I am a concierge nurse and I take care of patients who need to avoid saturated fats and dairy products. I drizzled this sauce over seasoned rice and fat-free refried beans and my patient (who loves Mexican food) said it was delicious! She ate it all! I have made this for years and it is hands down the best. I do make mine with 1/2 tsp mustard powder and a heaping tablespoon of miso paste, it gives it more of a chedder taste 😊
I wrote down this recipe and just procrastinated on buying all the ingredients because I was certain that I couldn’t make this as good as Jill said hers was. Well, after weeks of wanting to taste it sooooo bad, I finally bought ALL THE INGREDIENTS. Then, I procrastinated two whole days thinking I’d never get it to look and taste like Jills. Well, I finally took the plunge and tried my FIRST BATCH. I could have cried when I tasted it. I couldn’t believe my ‘mouth.’ No more dry potato’s or dry pastas. I can’t thank you enough Jill. The absolute witchcraft of putting this together will never cease to amaze. Totally unrelated ingredients go into my ninja, and then somehow the best nacho cheese I've ever had comes out? Wild. This was AWESOME! I used it to make my family recipe mac and cheese. The traditional (non-vegan) recipe used a combo of extra sharp and New York sharp cheddar, so to make this cheese sauce more 'sharp', I added 1/4 teaspoon each of ground mustard and prepared horseradish. It gave it the extra zing of a sharp cheddar!
Jil McKeever, I just made this for the first time tonight. Although I believed your clams about it I still was shocked at how good it was. You're right my carnivore friends will love it and my lactose intolerant friends are going to cry when they have it. It was amazing. My baked potatoes will never be the same!

Okay, I'm not a big commenter but must say not only is this thing TRULY a game changer (seriously!), I have a tip for those without a high speed blender! I made this for the first time today but do not have one. BOIL THE WATER FIRST ON THE STOVE OR KETTLE, add your dry ingredients to the blender and SLOWLY pour the boiled water while mixing. it will thicken as it's blending, just as if you had a Vitamix! Less cleanup and no need to watch a pot or continuously stir. So good!
I have a Breville hemisphere blender so I tried the trick with the boiling water...didn't get it all the way to boiling but it totally worked. Thickened up perfectly. Thanks for the trick, Leanne. The cheese sauce is pretty good but it makes A LOT!
Jill, I must admit that I reluctantly tried your Game Changer Cheese Sauce. Reluctant because other "cheez" sauce recipes that I've tried did not taste good to me and tasted NOTHING like cheese. I was even getting a little gun shy of 'nooch' as I just didn't detect the cheesiness that others so easily found. My preference was to go without rather than waste time and money on a "fake" cheese sauce. And then I tried your Game Changer Cheese sauce. All I can say is WOW! The consistency, the flavor, the color... everything about it feels and tastes like the real thing. It's truly delicious. Thank you for making a believer out of me, a former cheez sauce doubter. And thank you for providing one more tool in my plant-based arsenal. If there are any others of you out there who, like me, have had bad experiences with cheez sauce then definitely give this recipe a try. It IS a game changer!
I agree, I've made a few plant based cheese sauces, some with nuts, some with margarine, soy milk, and nooch or fake cheese shreds, some with vegetables... None really wowed me enough to take the time to make more... But this... I'm imagining all the possibilities when I am missing cheesey dishes like brocolli cheddar soup, scalloped potatoes, loaded baked potatoes, nachos, chili cheese fries, even just plain ol' queso dip with tortilla chips (used to buy that terrible store bought queso weekly before going plant based). This tastes better than that crap especially with my addition of canned Chili's for a spicy mexican kick! For anyone on the fence about this recipe, just try it. I was skeptical but it's won me over and will be my go to cheeze sauce going forward. I also really love that it's pretty cheap to make and makes a lot and it's not full of fat. I always have a ton of oats, nooch and a big jar of roasted peppers around!
I tried this recipe tonight. It is a game changer. Other 'cheese' recipes have been a waste of time and money. I'm the only vegan in my family. With recipes like this I may have some converts! Thank you Jill!!!
Just a thought - you can blend it and then reheat on the stove to thicken, if you don’t have a high-speed blender. I’ve done this with my other cheese sauces.
Yes, this is what I did after making sure it was completely blended and smooth. It comes together very quickly though so make sure to keep stirring it! I used the immersion blender when I was done b/c I had a few clumps on the bottom.
My husband read the recipe and thought no way could it be good. Now after making it a few times, he can't give that recipe to enough people! We do add Mexican spices that make it taste restaurant quality: 2 tsp paprika 1/2tsp dry mustard 2 tsp ground cumin 2 tsp catsup 3 tsp chili powder 1TBS jalapeño juice

Jill, Jill, Jill!!! Holy crap...We’re not worthy!! This is greatest cheese sauce ever that’s low fat. Most cheese sauces just don’t cut it unless you use a lot of cashews. Tasty but not so great with the calories. I’m thinking I will never be without a supply of this recipe. Jill, you’re awesome (as usual).
I added white miso, for more of an umami flavor, chilli powder, garlic powder and dried chipotle peppers to make it into a nacho cheese and it was really good. Def a keeper. The oats give such a good consistency .

