A tip I got from my grandmother in Germany was to keep the pastry from getting soggy, place some dry biscuits on the bottom before adding the custard and the fruit. That makes it a bit sweeter and also keeps for longer. Not that it would last long in our house.

I even used flour to stop that from happening and worst of all when I finally managed to get it rolled around the pin it all stuck together and was in pieces when I put it on the pie pan. Heeelllpp. Should I leave it in the fridge for more than an hour ???
I've also encountered this issue. Just keep rerolling the dough and rolling the pin again over the pan until it's one coherent crust. I've tried 3 times to make it work. Lastly I added a lot of flour on the table which helped the dough to pull with the pin without breaking. It kinda needs practice
