I think the only bad thing about adding more foliage then you should is the guests complain about it. But I usually ignore them as well because lemme make my habitats pretty dang it! XD
I think a nice exhibit would be a mixed Australian habitat, something that's never really been able to be made before the Grassland pack, maybe like a nice Outback dining area overlooking a mixed Kangaroo/Emu/Wallaby habitat?

I've never explored franchise mode or scenario mode in planet Zoo I've always just dug right into Sandbox mode every time I play Planet Zoo
Name for a flamingo could be Diamond
Oasis could be a good name for one of the birds!
Food area would have been nice as a pier dock to the side of new habitat.

Next animal suggestion: Aardvark
It is a smaller, African, desert/grassland mammal so it fits the theme. Aardvarks are very under utilized Planet Zoo which is a shame because they're really quite cool!
