@Muhammad Sheikh What do you mean how? Black bear is some of the best tasting meat out there. Especially if they have been eating fruit. Better than deer/elk. My dad was elk hunting last year, looked behind him and there was a bear standing 20 yards behind him. It made some damn good steak, burger and sausage. Bear sausage is definitely top notch. Brown bears and especially grizzlys aren’t near as good though. Meat is tough and much more gamey. They are generally shot just for population control, and as a trophy. Although they have a lot of valuable material that can be harvested from them. Claws hide and fat for example.

I am a kiwi pig hunter from NZ and would love to have a feed of that bear meat he cooked. Looks awesome to eat and taste especially if the bear had been eating berries. The best tasting wild pigs in NZ are the ones that have been eating the native berries. I like how Steve said his brother rendered down a whole lot of bear fat and drank it like a cup of coffee. Maybe not direct substitute but you could try the tofurky sausage andouille. They sell it in whole foods. It's spicy and tasty, delicious. Try it with black beans also. I used to eat a can of black beans with this. Really nice.

Fun Fact: Bear fat is probably one of the best natural oils to cook meat in, Bear fat is good for Human muscle conditions and helps treat athritis, tendinitis, sore joints and many more, Bear fat is said to be of foul smell and taste and many hunters or cooks simply discard the fat, but its rather a mixed opinion, Bear fat is on the safer side when cooking with animal fat.

Bears must be not only cooked but served hot because bears have parasites that can make a human as well as domestic dogs very sick..That said bear has sustained many people throughout history. The Russians do bear meat the best in my opinion. This was a super awesome episode!
Indeed, I heard bears contained certain parasites that are dangerous especially if the bear meat was under cooked but what if after cleaning the bear meat well, I will boil it first with lots of spices and then strain it and after it dried for a bit I add breading to it and then deep fry it. Would this two way method of cooking kill all the parasites in the bear meat?

In my country, we have a popular dish called fat crisp. We put pig's fat in a hot pan and let it cook itself in its own melted fat liquid. The fat liquid is collected this way to be used for cooking & frying, while the crispy remains of the fat are everyone's favourite snack/dish.