For those with a blendtec, at least with the model I have, here are a few tips that helped thicken the sauce. I blended the oats and water first, in order to liquify them. Then I added the remaining ingredients and used the Soup button on the Blendtec, which runs for 90 seconds. I did the Soup cycle three times and voila, thick cheeze sauce that is sensational, thank you Jill!!!
@@timuriaro7922 oats are gluten free. There may be a residue of gluten In some oats due to being processed in a plant or facility that also processes gluten foods thereby creating a cross contamination. Such as they didn't wipe down the machine well enough enough in between products and a little dust got mixed In. If you are truly allergic, buy organic. If not, no need. But still buy organic. Oats are heavy with glyphosphate.

I'm so glad you remade this video, it was hard to find before. I make this all the time, it is THE best no fat recipe. I have now written it out long hand and taped it on the front of my recipe folder, that's how important it is. It's on the OUTSIDE of the folder, no searching! I encourage everyone to give it a try.
This is a LIFE changer cheese sauce! I love it. I grinded the oats and mixed it with the other dry ingredients. I added smoked paprika to it. Then I roasted two peppers in the oven and put them, with the dry mix and the wet ingredients into the blender. I heated the sauce on the stovetop afterwards. Thank you for this incredible recipe.

I made the recipe again today. This time I followed the recipe & used the Fire Roasted Red Bell Peppers - so much better! Best vegan nacho sauce I have ever had! I added 1 tsp paprika for a pretty color. This recipe's a winner, Jill!
I made this tonight for the family. I'm the only vegan in my household. I have to be honest, I REALLY wanted this to be good but was skeptical...I've tried many homemade vegan cheese recipes and many were duds, and the thought of using oats instead of nuts or oil or store bought vegan cheese was daunting. I thought it was going to taste very much like its individual ingredients and nothing like nacho cheese. Great news... IT WAS AWESOME!! I will DEFINITELY be making this again and again. I have tried every vegan cheese sauce recipe on the internet and I can definitely verify that this is, hands down, the very best one. I do though, substitute one cup of cashews for one cup of oats and it makes it a little richer. I am really glad this video made its way back into my playlist.
I have been using this recipe for years hands down the best. I put whatever else I want to add. I know its oil free but if you add a little oil it will melt on pizza and burgers.
Thought I would add my own variations to these comments. It's cool to see how many ways this can be customized: - Instead of 1 tbl. lemon juice use 1/2 tbl lemon juice and 1/2 tbl rice vinegar - I used regular liquid smoke - because of this ^^ I used a jar of fire roasted red peppers that contains added sugar - additional tsp of salt - 1 tsp garlic powder - 1/8 tsp cayenne pepper - 1/4 tsp paprika - 1/4 tsp Old Bay seasoning Incredibly rich and cheesy! Thank you Jill for the amazing recipe.
Also, I scraped as much as possible out of the Vitamix but as we all know, there's always tons left over. So I "deglaze" the blender by pouring in 2C of water and scraping down towards the water all the residue in the little nooks. I then blend for a few seconds and put the very delicious liquid into Souper Cubes and when frozen, they go into a freezer bag labeled "flavor cubes" which I throw into tons of things in Instant Pot.
This is the BOMB!! Thank you, Jill. I am sharing this with everyone. Love how it is a base for many different tastes...I added green chillis and diced tomatoes once, another time cumin, I put it on potatoes, broccoli, corn chips, vegan chili, basically anything that you might put melted Velveeta cheese on....I love it! Especially when I now have the benefit of oatmeal cleaning out my arteries instead of cheese fat clogging them up!

Made this sauce tonight for vegans & non vegan. Instead of liquid smoke I used 1/4 tsp of smoked chipotle pepper. Next time I am using 1/2 tsp. It was yummy by itself but we experimented with Rotel with chili & lime and everyone liked that better. Thanks Jill!

