Excellent coffee roasting. I would suggest 3 improvements: 1. Cooling - You can drastically reduce cooling times if you have a cardboard box and vacuum hoover: tape the box airtight and cut 2 holes, one large hole suited to a strainer/colander, and smaller hole for the hoover pipe. Now when you dump the roasted beans, turn on the vacuum and stir until cool (~2-3 minutes). 2. Pre-heating: Before you load the green beans, try preheating your roaster for a minute or two. This will allow for a sufficiently high charge temperature to maintain the ∆T between internal and external temperature of the bean, preventing "baking" your beans, a defect Scott Rao mentions in Coffee Roaster's Companion. 3. Temperature tracking: Possibly the most important aspect in understanding and improving your roasting, is a reliable Bean Temperature reading
On #3. An inexpensive Thermocouple probe, ~2-3mm in diameter, coupled with a meter, could dramatically your roasting. Just note the temperature reading every 15-30s, and as the roast progresses, try to reduce the rate at which the bean temperature increases (ROR) by reducing your gas setting as you roast.

Anaerobic coffee beans are produced by fermenting coffee berries without oxygen. Some think it gives a better flavor than usual coffee processing, which is either drying them, or soaking the berries to remove the pulp.
Loved the video! I’ve been working in coffee shops for long time and we recommend to let the coffee rest for at least 3 days (for filters and more for espresso). Although I’ve saw, on another Japanese creator video, that he likes to roast his own coffee and brew it immediately too. Letting the coffee rest allows it to release some gas that are trapped inside the beans and doing this would improve the brewing. This is why during the first pour (the blooming) the volume of your grinded beans expand so much. I wonder whether it is important to do the jelly immediately after roasting. Also how common is to roast your own beans in Japan?
