find this useful, I have tried this method on multiple frozen fish(tuna, salmon, scallops), worked great.

    Tuna and halibut are THE two fish you never run under water. Put it in a bag first. You ruin the fish.

      I was told never put fresh water on tuna.

    You never never never put superfrozen tuna in water let alone salt water. You always put it into a sealed bag and let it thaw naturally between 1-2 hours.
