Yes i think this was a really easy recipe to use as base. It actually removes some of the variables in pouring that why.
I only got my Switch about two weeks ago and it’s already firmly established itself as my daily. The Kami Recipe is really the best coffee I’ve made at home yet, I’m very happy to have come across it

This is not exactly Tetsu's recipe, Daryl adapted it. Tetsu does the final pour at 1:15 and then opens the Switch back up at 1:45. That's a noticeably short immersion. I agree with Daryl adding the final pour and then letting the immersion run for at least a minute (maybe even two minutes?) before opening the switch back up.

I believe that you are supposed to close the switch at 1:15 and open the switch at 1:45 and if it all drains by 3min then your grind size is on point for your CO2 levels. Other than that everything seems on point and I do agree that 18 black clix is just about right for this technique over the recommended ~20.
Oh right! I forgot tetsu only blooms for 30 seconds?
He leaves it open for the bloom regardless; 30s of 60g then another 45s of 60g. He plays with the ratios sometimes 50-130 for instance to bring out more sweet notes. The point I was making is that he ends with all 280g of water filtered through at 3 minutes.
@@gabrielofthesun7001 thank you for pointing it out i actually rewatched it last night because i wanted to make sure i didn't miss out on any of the details as i am joining a competition using the Switch. Apparently what i did is a modified version of the Devil's Recipe already hahahaha. But finishing at 3mins is a crucial part of it so i need to change it.

Interesting what you say about fine particles at 6:00 and how they are the most bitter.
so the, micro fines particles collectively are technically the easiest to extract bec if you think about the qty of micro fine particles in your brewer versus the right sized boulders, they tend to have more surface area. This, in effect, results in over extraction if you are not carefull with your temperature. That's why Tetsu's idea of bringing down the temperature at the last bit is genius bec basically you lower the extraction rate of the microfine particles, hence less bitter.
Also i forgot to mention technically the smaller the particle size, the easier to extract bec they're somewhat softer then. Does that make sense? hehehehe

Can the v60 01 glass fit on the switch?? Always assumed it was just 02 and 03?
Yes, as far as i know hario did not release a 01 switch so i bought the glass v60 and then put it on the switch base :)
