    Chef AJ and Julieanna Hever, the Plant-Based Dietitian, make:
    RED LENTIL CHILI (Yield: 14 cups)
    Ingredients:
    • One pound (453g) of red lentils
    • 7 cups (1.75 liters) of water
    • 2 (14.5 ounce/396g) cans of salt-free tomatoes, fire roasted preferred
    • 1 (6 ounce/169g) can of salt-free tomato paste
    • 10 ounces (283g) of chopped onion (approximately one large)
    • One pound (453g) of red bell pepper, (approximately 2 large) VERY finely chopped (I use the Cuisinart)
    • 3 ounces (85g) of dates (approximately 12 Deglet Noor)
    • 8 cloves of garlic, finely minced
    • 4 Tablespoons Apple Cider Vinegar
    • 1.5 Tablespoons Parsley Flakes
    • 1.5 Tablespoons Oregano
    • 1.5 Tablespoons Salt-free Chili Powder
    • 2 teaspoons SMOKED paprika
    • 1/2 teaspoon chipotle powder (or more to taste)
    • 1/4 teaspoon crushed red pepper flakes (or more to taste)
    Preparation:
    Blend the dates, tomatoes, red bell peppers and garlic in a blender and blend until smooth. Place all remaining ingredients in an electric pressure cooker and cook on high for 10 minutes. Alternatively, place all ingredients in a slow cooker and cook on low for 8 hours.

    The Greek Orthodox Church Lent fasting starts in a few weeks (which is basically eating vegan for 6 weeks), so I thought since I have to eat vegan, I'd try some new recipes. I made this today and I absolutely love it. The smells coming out of the Instant Pot were amazing! I had a huge bowl and have 7 more huge bowls in the freezer now. Maybe I can eat plant-based after all!

    I also make this dish at least once a week now, my family loooooooove it !!!!! So grateful for this recipe !!!! I add 3 soaked sun dried tomatoes which goes in the blender and also 1teaspoon cacao and 100ml red wine ... just thought I'd share my addition :)

    This was the first recipe I tried when I got my instant pot. It would greatly benefit from sauteeing the vegetables first to mellow and deepen the flavors. Holy raw garlic, Batman.

    My wife loves your show ladies, and she wanted to let you know that the way she stops her eyes from stinging and crying while chopping onions, is she spritzes the chopping board with a white vinegar first, it somehow stops it and no need for goggles!

    After watching this episode I just had to buy an instant pot. I made this recipe and I Loved it!! I did have to add salt and pepper. I highly suggest making it. This was my first recipe I made in my instant pot. Thank you Chef AJ

    Thank you for this awesome sounding recipe. I got a 6 quart DUO Instant Pot a few weeks ago and as soon as I finish one batch of pressure cooked goodness, I make another. It's crazy to spend ten minutes on prep work for a gallon of chili and it cooks in only half an hour, including cooking the beans I soaked overnight (or not!), and a large part of that small amount of time is the natural cool down at the end. That's a small investment in time to have wholesome inexpensive home cooked meals for a week.
    I've been intending to make some lentils in the Instant Pot. I was considering an Indian curried lentil dish, or dal bhat. I'll be trying this lentil chili recipe as soon as I get some smoked paprika. I liked the recipe instructions. Place everything in a crock pot for eight hours, or cook it in the instant pot for ten minutes. Gee, which should I do? :-) The recipes I've moved from the crock pot to the Instant Pot taste better.
    I'm also eager to try the faux Parmesan.

    I use my blender and my pressure cooker almost daily! Those two appliances has made plant-based eating so much easier and delicious (and I'm a newbie.) Thanks for another great recipe, I know I'm going to love it!

    I appreciate the quick response. So I read my manual last night and it said that beans expand and not to go over the 1/2 point mark or 2/3 mark when filling it for other stuff. I decided to just cook it on the stove then I thought why not divide the pot. So i put half in the instant for 10 min then put the other half in for 10 min. So it worked mine was a little soupier than yours but the taste was good. I think my mistake was that I rinsed my lentils which I probably shouldn't have as the lentils were mainly mush.

    I recently got my Instant Pot and this was the first real recipe I tried in it. Mainly because this is the only recipe in the book that it came with by Chef AJ :) If you made a recipe book entirely for the Instant Pot, I would buy it in a heartbeat.
    If you wanted the chili a little less runny, could you use less water...say 6 cups instead of 7?
    Will definitely take your idea with combining the spices though to save time for whenever I make this (which will probably be quite often). Look forward to more episodes with the Instant Pot. I figure if all I used it for was to cook beans, it will probably pay for itself in 6 months...even though it's technically a Xmas gift...shhhh.

    Love the idea to make your own special spice jar to make dinner quicker... You can also take them with you when you travel, assuming you take the instant pot with you.

    I use this recipe not only for lentils but also for a bean mix and split peas. Adding a couple of tablespoons of dried and powdered stinging nettle to the cooking chilli gives it a different nutritious flavour.

    One of my fav recipes, I never thought of using dates, I used brown sugar, but, will try the dates, so good for you than brown sugar. I use the taco seasoning, because I like the flavor. I make enough red lentil chili for 5 days, love over rice, for a quick meal.

