    The beauty of the Seattle dog is there's so many perfectly acceptable variations, so long as it's got cream cheese. Fried jalapenos? Still a Seattle dog. Grilled onions? Sure thing. Kimchee or sauerkraut? Yup. Hot sauce? That works.
    My favorite variant is just cream cheese, grilled onion, and Sriracha.

    • @ForgotMyDemonName
      @ForgotMyDemonName ปีที่แล้ว +5

      The "your favorite" variant is actually the true Seattle dog. All Cap Hill street meat vendors make it this way unless you change it up. And why would you? Who messes with perfection

    If you add some baking soda to the water, it reacts to the acid produced by the yeast and gives you that classic bagel skin. Generally about 5 cups of water to 1/3 cup soda. And instead of water, in the dough go Stella or Heineken! Trust me, that will take the bun to the next level! But I love the concept of this dog and I am going to try it!

    We didn’t use to called them Seattle Dogs. They were originally called Bagel Dogs. Every street vendor in Pioneer Square sold them and the cream cheese was optional although everybody got it because it is kind of what makes the dog. I think gay Matt came up with the “carmelized” onions that made the Seattle dog famous by Randy Stevenson and Neil Burgess. Kingdome, Polyesters, Safco Field. Now on Occidental at the entrance to the Seahawks stadium. Seattle Sausage. Check it out if you get a chance. BTW, nobody does the bagel in thirty years. We fixed it and made it better.