This is so delicious tasting! Because I used tapioca flour instead of cornstarch, and I thickened it in a saucepan, it got really gloppy. Tastes fantastic and the tapioca does give it a stretchiness that is cheesy in a melty way. I’m gonna tweak it for the right fluid to tapioca ratio. Thanks for posting this!
I made this today in my vitamix. I had a 16 oz jar of peppers in water so I added a little extra nooch so it would thicken. I was afraid it was going to bomb but with 23 seconds left my vitamix changed sounds and viola......THE BEST CHEESE SAUCE EVER!!!! I literally cried! This truly is a game changer! We've been WFPB SOS since mid January. Lost a ton of weight, healthier, and feel better! Cheese was hard to give up then but I found cashew cheese but the fat/calories in it was starting to slow down my weight loss! THANK YOU for this great alternative!!!!
My pepper jar was 16 oz. and it still blended up perfectly. I served it to a total meat eating crowd at a Mexican buffet potluck and they were chasing me down for the recipe and emailing me later. Game changer!

OMG! I just made this recipe and it is incredible!😄 thanks Jill! The only thing I did different, was I cooked the oats in the water and let it cool, than poured the cooked oats and remaining liquid into the blender! I also want to point out that I didn't have liquid smoke, so I put in (1) 1/8 tsp each of hot paprika and chipotle powder!
Jill, I made your delicious cheese sauce (with a couple of additions: 1 small can of salsa verde, a can of Ro-Tel and some garlic powder). I don’t have a Vita Mix, so after running my Ninja for 5 minutes, the mixture was very watery, so I poured it into a large NON-STICK saucepan and heated it up on a low heat, stirring constantly so it didn’t stick and create lumps. Heating it did the trick! It turned out great and tastes delicious. (I let it cool before using it as my moisturizer!😄) Thanks for your videos!
I added 3 whole cloves garlic, 1T Dijon heaping, ¼C unsoaked cashews. Never used liquid smoke before but somehow or other found Lazy Kettle Hickory and it's verrrrry pleasant. Other than 1t salt instead of 2t, I followed the recipe. I love it. Had it with 2 long cucumbers and DIY unseasoned popcorn. Today had it with 2 chopped beets and a sliced hard-boiled egg. So good. Next time I'll experiment with the corn starch. I think it can be omitted and increase the cashews for thickness?. Maybe I'll try half next time. Also next time more dijon, garlic, and onions. Maybe I'll throw in sauteed mushrooms & onions.
I just made this and it tastes soo good! However, it was quit liquidy at first and i heated the sauce in a pot on the stove and it thickens up within minutes! Thank you for the great recipe, Jill!

Made this for dinner tonight for my family (3 adults, 4 kids). Doubled the recipe and put it with about 2.5 lbs (dried) of elbow noodles for Mac n cheese. I'm the only Vegan in my house. Everybody else eats meat and everything. All the kids liked the Mac n cheese. One kid shoveled it down and came back for seconds! The youngest said it was spicy (I added like 5 chipotle peppers to the whole sauce batch but I can eat fire.) I have plenty of leftovers (I did this on purpose) and all of the adults really liked it. Overall, 10/10. Sauce was really rich, thick and creamy. ♡

This is the third vegan cheese sauce/queso recipe I've tried, and it BLOWS THE OTHER TWO OUT OF THE WATER. This nails the velvety consistency and nacho-cheesy flavor I've been looking for, and since it's not made with cashews, it's pretty low calorie. I added up the calories of the ingredients and weighed everything out, and here's the best part: it's only .6 calories/gram. Well, the fact that I can make it in like 10 minutes is the best part!
Oh my goodness! Jill I made this and loved it. I made green beans and potatoes 🥔 then I poured this cheese sauce over it. My family loved it. Then I sent a container of the cheese sauce over to my daughters house who is not a vegan. I soon received a text message from her saying mom this stuff is the bomb I need a recipe. I make this almost every week! I often add 1/2-1 tsp of chipotle powder to make it spice and I use arrowroot powder instead of cornstarch -- just because I could get it organic once when I couldn't get organic cornstarch. Either will work great. My kids love it for tacos, burritos and nachos. Mom and dad (the only ones who are WFPB) like that and like it on beans and rice bowls and on potatoes too. Delicious! It WAS truly a game-changer when I discovered it. It was so tasty I couldn't believe it was compliant, lol! Thank you sooooo much Jill. We think of you almost as a member of the kitchen family because we hear your voice on this video so frequently.
I did not have a " blender with the ability to cook food" but what I did have was an electric water kettle. So all the ingredients went into blender , boiled the measured out 4 cups of water and added it last (in a boiling water safe blender) and blended for about 4 minutes and poured into a Pyrex brownie dish, it was delicious. I took some corn tortillas and cut them into fourths and threw those into the air-fryer to make no-oil chips and served carrot sticks along with guacamole. What a delicious meal, with plenty of cheese sauce left over for lots of mac n' "cheese" dinners. Next time I will add pickled jalapenos peppers for more of a nacho like flavour , ooh! maybe with some gimme-lean taco "meat" crumbles....oh yeah !! Thank for the recipe!
I made this today and totally love it! I accidentally bought steel cut oats instead of rolled oats but it still turned out delicious! I also used hickory smoke because I couldn't find the pecan in the store. Thinking of adding some hot sauce or something different to the next batch.

