This is a healthy and flavorful Indian stir-fry made with beans, papdi (flat beans), and fresh fenugreek leaves (methi).

Ingredients
1 cup French beans (chopped)
1 cup papdi (flat beans, chopped)
1 cup fresh methi leaves (fenugreek, washed and chopped)
2 tablespoons oil
1 teaspoon cumin seeds
1/2 teaspoon turmeric powder
1 teaspoon coriander powder
1/2 teaspoon red chili powder
Salt to taste
1/4 cup water

Instructions
1. Prepare the Ingredients
Wash and chop the French beans, papdi, and methi leaves.
2. Heat the Oil
Heat oil in a pan or kadhai on medium heat.
Add cumin seeds and let them crackle.
3. Cook the Vegetables
Add the chopped beans and papdi to the pan. Stir well.
Add turmeric powder and mix.
4. Add Methi Leaves
After 2-3 minutes, add the chopped methi leaves. Mix everything together.
5. Season the Dish
Add coriander powder, red chili powder, and salt to taste. Stir to combine.
6. Cook with Water
Add 1/4 cup water, cover the pan with a lid, and let the vegetables cook on low-medium heat for 10-12 minutes.
Stir occasionally to ensure it doesn’t stick to the bottom.
7. Finish Cooking
Once the vegetables are soft and cooked through, remove the lid and cook for another 2-3 minutes to evaporate any excess water.
8. Serve
Turn off the heat and serve hot with roti, paratha, or rice.