    Looks good. I like having foods simmering on the stove. I don't find it '80's' in a negative way. Women used to stay in shape by chopping, kneading, stirring..not just getting everything in a bag and cooking it as fast as you can! It's a lovely kitchen when things are simmering ❤️❤️❤️

    Just put a cut up lemon in IP and run for 10-15 min in lots of water. Sit overnight. Run again in am. CLEAN

    I love the taste of this chili very much, however, I find it just a bit too sloppy, too "liquidy". Not sure if I did something wrong. By the way, for the instant pot lid, I have always removed the rubber gasket, the tiny metal cover from the inside, and the sealing knob and I put it all in the dishwasher (including the entire lid) with no problem at all.

    People who complain about chili being bland, think about it as a Lenten vegetable soup and add fresh pressed garlic in the end ( no cooking)

    I just made chili today so will have to try this one soon.Iagree on the fire roasted tomatoes :) I did cook my beans in the pressure cooker (old Tefal I've had for over 25 years), I used pressure 2 but still not perfect, they are either over done or under done. The Tefal book does not give individual legume times and sources online vary so much. Do you have a good guide you could point me to?

    During this video you talked about doing steel cut oats in the pressure cooker. I have made them in the pressure cooker but always with some oil, because I am afraid of sticking to the pot. Could you post your recipe for Oats without oil? thanks

    I still have my mom's old pressure cooker, which I haven't used since the 90's. I was always afraid it would blow up, lol! Will definitely look into the "Instant Pot". A ten-minute meal? Right up my alley.

    We love your Red Lentil Chilli and have made it several times. However I have a problem. This is the only recipe that I have tried that I usually get a BURN warning when making it. Am I doing something wrong?

      That sometimes happen when you use the saute feature before turning on the pressure.

    I got an instant pot duo mini for Xmas and I was trying out the Red Lentil Chili recipe by chef AJ in the recipe book that came with it, however, I am told in the recipe to (1) blend dates, garlic, red bell pepper and tomatoes in a blender until smooth. (2) Place remaining ingredients in the instant pot and cook on high pressure for 10 min. (3) Let press release naturally or enjoy immediately. Serve over a baked potato and sprinkle with some faux parmesan. There is no instruction in the recipe to add the contents of the blender to the instant pot--which would not work with an Instant pot duo Mini--there might be room for 2-3 more cups of liquid but definitely not 7 cups. I had to go to my computer and watch AJ & the Dietician make Red Lentil Chili to find out that I had to add the contents of the blender to the instant pot. One would think that that is pretty important step to leave out or maybe it is just assumed that one would know, however, sometimes not all of us are that bright!!

    I tried this and it was OK. I thought the flavors were sort of one dimensional though compared to other chili recipes I've tried. But then I'm not Vegan or vegetarian.

    It seems like you put a lot of effort into four series. However you could benefit greatly from external microphones. It is more difficult than it should be to hear you.
    Also, the method described in this video doesn't match the recipe published in your video and my Instant Pot manual. You said to add the apple cider vinegar. The receptor didn't make it clear that both the diced tomatoes and tomato paste go in the blender. I would have had the vinegar or tomato paste in my purée if I hadn't watched your video.
    The chili smelled great going into the Instant Pot and is cooking now (6 minutes left).

    Please help me with suggestions! I made this recipe and would like to know how to cut the acid taste from the apple cider vinegar. I also think it might have contributed to the red lentils not fully cooking. I CAN'T THROW THIS OUT! HOW CAN I SAVE IT? Next time, I'll eliminate it and saute the vegetables first. Thank you for this recipe, but I still need to tweak it just a bit.

      Yes, you can add them straight away and cook for about 20-30 minutes.

      I do rinse the lentils and just use slightly less water. Also I roast my bell pepper, onion and garlic in the oven prior to blending 😋Delicious!

    Noticed you used boiling water, however, instant pot cooker recipe doesn't call for boiling water, wondering why you used boiling water.
    Also, I noticed you blended the apple cider vinegar in with the tomato mixture, recipe book doesn't call for that either, wondering why you chose to.
    What are your thoughts on blending the spices in with the Tomato mixture?
    Finally, using this recipe I'm getting the burn warning. Thoughts?

      Don't know why you got a burn warning. Did you put the water in first? I boiled it so it would cook faster.

    love the way you talk and make cooking so fast and easy. but why do you use processed tomatoes instead of fresh ones ? coming home from work, no time to cook is not a food excuse to use processed food. i would rather throw in few fresh whole tomatoes into the pot.

      If you want to use fresh tomatoes, just do it. I don't have many processed foods in my pantry, but canned organic tomatoes and beans I do have, even though I often use fresh beans.

    I tried this in my 6 quart and found that the recipe filled it to the 2/3 line. I'm assuming I need a larger instant pot for this recipe?

      Donna Keegan I almost always use the 8 quart it’s my favorite size because you can always do a smaller recipe in a big one but you can’t do a bigger recipe in a smaller one. That said I have done the red lentil chili in the 6 quart it just will be very full

    where can i find the nutritional facts for this. My daughter is counting calories and wants to know before she will eat any. I have it in my crockpot and the house smells amazing :O)

      Type in the ingredients of the recipe separated by plus signs (examples are given on the page) and it'll produce a nutritional label like the ones you see on packages of food in the supermarket. Very cool. Wolfram Alpha has many neat features. It's kinda like Google, but more geared toward calculating stuff, and it has a huge database so you can ask it crazy questions and it knows the answers.

      you can make it in a slow cooker. Walmart has them for under $20. costco sells pressure cookers, Cuisinart brand, for $69

    Tried this recipe, but it turned out soupy. Definitely should go for 6 rather than 7 cups of water. Did seem a little bland for me. Did anyone else encounter the same issue? I double checked the recipe.