We don't use any chemicals or preservatives so I substituted the liquid smoke for 1/2 tsp gluten-free tamari and 1/2 tsp smoked paprika. you could literally start a restaurant or a food truck just with this sauce. thank you!
My jar of peppers was only 7.5oz, and I added an additional 4T nooch, juice of one lemon, and another 1tsp salt because it tasted a bit sweet to me. But the texture is amazing! This totally reminds me of Cheez Whiz!

I didn't have lemon juice so I used white vinegar instead. Maybe not a full TB, I didn't really measure but it turned out soooo good! It gave it an almost buttery flavor. Just FYI. Thanks for the recipe!
I love it. I'm adding soy crumbles and veggies to take to a potluck. I used potato starch instead of cornstarch. Had to double the amount but it worked.

I just made this and I’m completely amazed. I have a vitamix, and like others thought I would have to cook this after blending, but nope! The friction from the blade cooked this perfectly. It got hot and cooked all of the starch so it’s perfect. So easy! Going to top chickpea pasta and broccoli with it for dinner tonight. Thank you!!

Just made this the other night and OMG!!! I think it even beats my favorite potato/carrot cheeze sauce that I make and love. What I especially liked about this one is that it’s all made right in the vitamix and so fast. I didn’t need to wash and boil potatoes and carrots before transferring them into the vitamix to blend with the rest of the ingredients. Made it super quick and easy but didn’t sacrifice any taste. The only ingredient I didn’t have on hand was the jarred bell peppers but found those easily enough at Trader Joe’s. I also just used regular liquid smoke as I didn’t have a pecan or apple version. Came out so incredibly yummy that I ate more than 1/2 of it in the first day. Next time I’m going to add some smoked paprika and chipotle powder for a spicy version. Thx for an amazing recipe!!!

Thank you for this recipe! Eight thumbs up, including the thumbs of my 6- and 9- year- olds! Instead of the cornstarch I used tapioca starch, and instead of the liquid smoke I used a tsp of smoked paprika (although the latter was because I thought the recipe called for a tsp of liquid smoke). Seriously, this was DELICIOUS, coming from a family full of cheese lovers before we made the permanent switch at the beginning of the month. Thank you, thank you, thank you!
After making this for the first time five years ago, we still keep a constant supply of this in the fridge. Since the batch makes so much, I'll keep ⅓-½ of the batch in the fridge but will split the rest up in another container or two and put it in the freezer. When we're ready for it, I'll take it out and let it thaw and then heat it up on the stove until it thickens. It works great, and it means we don't need to keep so much in our little fridge or worry about it going bad before we finish it. Still 8 thumbs up from hubby, teenage and preteen boys, and me! Jill Jill Jill!!!! This freaking sauce is unbelievable. Once made I sectioned out about 2 cups of cheese sauce and blended that with a few tablespoons of salsa just to give it an even more queso taste. SO GOOD!!!!! Best nachos we have ever had! Thank you!!!

This is great! I am on Dr. Barnard's elimination diet, so I had to use rice farina instead of oatmeal, arrowroot powder instead of cornstarch, and vinegar instead of lemon juice, and I had to omit the onions and peppers. It still came out greatness like a smoky cheese dip. I'm sure the regular recipe is even better.
This is BY FAR, the easiest cheese dip I've ever made. It's delicious. I added a smidge more salt to suit my taste and BAM, I feel like I can eat plant-based forever. Thank you for sharing!

Just made the sauce now but didn’t add the cornstarch and only used the peppers without the liquid and used boiling water, not even 2 minutes into the Vitamix doing its magic the sauce was nice and thick, Yay,
Absolutely loved it! I had to keep restarting my blender as it wouldn't go the whole 5 minutes. When I tasted it half way through, when it was thick, it still tasted "oat-y". Once I exercised patience and blended long enough, it tasted perfect, just like you said! Thanks so very much.

