It is called andaaz, and one guesstimates the amount depending on intensity, potency and feel.... no exact measurement will get the flavours right, but this will be bang on!!

I have seen many street food or fast food vendors spills the food here and there and waste so much of items...but this guy is just amazing...did not even spill or waste any food items or its ingredients.... it's very satisfying by seeing how he is preparing... if this happened for video sake or he has the same habit regularly kudos to him... 😍

I'm seeing some people here commenting about using hand gloves during cooking. Tbh they don't do it with dirty hands I'm afraid to say this but in Italy or in any part of the world people uses bare hands to make pizza dough but people still eat that pizza and appreciate it. You gotta know that
( Not to say things aren't improving, but the standard of cleanliness in india is pretty scary - and so are the terrifying health problems we can get when traveling there. Not so in Italy. )

One reason during covid pandemic in India, million died...they are short of hygiene knowledge... Bacteria transfer from human to materials or food. ...the area is open and exposed to dust and particles from wind...the food are handled with dirty bare hands...( hands are dirty because he pickup materials...then touch the main food. Washing hands on a small bottle of water....just at least use PLASTIC GLOVES....live in a safe modern days...not on a traditional ways... Viruses gets stronger every time....I am sorry, I just want to give advice for your good....not to be racial in anyways. Thanks.

Some people think biryani should be cooked only in a way they know, or there's only one Recipe cooked in hyderabad for biryani, there different biryani in hyderabad itself with variation , and there's Lucknow biryani, Kolkata biryani, and they Cook in their own way. Based on their regional spices. Biryani don't belong to one specific city. First of all in olden days biryani has travelled to India in two different route north and south . And they gave their own variation to dish based on their regional spices..hence said always ignore negative comment.

@@GameRunnerd You can't cook this type of food with gloves. Yes it's not exactly hygienic. But the bacteria will die anyway with cooking. Chicken itself contains bacteria.

One has to appreciate the efforts that go 8n into the preparation of the Biriyani. And here in this particular one, kudos to the Young Chef ..although there are so many other tasks that are not shown here which also must be counted towards the preparation and which possibly are carried out by the other kitchen staff. Nevertheless a massive effort and am sure it’s Yummly delicious as well.
