    Heres a tip my grandma taught me: leave the skins on the onions when making stock... it will come out much darker and richer in flavor.. give it a try

    This awesome trick I learnt, is the keep a bag zip bag in the freezer to collect all the vegetable off cuts, like onion ends and celery tops ,parts you don’t use while cooking, then use them to make stocks so they aren’t going to waste. 😊

      Usagikat Kat I do the same thing. We also get rotisserie chicken a lot and we always save the carcass AND all the juices from the container. I have 3 in my freezer now haha. I will take 1 whole day and make a ton of stock.

      ud he stock is the (usually) clear juice in soups. Also called broth or consommé.

    Another great tip is to freeze your chicken stock in ice cube trays and pop them out and store in a zip lock bag after they are frozen. That way you can get out just the amount you need for a recipe, and they thaw quicker since they are smaller! Great video!

    Oh my days, I remember my grandma used to pick the chicken carcass and then make stock from the bones. My grandad kept chickens (he had 85 in total) there was always loads of fresh eggs oh and of course the chicken if they stopped laying. Happy days, many happy memories.

      My grandpa told me if the egg production dropped off, all you have to do is go chop off somebodies head and you will have more eggs than you know what to do with by the next day.

    Hey!!! My stepdad was a volunteer fireman in New York, in his youth, and one of his specialties was.....GRAVY!! Yes!! His sauce was amazing! My girls and I loved it when Mom and Grandpa Wes came to visit cuz he would bring his gravy and make us dinner which was always amazing!!

    I love when you're in the kitchen and doing freezer meals I just finished doing freezer meals took me a couple of days as I had life interfering but I managed to do 22 + + freezer meals and just uploaded my video the other day. I love using my food processor to shred the cheese.

    I use to buy shredded cheese all the time but now I just buy block cheese and shred it myself. You can buy an attachment for your kitchen aid mixer the shreds the cheese. I make it at the beginning of the month and freeze it and take it out when I need it. Plus the pkg shredded cheese has unnatural added ingredient to it etc.

    Hi Kimmy..Leah from Australia here just a tip for your chicken stock when adding your onion leave the skin on it gives the stock a beautiful golden colour.

      I was going to share that same tip! And don't bother chopping all the veggies since you strain it anyway. And a couple cloves thrown in are delicious, especially if you're making it to help a cold😊

      Yea, I had a large stock pot with all the scrap veggie leftover that I keep in a bag in the freezer. I had a lot of the onion skins and it made my veggie stock taste astringent. The next time I made veggie stock I used a few onion skins, and it turned out much better tasting.

    Ahhhh, the silicone muffin cups is the trick! I cooked in a metal container and had to throw it away - i couldn’t get the egg cups out! Im going to buy one of these. The egg cups look so delicious and are a quick, easy breakfast.

    Hi Kimmy this is my first time doing this. I cover my lasagna, shepherds pie etc with Saran Wrap ( Costco brand) then use foil. I cook the lasagna with both on, and take both covers off 10 mins before i brown the mozzarella cheese. The cheese won,t stick to the plastic wrap. But it sticks to the foil on me:)

    I love your freezer meal videos. That’s what led me to your channel in the first place and I was hooked! 😉. I don’t peal anyrhing when making stock. Just rough cut BIG chunks of everything, getting all the nutrients from the peals and slow simmer for hrs before straining. You can also designate a bag or container in the fridge/freezer if you want to add peels, and other stock ingredients to, and when you have ebough you can then make a stock and a lot less goes to waste.

    I make up breadcrumbs ahead and bag them in portions as I don’t like supermarket ones. I add Parmesan, tasty cheese, fresh parsley and pepper. I then can use it for meatballs, schnitzels, meatloaf and on top of my cauliflower cheese and pasta bakes.

    On a blog called Makes and Takes I found recipes for Mini Pancakes also called German Pancakes and one for Mini Meatloaves. They were delicious! They can easily be frozen and popped in the oven for a quick meal. Great for busy days! Love your videos!