I have made this for years and it is hands down the best. I do make mine with 1/2 tsp mustard powder and a heaping tablespoon of miso paste, it gives it more of a chedder taste 😊

I wrote down this recipe and just procrastinated on buying all the ingredients because I was certain that I couldn’t make this as good as Jill said hers was. Well, after weeks of wanting to taste it sooooo bad, I finally bought ALL THE INGREDIENTS. Then, I procrastinated two whole days thinking I’d never get it to look and taste like Jills. Well, I finally took the plunge and tried my FIRST BATCH. I could have cried when I tasted it. I couldn’t believe my ‘mouth.’

This was AWESOME! I used it to make my family recipe mac and cheese. The traditional (non-vegan) recipe used a combo of extra sharp and New York sharp cheddar, so to make this cheese sauce more 'sharp', I added 1/4 teaspoon each of ground mustard and prepared horseradish. It gave it the extra zing of a sharp cheddar!

Okay, I'm not a big commenter but must say not only is this thing TRULY a game changer (seriously!), I have a tip for those without a high speed blender! I made this for the first time today but do not have one.
BOIL THE WATER FIRST ON THE STOVE OR KETTLE, add your dry ingredients to the blender and SLOWLY pour the boiled water while mixing. it will thicken as it's blending, just as if you had a Vitamix! Less cleanup and no need to watch a pot or continuously stir. So good!
I have a Breville hemisphere blender so I tried the trick with the boiling water...didn't get it all the way to boiling but it totally worked. Thickened up perfectly. Thanks for the trick, Leanne. The cheese sauce is pretty good but it makes A LOT!

Jill, I must admit that I reluctantly tried your Game Changer Cheese Sauce. Reluctant because other "cheez" sauce recipes that I've tried did not taste good to me and tasted NOTHING like cheese. I was even getting a little gun shy of 'nooch' as I just didn't detect the cheesiness that others so easily found. My preference was to go without rather than waste time and money on a "fake" cheese sauce. And then I tried your Game Changer Cheese sauce. All I can say is WOW! The consistency, the flavor, the color... everything about it feels and tastes like the real thing. It's truly delicious. Thank you for making a believer out of me, a former cheez sauce doubter. And thank you for providing one more tool in my plant-based arsenal. If there are any others of you out there who, like me, have had bad experiences with cheez sauce then definitely give this recipe a try. It IS a game changer!

I agree, I've made a few plant based cheese sauces, some with nuts, some with margarine, soy milk, and nooch or fake cheese shreds, some with vegetables... None really wowed me enough to take the time to make more... But this... I'm imagining all the possibilities when I am missing cheesey dishes like brocolli cheddar soup, scalloped potatoes, loaded baked potatoes, nachos, chili cheese fries, even just plain ol' queso dip with tortilla chips (used to buy that terrible store bought queso weekly before going plant based). This tastes better than that crap especially with my addition of canned Chili's for a spicy mexican kick! For anyone on the fence about this recipe, just try it. I was skeptical but it's won me over and will be my go to cheeze sauce going forward. I also really love that it's pretty cheap to make and makes a lot and it's not full of fat. I always have a ton of oats, nooch and a big jar of roasted peppers around!

Just a thought - you can blend it and then reheat on the stove to thicken, if you don’t have a high-speed blender. I’ve done this with my other cheese sauces.
It thickens very quickly too. Also, if you use very hot water, that helps too.
Yes, this is what I did after making sure it was completely blended and smooth. It comes together very quickly though so make sure to keep stirring it! I used the immersion blender when I was done b/c I had a few clumps on the bottom.

We do add Mexican spices that make it taste restaurant quality:
2 tsp paprika
1/2tsp dry mustard
2 tsp ground cumin
2 tsp catsup
3 tsp chili powder
1TBS jalapeño juice

Jill, Jill, Jill!!! Holy crap...We’re not worthy!! This is greatest cheese sauce ever that’s low fat. Most cheese sauces just don’t cut it unless you use a lot of cashews. Tasty but not so great with the calories. I’m thinking I will never be without a supply of this recipe. Jill, you’re awesome (as usual).
Plus cashews are pretty expensive, so I'm always excited when I see a vegan cheese sauce that doesn't use them.
I added white miso, for more of an umami flavor, chilli powder, garlic powder and dried chipotle peppers to make it into a nacho cheese and it was really good. Def a keeper. The oats give such a good consistency .

