Secondly, the surface of sword (even though its sharp) has larger surface area for latex to expand to an extent to explode. If they would have used pointy angle, the balloon would have exploded.
It's amazing how much the balloon actually stretch before they pop and it looks cool how the water stays the same shape as the balloon was before it starts falling
