    Build a Mini Smoker - Weber Smokey Mountain
    By: Smoked Meat With Jef
    Video tutorial on how to build your own mini smoker.
    Base Materials Needed:
    Weber Smokey Joe (Gold Version Preferred)
    32 Quart Steamer Pot - Sources - Search AMAZON for “Imusa Steamer Pot, Aluminum, 32-Quart” - OR - “Vasconia 32-Quart Aluminum Steamer with Lid”. But you can find something suitable for less if you search around.
    Hardware: (All ¼”, 20 thread, Stainless Steel)
    Handle Assembly - 5-6” Carriage Bolt, Handle Material (Wine Bottle Cork works well), Lock Washer, 2x Nut, Cap Nut.
    Bottom Tier Assemblies (Three needed) - 3” bolt, Lock Washer, Nut, Cap Nut.
    Top Tier Assemblies (Three needed) - 3/4” bolt, Lock Washer, Nut, Cap Nut.
    (Optionsl) Stick of Allthread with 2x Nuts and 2x Cap Nut. (Replaces one of the 3” assemblies)
    Thermometer Gauge - Source - Search AMAZON for “bbq factory 2" 550F(2-pack) BBQ CHARCOAL GRILL PIT WOOD SMOKER TEMP GAUGE THERMOMETER 2.5" STEM SS RWB”
    Extra 14” Weber Grate
    12” Terracotta Planter Tray
    If you will be painting your pot (Optional) you will need a can of high temperature spray paint, masking tape, your template and a razor blade.
    Basic Tools:
    Drill with ¼” and 3/8” or larger bits
    Two Wrenches that fit your hardware
    Center punch and hammer
    Measuring device (Tape measure or ruler)
    Sharpie

    The small Webber i put it in my truck or boat. Was easy to stash away, and used it on the weekends. To grilling meats to travel on or camping. Like chicken, steaks, and things, for sandwiches and things YUM 👍👍 I love it to 👉👉 ITS REMARKABLE HOW MUCH YOU CAN COOK ON IT

    This is a great how-to video Jef! Thanks so much for making it. It was easy to follow and a great help today as I built my own Mini WSM from a Weber Smokey Joe Gold that I already owned. I ordered the Tamale Steamer pot from Target in the USA and it only took 10 days to arrive here in the UK. I'd seen on many BBQ/smoker web forums that there isn't a suitable UK-based equivalent cooking pot, so I just went ahead and ordered the one most-often recommended. This afternoon my Dad and I set-to, with all the relevant tools and hardware you'd highlighted, and had a great time putting the smoker together! A great bonding session on a weekend afternoon! I can't wait to put this new smoker through its paces. We also constructed a briquette basket, something I'd seen suggested on the fore-mentioned forums. Again, thank you Jef. Best regards.

    I made a 33 gal trash can metal smoker and grill with a top. I dearly love it. It replace most every thing on my patio. BECAME THE WORK HORSE ON THE PATIO. ITS A SMOKER, OVEN, PIZZA OVEN, GRILL, and hang meat in it too. THERE AWESOME! 👍👍 i made it where i can set the fire box and any level i want > Time i made legs for it, from a honey extractor for it, and all the ss steel nuts and bolts, and the cast iron grate and the ss steel grate for the fire box was LESS THAN 100 DOLLAR 👍👍 It uses less wood and charcoal was well, Than my Webber Kettle 👀👀 Figure that one out? REMARKABLE

    You can also use the smokey joe as the heat source for a brinkmann water smoker the only mod to the brinkmann is mounting the legs on the outside. I actually prefer the the smokey joe with the vent on the bottom because I use the airflow under the coals to help control the temperature. This is a really cool build.

    You can put water in that terracotta tray for a little more moisture to keep your meat from getting to dry.

    Have you thought about putting the Terracotta Planter Tray on the steamer insert (which I think sit a little bit off the bottom of the stock pot) so there is no need to drill holes for the screws and the threaded steel rod at the bottom?