For those with a blendtec, at least with the model I have, here are a few tips that helped thicken the sauce. I blended the oats and water first, in order to liquify them. Then I added the remaining ingredients and used the Soup button on the Blendtec, which runs for 90 seconds. I did the Soup cycle three times and voila, thick cheeze sauce that is sensational, thank you Jill!!!

There may be a residue of gluten In some oats due to being processed in a plant or facility that also processes gluten foods thereby creating a cross contamination. Such as they didn't wipe down the machine well enough enough in between products and a little dust got mixed In. If you are truly allergic, buy organic. If not, no need. But still buy organic. Oats are heavy with glyphosphate.

I'm so glad you remade this video, it was hard to find before. I make this all the time, it is THE best no fat recipe. I have now written it out long hand and taped it on the front of my recipe folder, that's how important it is. It's on the OUTSIDE of the folder, no searching! I encourage everyone to give it a try.

This is a LIFE changer cheese sauce! I love it. I grinded the oats and mixed it with the other dry ingredients. I added smoked paprika to it. Then I roasted two peppers in the oven and put them, with the dry mix and the wet ingredients into the blender.
I heated the sauce on the stovetop afterwards. Thank you for this incredible recipe.

I made this tonight for the family. I'm the only vegan in my household. I have to be honest, I REALLY wanted this to be good but was skeptical...I've tried many homemade vegan cheese recipes and many were duds, and the thought of using oats instead of nuts or oil or store bought vegan cheese was daunting. I thought it was going to taste very much like its individual ingredients and nothing like nacho cheese.

I have tried every vegan cheese sauce recipe on the internet and I can definitely verify that this is, hands down, the very best one. I do though, substitute one cup of cashews for one cup of oats and it makes it a little richer.

I have been using this recipe for years hands down the best. I put whatever else I want to add. I know its oil free but if you add a little oil it will melt on pizza and burgers.
Thought I would add my own variations to these comments. It's cool to see how many ways this can be customized:
- Instead of 1 tbl. lemon juice use 1/2 tbl lemon juice and 1/2 tbl rice vinegar
- I used regular liquid smoke
- because of this ^^ I used a jar of fire roasted red peppers that contains added sugar
- additional tsp of salt
- 1 tsp garlic powder
- 1/8 tsp cayenne pepper
- 1/4 tsp paprika
- 1/4 tsp Old Bay seasoning

Also, I scraped as much as possible out of the Vitamix but as we all know, there's always tons left over. So I "deglaze" the blender by pouring in 2C of water and scraping down towards the water all the residue in the little nooks. I then blend for a few seconds and put the very delicious liquid into Souper Cubes and when frozen, they go into a freezer bag labeled "flavor cubes" which I throw into tons of things in Instant Pot.

Love how it is a base for many different tastes...I added green chillis and diced tomatoes once, another time cumin, I put it on potatoes, broccoli, corn chips, vegan chili, basically anything that you might put melted Velveeta cheese on....I love it! Made this sauce tonight for vegans & non vegan. Instead of liquid smoke I used 1/4 tsp of smoked chipotle pepper. Next time I am using 1/2 tsp. It was yummy by itself but we experimented with Rotel with chili & lime and everyone liked that better. Thanks Jill!

This is so delicious tasting! Because I used tapioca flour instead of cornstarch, and I thickened it in a saucepan, it got really gloppy. Tastes fantastic and the tapioca does give it a stretchiness that is cheesy in a melty way. I’m gonna tweak it for the right fluid to tapioca ratio.

I made this today in my vitamix. I had a 16 oz jar of peppers in water so I added a little extra nooch so it would thicken. I was afraid it was going to bomb but with 23 seconds left my vitamix changed sounds and viola......THE BEST CHEESE SAUCE EVER!!!! I literally cried! This truly is a game changer! We've been WFPB SOS since mid January. Lost a ton of weight, healthier, and feel better! Cheese was hard to give up then but I found cashew cheese but the fat/calories in it was starting to slow down my weight loss! THANK YOU for this great alternative!!!!

