Koks is a small copy of Noma (Denmark). The dishes are part of the culture of the Faroe Islands and give you unique taste of typical local Faroe Island kitchen in a modern kitchen cooking culture. But the menu is since years most the same and the restaurant has no development in food creativity. Try it and make your own mind of it. There are better restaurants like Ræst, Katrina Christiansen or Áarstova on the Faroe Island with a better experience of local traditional food and with more personal familiar hosting. I tried Koks twice with local friends, and I still don't understand why Michelin selected Koks for a star. There is only one Noma, but plenty of copycats worldwide. And that's the problem, most of them are copycats and never reach that level of cuisine.
The Michelin guide is overrated. They dont even bother to disclose how they grade restaurants. It's really just a scheme to inflate the worth of certain restaurants.
I agree in parts of public transparency of the guides lines for there rating! But have to disagree as well. Michelin has strict rules and guide rules how they rate a restaurant for there inspectors. There are several incognito visits through several people with professional gastronomy backgrounds (Kitchen, Service, etc.) in a longer period of time. Michelin would never disgrace a restaurant for there services in there rating.Total different to the Gault Millau rating structures and ethic basics. Gault Millau critics have the call that they are open minded to go public and say that when they get into a restaurant. Whatever they accept for there presents and rating stands in the stars. I had my personal experience with Gault Millau when they asked me to join a group of experts in Switzerland to vote and rate for the best swiss chef and restaurant.When I asked me why they requested me, the told me the reason is, that they know I'm a known person/client in the star restaurant scene and gourmet. I was so shocked and disappointed that I rejected the offer. I think it's very important to be a person with a professional background in the industry. Somebody how knows all the craftsmanship details to rate an another professional. Just to go to all the star restaurants for lunch or dinner is not enough for that kind of job. If I would be a restaurant owner or chef I always prefer "one" Michelin star before I get (1)10-20 stars from Gault Millau. Michelin never takes star away from one year to a other. Gault Millau do that. They check several times a restaurant before there rating. Gault Millau mostly not, maybe just in the highly rated restaurants 15+. 15- could be a disaster for a restaurant, once bad rated and goodbye. Everybody has a bad day in a restaurant. So don't misunderstand me about my personal opinion about "Koks". I compare the critics against all the other star restaurants I visited in my life for decades. And I always visit several times a restaurant over a period of time to give it a chance to surprise my personal colour of taste again and again. I'm pretty sure that "Koks" got his Michelin star on the basics of Michelin rating criteria from several Michelin inspectors. But my message is, find your one colour of taste and use the Michelin, Gault Millau, William Reed, etc. as a guide through the universe of great chefs and restaurants around the world. I know Sea Shepherd and others wants you to believe something else, but they pray on peoples ignorance Pigs, cows and other large animals undergo stressful situations all their enslaved life, then they are transported long distances to huge death camps in other countries (EU) or other states (USA) and compare that to the hearding of pilot whales that only takes few minutes the hearding of pigs and cows is much more stressful. The actual killing is done by numbing the animal first, then letting it bleed to death. In case of cows and pigs that is mostly done by a stumpgun (more like a hammer) to the head of the animal, causing it to become braindead. The same occures for the pilot whales when they the spinal cords by the neck is cut by a one hand move, causing the animal to become braindead and painless within a split of a second. Both methods cause a fast death The already dead pig, or whale may still move after this, but that is all nerves retracting a last time. Sea Shepherd and others abuse this by claiming the pilot whale is in agonny and in pain and dying slowly when it splashes around even after its been cut, but the reality is that its already braindead, just as the pig is braindead but still capable of spastick movements. You see the same occure when you cut of a chickens head - no head, yet still capable of "running" around witout a head atached to its body The pilot whales do not undergo more stress or pain than pigs and cows in the industrialized world - if anything its way less. Totally avoiding stress is impossible, because it is a slaughter, but to imply pilot whales undergo more pain or stress than pigs is misleading - but Sea Shepherd gladly misleads the ill informed masses
