    I legit cannot stress how EASY these were to make.
    Potatoes are very forgiving, so please give it a try if you're nervous.
    I have 2 suggestions though...
    1) Those little pieces of potato that you cut out at the beginning, don't throw em. I made some quick fries while I waited for everything else to cook. Nice little snack! Just cut em, pat dry em, fry em, then toss pepper/salt as it cools
    2) Add the thyme/rosemary when you add the liquid stock, less burning chance this way

    Is there specific cookware to use at 500 degrees?

    The oven temperature was way too hot, it burned my potatoes