Jill, I made your delicious cheese sauce (with a couple of additions: 1 small can of salsa verde, a can of Ro-Tel and some garlic powder). I don’t have a Vita Mix, so after running my Ninja for 5 minutes, the mixture was very watery, so I poured it into a large NON-STICK saucepan and heated it up on a low heat, stirring constantly so it didn’t stick and create lumps. Heating it did the trick! It turned out great and tastes delicious. (I let it cool before using it as my moisturizer!😄)

I added 3 whole cloves garlic, 1T Dijon heaping, ¼C unsoaked cashews. Never used liquid smoke before but somehow or other found Lazy Kettle Hickory and it's verrrrry pleasant. Other than 1t salt instead of 2t, I followed the recipe. I love it. Had it with 2 long cucumbers and DIY unseasoned popcorn. Today had it with 2 chopped beets and a sliced hard-boiled egg. So good. Next time I'll experiment with the corn starch. I think it can be omitted and increase the cashews for thickness?. Maybe I'll try half next time. Also next time more dijon, garlic, and onions. Maybe I'll throw in sauteed mushrooms & onions.
I just made this and it tastes soo good! However, it was quit liquidy at first and i heated the sauce in a pot on the stove and it thickens up within minutes! Thank you for the great recipe, Jill!

Made this for dinner tonight for my family (3 adults, 4 kids). Doubled the recipe and put it with about 2.5 lbs (dried) of elbow noodles for Mac n cheese. I'm the only Vegan in my house. Everybody else eats meat and everything. All the kids liked the Mac n cheese. One kid shoveled it down and came back for seconds! The youngest said it was spicy (I added like 5 chipotle peppers to the whole sauce batch but I can eat fire.) I have plenty of leftovers (I did this on purpose) and all of the adults really liked it. Overall, 10/10. Sauce was really rich, thick and creamy. ♡

This was amazing I had to heat it up on low for about 2 min. to thicken but it taste very much like cheese dip. My 4 yr. old niece loved it.
This is the third vegan cheese sauce/queso recipe I've tried, and it BLOWS THE OTHER TWO OUT OF THE WATER. This nails the velvety consistency and nacho-cheesy flavor I've been looking for, and since it's not made with cashews, it's pretty low calorie. I added up the calories of the ingredients and weighed everything out, and here's the best part: it's only .6 calories/gram. Well, the fact that I can make it in like 10 minutes is the best part!

Oh my goodness! Jill I made this and loved it. I made green beans and potatoes 🥔 then I poured this cheese sauce over it. My family loved it. Then I sent a container of the cheese sauce over to my daughters house who is not a vegan. I soon received a text message from her saying mom this stuff is the bomb I need a recipe. Needless to say Jill it’s a hit
I make this almost every week! I often add 1/2-1 tsp of chipotle powder to make it spice and I use arrowroot powder instead of cornstarch -- just because I could get it organic once when I couldn't get organic cornstarch. Either will work great. My kids love it for tacos, burritos and nachos. Mom and dad (the only ones who are WFPB) like that and like it on beans and rice bowls and on potatoes too. Delicious! It WAS truly a game-changer when I discovered it. It was so tasty I couldn't believe it was compliant, lol! Thank you sooooo much Jill. We think of you almost as a member of the kitchen family because we hear your voice on this video so frequently.
I did not have a " blender with the ability to cook food" but what I did have was an electric water kettle. So all the ingredients went into blender , boiled the measured out 4 cups of water and added it last (in a boiling water safe blender) and blended for about 4 minutes and poured into a Pyrex brownie dish, it was delicious. I took some corn tortillas and cut them into fourths and threw those into the air-fryer to make no-oil chips and served carrot sticks along with guacamole. What a delicious meal, with plenty of cheese sauce left over for lots of mac n' "cheese" dinners. Next time I will add pickled jalapenos peppers for more of a nacho like flavour , ooh! maybe with some gimme-lean taco "meat" crumbles....oh yeah !! Thank for the recipe!
a vitamix doesn't actually 'cook' the food. It's the high velocity that creates friction, thus heat. They are awesome and worth buying . I love mine

I made this today and totally love it! I accidentally bought steel cut oats instead of rolled oats but it still turned out delicious! I also used hickory smoke because I couldn't find the pecan in the store. Thinking of adding some hot sauce or something different to the next batch.

We don't use any chemicals or preservatives so I substituted the liquid smoke for 1/2 tsp gluten-free tamari and 1/2 tsp smoked paprika. you could literally start a restaurant or a food truck just with this sauce. thank you!
My jar of peppers was only 7.5oz, and I added an additional 4T nooch, juice of one lemon, and another 1tsp salt because it tasted a bit sweet to me. But the texture is amazing! This totally reminds me of Cheez Whiz!

I feel like calling Jill every time I make this to thank her!! Jill, u da bomb! 🤤 BTW, in case anyone is wondering, it still works if you halve the recipe, but keep an eye on the blender, my half-batch was ready in 3.5 minutes. 😋 I also make mine without a Vitamix. I just boil the water first.

