I think you missed one thing . Its flour . You mix half cup of flour in one cup water and slowly add it to the gravy while stirring the gravy. Its gonna be 2x better.

I love to make nihari and i am a Pakistani, i add tablespoon of wheat flour (i give the flour a bit of heat without oil or water, when its roasted) i add a few sips of water in it and put it in cooking pot, let it simmer for 5 minutes and voila
You gotta add flour slurry to thicken the gravy, and squeeze lemon with the cilantro!! Also try to eat with naan! But any how Nihari is pure love!!!!! Love from Pakistan 🇵🇰 ♥

We usually thicken it in the end with a bit of flour (then cook the flour in the gravy ofcourse) And we don't chop up the meat we take the large piece with the gravy and break it apart as we eat it

Couple things... 1) Never cook it without having beef bones within the nihari. Inevitably you will remove these, but they work wonders for taste, consistency and contribute a little more nutritional value 2) Cook it for longer than 1-2 hours. Usually 3-4 hrs is what we go for but some go for even longer. The meat should be unbelievably tender and slip straight off the bone without much pressure applied 3) Serve with hot ghee on top!! Well done
Bro. You missed out on a few steps. You aren't supposed to take the shanks out. You let it cook in the stew, and cook it for at least a couple hours more. You also need to make the gravy thicker by adding in some flour. I don't knkw what nihari seasoning you used but the colour looks a bit off Lastly nihari is best eaten with naan or sheermal along with some thin slices of ginger, lemon wedges and chopped green chillies.

As an avid food lover and a Pakistan native I can assure you only cooked it 70%, there were still some things needed to be done and it still tastes good. Now, imagine if you actually eat it from a Pakistani Nihari joint.
The recipie donest cover half of what is done. People here cook that thing on slow flame over night and the spice combo is bomb. My mayn out here preparing some basic ass mutton salan and calling it a nihari.
Nihari is not a Pakistani dish, it was created in Delhi, India before the partition. The late chef who created this dish still owns the restaurant in Delhi run by his grandsons.
