Amazing cinematography as always! The second counter at Arai is notably much easier to reserve and I had almost the exact menu two months ago and am going back in a few days. Seats are available a week or so in advance on Omakase or via Tableall. Reportedly the main counter, where rare cuts of tuna eg Senaka Akami are served and where the menu is entirely different, is restricted to old customers/by introduction only, similar to Saito.
If there's something you don't like, it's a good idea to mention it when you make the reservation. But if you ate something and didn't enjoy it, it's totally fine not to finish, at least you gave it a shot, so no worries about being disrespectful!