    Two things: I write cooking instructions right on the foil with a sharpie. Then I add frozen veggies to my bones when making stock.i just keep a bag of “ends” of carrots, celery, onions (+peels). The bottoms of asparagus or stems of parsley adds wonderful color and flavor!

    just a hint i do is put the grater into a zip bag then grate it saves cleaning up and saves cheese from contamination dairy picks up ease

    I have that same ziplock baggie holder. I like to fold the edges over first so if it does get a little messy when i am filling it, the zipper and top edges stay clean

    love these vids! i love meal planning... just a tip to help with remembering eggs in your egg muffins - i go with one egg per muffin pan and then if there is leftovers i scramble them in a pan with the leftover vegetables and theres my lunch on meal prep day!

    When you shred the cheese yourself it actually melts better. The pre-grated stuff has a coating on it.

      Keto and casserole don’t go together
      Casserole is starches and protein bound together with flour based sauce usually but sometimes a sour cream thing
      Without starches (noodles, bread, potatoes) u don’t have a casserole.

    I looked it up like Kim said. Gravy is made from the juices of meat and often thickened with flour. A sauce is a liquid or semi liquid served over or with food such as pasta. I live in Ontario, Canada and we call what Kim made a sauce, gravy up here is usually brownish in coloring. All in all though she can call it what she likes, as long as she knows what it is. 😊

    One of my best friends growing up was from Italy. Her family called spaghetti sauce, gravy too! Every time you say "gravy" it brings back lovely memories.

    You should invest in a chop and stir for your meat. I paid a whopping $3 at my local Dollar general store and it has been a lifesaver for separating ground meats :)

    I saw in the beginning of the video you said you might not have enough for enchiladas, next time if you want make an enchilada lasagna! you can layer sauce, veggies, meat, and cheese between the tortillas and it tastes amazing!

    I love your channel. I have made so many of your recipes and get excited whenever you upload one. Love your family. I too make a chicken stick out of the leftover carcass. I also make a veggie stick when I do a big cooking by taking the onion skins, carrot skins, tops of celery, stems from parsley, a few whole cloves of garlic with the skins on them and dime seasonings and let it so cook fir a while. I must order those bag holders.

    I got an electric shredder from my mom when I first moved out at 18 now I’m 30 and I use it all the time it mostly does our cheese but it comes with different attachments so you can do tons of different things

    the italian grandmas in NY call it gravy when there's meat in it, doesn't matter what kind of meat or how much, sometimes just a soup bone, and 99% of the time there's meat in there so its always gravy

    You could eat a “Hispanic” chicken salad! We add tomatoes, onion, and cilantro! And a bag of cooked frozen veggies the one with corn, green beans and carrots. Delicious!

    I love kitchen days! It’s just hubby and I. I found some smaller take out foil pans with lids online. I can usually get four smaller pans from a 9x13 recipe. We aren’t leftover lovers, so it works out to maybe 1-2 meals per small pan.a couple of weeks ago I learned Ill likely be down for a week or so after an upcoming surgery so I went into action. Got 50 small pans worth of cooking/freezer meals (entrees and a few side dishes for when we grill) done. The freezer is loaded! I love pulling them out and having dinner on those days I’m too darn busy to cook. I’ve been known to send a few out to bless others, too! So freezer meals can be done for two using smaller pans. Btw, you’re looking great! Not sure how much you’ve lost, but I do think you look thinner. Yay for you!

    The old ways are still the best, people just don't use the chicken carcass anymore, they don't realise just how much meat is left on the carcass or how good home made chicken stock is. It's nice to see someone else who cooks the old ways.

    Hi! So random question but my office just got a Keurig machine, and since I’m LDS and don’t drink coffee, I’m trying to figure out what else I could use it for (besides hot cocoa of course). Then I remembered you have one! Any “hacks” you could share?

    Made the egg muffins and my crew loves them along with the breakfast burritos. I will be adding them to my freezer meals. I just bought a 24 cup muffin pan so I will be baking like a made women. Thanks for a wonderful idea.

    The next time you go to freeze your chicken stock fill the silicon muffin tins and place those in your freezer (on a sheet pan of course.) That way you can pull out a cup at a time as you need it for recipes.

    Hi! New to ur video's.. For ur egg muffins have u tried mixing eggs with water instead? It makes them fluffer, and the taste is richer.

    I tried some of these. How do you reheat the egg muffins? I tried the microwave and they turned out rubbery. I also made the chicken enchiladas and the tortillas got extremely soggy. 🤔