    I riveted the lid to the bottom then cut the bottom out On my pot it allowed the pot to ride a bit higher in the lip of the bottom section of the grill giving you more space for charcoal. And a plus it catches any grease that would run down the ouside of the pot

    Great vid Jeff. Just 1 big problem... the cooking grate from the wsj doesn't fit inside the steamer pot! I bought the Vasconia 32qt on Amazon and everything else is fine. But after drilling 3 holes and putting 3 screws in I realized the grate is the same diameter as the pot. I see the Big Green Egg offers a grate at 13 inches? Thoughts??

    Made this for $25 . used a $15 mini grill from the Dollar General , some scrap metal roof flashing , couple bucks worth of nuts and bolts , and the thermometer

    Ps the top vent handle is really optional I have never had to adjust mine I leave it wide open if you make one you will eventually dial in the amount of brickettes you need to hold that 225 by adjusting the bottom vents just what I have come to learn from having used my for over 2 years BTW this little cooker can turn out the same quality ribs any green egg could it's all about consistency not how much your grill is worth I have made better ribs with this than some I have made with a actual weber smokey mountain. I can get my sitting at 225 for 8 hours NO PROBLEM I have turned out some pork butts that took 11+ hours and another thing is these little cookers ARE Efficient!!

    Because of the cost breakdown of this To do it new, instead you can purchase the 50 dollar small drum style smoker at Lowe’s, 3 bags of Royal oak charcoal for 20 dollars, and a bag. Each of cherry, maple, and hickory wood chunks for 20 dollars. Doing this with used materials is the only way to go.

    Your right this is hard to find amazon only has limited quanity of these pots hope to be able to find a smokey joe grille gold @ my big box store the terracotta pot would you want a little smaller than 12 inches so that the smoke gets to the holes in the bottom of the pot i was going to build a 55 gallon drum smoker but now i changed my mind because my H.O.A mite fine me for it being to big they wont allow me to have this size on my patio thnxs

      The terracotta tray does not sit directly on the bottom covering the holes. That bottom set of bolts holds it about an inch or so above so the smoke/airflow and run freely.

      rock dawg Those pots are very easy to find in any mexican or latino grocery store. Specially before christmas, they are used to cook tamales just like Jeff said.

      bmushler Crap! You are so right, I should never do that. Usually I don't, in fact I have admonished my wife and children for the exact same offense. Guess I was distracted by my camera and the lesson plan. Luckily, no rust rings resulted in the making of this film.

    Nicely done! Your steamer pot idea is just right. So simple to add wood chips or coals without loosing much heat in the chamber. Does your clay pot pretty ez to clean or save drippings? Since your pretty inventive next time make your streamer pot in stages, where you can check on your layers of meat.... etc. Just add smaller pots with already made handles like your first pot. Like a rocket..... may need to modify the bottoms..... have fun!

      Galen Cox Thanks for watching. I like your "multi layered" idea, gunna have to give it some thought. The clay tray at the bottom is very easy to clean, but when full of liquid one has to get creative in finding a way to "tip the pot" to keep the tray level when removing. (You have to work around the probe and the top player of tray studs) Otherwise it all just spills out the bottom.

    I bought a 32 quart steamer, the smokey joe lid does not fit securely on top. Does the Imusa fit perfectly? They all look like they have the same lip to me.

      You may have to hammer the rolled pot edge to make fine adjustments. I did.