@@lisakay1005 I also read that some people thicken it on the stove in a saucepan. I have a nutritional bullet so I can't use boiling water . I will try the saucepan method
I finally tried this (1/2 batch) and OMG! IT IS AWESOME! I have tried several recipe's and wasn't happy. This sauce is LEGIT :-) I am a happy WFPB camper
I made stuffed Red bell peppers w brown rice , onions and mushrooms ,and chickpeas ,baked them and covered it w your game changer sauce . I’m sooo full , they were great

I didn't have lemon juice so I used white vinegar instead. Maybe not a full TB, I didn't really measure but it turned out soooo good! It gave it an almost buttery flavor. Just FYI. Thanks for the recipe!

Just made this sauce this morning to bring to my Mom, who has recently went whole food plant base. We have tried other versions of vegan cheese sauce but I think this one tastes the best. I just made this and I’m completely amazed. I have a vitamix, and like others thought I would have to cook this after blending, but nope! The friction from the blade cooked this perfectly. It got hot and cooked all of the starch so it’s perfect. So easy! Going to top chickpea pasta and broccoli with it for dinner tonight. Thank you!!

Just made this the other night and OMG!!! I think it even beats my favorite potato/carrot cheeze sauce that I make and love. What I especially liked about this one is that it’s all made right in the vitamix and so fast. I didn’t need to wash and boil potatoes and carrots before transferring them into the vitamix to blend with the rest of the ingredients. Made it super quick and easy but didn’t sacrifice any taste. The only ingredient I didn’t have on hand was the jarred bell peppers but found those easily enough at Trader Joe’s. I also just used regular liquid smoke as I didn’t have a pecan or apple version. Came out so incredibly yummy that I ate more than 1/2 of it in the first day. Next time I’m going to add some smoked paprika and chipotle powder for a spicy version. Thx for an amazing recipe!!!
So...I started making this recipe of yours over 2 years ago from your other video. Started making this one from this this video. ABSOLUTELY LOVE IT!!! I use it for baked mac and cheese, nachos, and cheese fries. This is my go too and nothing compares to this recipe. I realized I had never commented about it. ❤😊
Thank you for this recipe! Eight thumbs up, including the thumbs of my 6- and 9- year- olds! Instead of the cornstarch I used tapioca starch, and instead of the liquid smoke I used a tsp of smoked paprika (although the latter was because I thought the recipe called for a tsp of liquid smoke). Seriously, this was DELICIOUS, coming from a family full of cheese lovers before we made the permanent switch at the beginning of the month. Thank you, thank you, thank you!

After making this for the first time five years ago, we still keep a constant supply of this in the fridge. Since the batch makes so much, I'll keep ⅓-½ of the batch in the fridge but will split the rest up in another container or two and put it in the freezer. When we're ready for it, I'll take it out and let it thaw and then heat it up on the stove until it thickens. It works great, and it means we don't need to keep so much in our little fridge or worry about it going bad before we finish it. Still 8 thumbs up from hubby, teenage and preteen boys, and me! Jill Jill Jill!!!! This freaking sauce is unbelievable. Once made I sectioned out about 2 cups of cheese sauce and blended that with a few tablespoons of salsa just to give it an even more queso taste. SO GOOD!!!!! Best nachos we have ever had! Thank you!!!

This is great! I am on Dr. Barnard's elimination diet, so I had to use rice farina instead of oatmeal, arrowroot powder instead of cornstarch, and vinegar instead of lemon juice, and I had to omit the onions and peppers. It still came out greatness like a smoky cheese dip. I'm sure the regular recipe is even better.
I just watched this video and felt discouraged because I can’t use oats either. Where do you get rice farina. It’s the first I’ve heard of it.

Just made this and WOW! Very good. We have nut allergies in our house and have tried other recipes and this one is hands down better in taste and consistency. I added a bit more nooch and added some pickled jalapenos and the juice for some kick. Thank you for this recipe.
Just made the sauce now but didn’t add the cornstarch and only used the peppers without the liquid and used boiling water, not even 2 minutes into the Vitamix doing its magic the sauce was nice and thick, Yay,

@@jinnyamos1332 it tastes like nacho cheese sauce. I would maybe experiment with adding more lemon juice to add more of a sharp flavor. It's tasty.

Absolutely loved it! I had to keep restarting my blender as it wouldn't go the whole 5 minutes. When I tasted it half way through, when it was thick, it still tasted "oat-y". Once I exercised patience and blended long enough, it tasted perfect, just like you said! Thanks so very much.

(I just came up with that term, "Shame Lava". You heard it here first. 😆) Anyhoo.