    Don't throw ANY THING AWAY! You might not need it NOW. But in time it will be used for some thing.. Just like my broken down kitchen oven I save it for many of years, it got a glass door to.. I save parts and things and had enough heating elements to make a BIG DEHYDRATOR! IT would cost thousand of dollar for it size. I HAVE ENOUGH THING IN IT. I cover the racks with screen. i had the heating elements, i had the fan, The light is in it. FREE BABY Plus it uses less than 100 watts per hour I'am dehydrating onions right now to stock up on dried onions and onion powder, and many other things as well as BEEF JERKY👉👉 THIS IS THE BEST WAY TO STORE THINGS FOR LONG TERM

    Jeff, Is it normal for the inside of the SS pot to change color? I ran a test burn and for some reason the sides are coated with a crimson color. I used red caliper paint to paint the outside, if some got on the inside, would this be caused by that? my grates even turned color.

      kenneth cheung It will never stay "shiny" when you are smoking meats. To some degree, as your pot seasons, it will develop a coat of creosote, grease and discoloration. (As it will with any BBQ) Of course it's prudent to clean your grill, but it will never be perfect.

      SmokedMeatWithJef, That I understand and am prepared for, doesn't really bother me if it discolors, i'm just afraid that discoloration came from my paint, that would be toxic especially if it discolored my grates too. Does a coat of creosote develop even when i'm just burning charcoal? This coloration came just from 1 burn. I wiped off alot of it but as it cooled i had to scrape it off like i would if it was dried paint.

      I would venture to guess that it's just creosote. It would take quite a bit of paint on the inside to cause the type of coverage you are describing. Message(Private) me your email address or cell number and I'll send you a picture of what the inside of my smoker looks like.

      zer013 I have a brisket video in the editing process currently. Smoked on my larger smoker but the process can be translated to the smaller smokers as well. Stay tuned.

      Absolutely! In fact it's recommended to help regulate the heat and moisture inside the smoker.

    JEFF: Thank you for posting this video, good job of explanations & tools. Gold version of the Joe, good to know I was looking at the difference could not tell, other than ten bucks.
    Brings me to my question: Would you consider adding a cork handle to the air inlet on the bottom of the "Gold" model, same as you did for the top vent? Your thoughts, thanks Rusty

      Travel Adventure Photographer Glad I could help. No need to add a handle to the bottom vents. You will find that once they are open you really don't need to make any adjustment. That is all handled with the top vent.

      +Jawang85 You may just try playing around with different woods. Just make sure you are have some "solid" chunks in there. Say away from "chips" they burn too fast. A good size is to have a few chunks about 2" cubed. (Of course they don't need to be actual "cubes", just about that size. About golf ball size or a bit bigger)

    the charcoal/wood goes into the bottom Smokey base correct, and terra-cotta tray is where the water and wood chips go?

      Charcoal and wood chips in the bottom Smokey base. Terra-cotta tray for the water. Chips in the water won't burn and smoke.

      How does it work with the vents on the side? I’m having trouble finding a gold version bc no stores have them and I want to do it this weekend :)
      Could I just modify the bottom so the charcoal doesn’t clog the vents and allows the air to rise
      What’s your opinion?

    With about $120 more you can buy the smaller WSM smoker from Home depot which is the same size as this but better made.

    Great Vid! Thank you, as I am a novice and not too handy with DIY but your instructions are great! I have never smoked before but am really looking forward to giving this ago. Do you have or could you recommend a guide to using this smoker?

    Do you need all those holes in the center if the terracotta plate covers them anyway? otherwise finding the pot that flush fits the Weber is the only issue. Good design.

      +JustAskingAndCurios The plate does not sit directly on top of the holes. That is what the lower level of bolts is for, for the tray to sit on leaving a space between the pot and the bottom of the smoke chamber.

    I appreciate your ingenuity, but I see this as being pretty pointless. You can do anything with used weber kettle that this could do.
    Used kettle is about $30-$40.
    A couple fire bricks

    Unfortunately your video fails because you didn't show how to load, fire up and use the smoker. You didn't show the smoker in use nor did you link another video to demo the smoker (I couldn't find one). Otherwise, your build demo was very well done and you have an amiable personality.

      unfortunately you fail for not reading the title, its how to BUILD not USE
      honestly you shouldn't have to see the thing in use, and frankly it just turns into circle jerks about how its done and used
