We in Sri Lanka frequently eat them, but mostly, as curry with rice, yes with a ton of spices and coconut milk. (Sri Lankan style) It is also eaten as deviled fish and fried fish too.
I like your curiosity about different fish species, even though its still treating the ocean as a meat market. My biggest question about cooking a sailfish is if you don't know the meat and you want to taste what its really like, why marinade and over season it? Simple is best, salt, pepper, garlic and ev.o.o and maybe a lemon squeeze at serving then you'll learn what the animal was truly like. Best.
While I like most of my fish rare, sailfish is one that I prefer cooked all the way through. One thing I have noticed is if you do not cook sailfish all the way through it tends to be more rubbery in the pink. I found the fish was very mild in flavor. It does not have that fishy taste to it even when you cook it. The pork chop analogy was a perfect description of the texture. I have not attempted smoking it yet. I hear everyone says to smoke it, so I will try it. I just have not done that yet. I think I will try your yogurt idea too. The cook we did was super simple. Marinated in teriyaki with sesame seeds and served it that way.
Awesome vid 🤙 Some of us in Hawaii, steak it with bone in like salmon vs fillet. Bones increases the flavor of the fish and help prevent the overcooking because of thickness. Sear salt and pepper/oil and finish in the oven with a spoon full of mayo, butter, garlic, Hawaiian 🌶 oil, Parmesan. Less of a spoon for natural flavor, heaping spoon if you looking to pop the palette. 🤙
Hello. Canadian here. What would you classify as "Hawaiian oil"? Because when I google it a bunch of tanning oils show up, I'm guessing that wouldn't go so good on any type of food...
Thomas Sarwer Hawaiian chili 🌶 water or Hawaiian chili oil, you can make it yourself with what ever chili’s peppers you got local/garden or store. I use the mini Thai chili from the garden, grows like crazy!! For the water buy a 6 pack bottle Grolsh beer, drink em all. Save the bottles and sanitize. Put chilies fresh or dry in the bottle. Shove anything else you like that you have on hand in the bottle. I put fresh sliced garlic, ginger, onions etc... stuff it up. Then pour vinegar, hot water and hawaiian salt, or any sea salt. Let all the bottles sit in fridge two for you and the rest you hand out to friends and family because that’s Ohana!!! Put on everything protein, carbs, steamed Vegs, Haole Girls, etc. 🤙
Thomas Sarwer oh yeah the chili oil is fine chopped dried chili’s from the garden/store in a pan of oil of your choice. 1-2 cups. I use peanut oil, veg oil and or coconut oil. Whatever I got on hand. Low and slow!!! Don’t over burn the chili’s but cook/fry it to infuse the oil. Find the sweet spot!! Add anything else to the oil garlic, dried onion, dried corriander crushed, ginger, anise, and whatever you like. Once it all is infused put it in a sanitized small mason jar. Store it and spoon it on everything right after you grill or cook like bbq or grilled steak/chicken. Combo it with the chili water🤯

Had it in a restaurant on the California/Oregon border. Cooked in butter and garlic it was more like beef steak than fin fish. Very dense meaty texture, and the flavor was excellent. I'm from key west. Grew up fishing both the gulf and Atlantic side. Never heard of anyone ever eating a sailfish! Always wondered why not though! I've caught my share of sailfish but have always let them go too! Awesome vid and channel guys!
Bad technique. The safe way is grab it with your THUMBS TOGETHER. Thumbs together is like grabbing a kayak paddle because it’s more natural to go over your shoulder instead of pulling towards your chest
Hey Victor. Good attempt at "roasties". My wife is English and thats the way they do them. A tip. Peel them, gives them more area to crisp. Use a thicker pan like cast and put oil or beef tallow in bottom. Preheat pan in oven to cooking temp, THEN dump in the par boiled taters. Great video!
Finally found a channel whom the sailor eat their own catched fish, this is the truly adventure, eat what we never eat, fishing strangest sea creature, and cruise a new place. Definitely superb
I agree. I am shocked how the younger generation of anglers, especially doing "catch and cooks" cover the fish with heaps of all sorts of artificial spices. Please, if you read this, try to go back to basics: salt, pepper, butter.
@@etiennebotes salt pepper and olive oil if you want a bland ass meal. yogurt is one thing, (I wouldnt try) but theres nothing wrong with marinading, especially with a tougher meat, it tenderizes it. I'd hate eating if everything I ate was seasoned the same with just salt and pepper lol
Hey dude! Stoked for your decision to start a cooking channel! You should reach out to the chefs that have a digital presence and have them teach you (and us) techniques and approaches to cooking (beyond or elaborating on the ideas you learned from "Salt, Fat, Acid, Heat". Great video. I haven't tried poke, sashimi or sushi with it but I have made it with grilled halved lemons and Italian gremalata with toasted pine nuts that came out awesome. Also, pro tip- grill with Evo and s&p at a 45°, then turn back at the opposite 45°. Perfect diamond grill marks.
I like this couple and their family, they eat what they catch and always seem thankful and I bet their parents are proud of them for not only providing food but because they also have made a living doing something they love to do. Good job parents for raising good, honest, and wholesome children not a feat that is easily done.
In Hawaii i grill it simple i ues lemon pepper rub it with mayonnaise and grill the mayo keeps it moist you need to watch and don't over cook or it will make it dry
Our tradition every end of the year is to eat sailfish. We just cook it in water for about 10 minutes. After that we let it sit for a few days on vinigar and red onions. Some people have ham, others have turkey end of the year. We have “balahoo”. Balahoo is sailfish in our local language. Greetings from the Dutch Caribbean.!!
I catch so many sails I don’t feel bad smoking one every once in a while. Goal is to not kill them to help out the charter business but if the fish is tail wrapped and you know it’s going to die then it’s time for the best fish dip. I normally smoke AJ but love a nice oily sail
I just found your channel and love it! I think the word you are looking for to describe the meat would be dense. This stands to reason being the fastest fish in the water. Even their movements in the water are not long sweeping strokes but very short quick ones. Awesome idea with the yogurt! Gonna have to give that a try!
Hey Vic, dont know if you remember me (Avi). Just got my Dexter knife in the mail. Looking forward to using it as soon as i can get on the water. Hope all is well!
Very cool. Agree on making smaller steaks though. You nailed it with the "firm" description. Sailfish is a firm fish; not necessarily tough, just firm. Big difference. With the next one, you might wanna try a blackening seasoning with it. There is a great write up in the NY times with Chef Prudhommes recipe for blackening seasoning. Most people will cut the salt portion of the recipe in half, but with these steaks, I would keep it the same. The salt will break down the texture of the swordfish as it cooks. If it were me, I'd make some grit cakes, top them with sauteed spinach (be careful not to cook the spinach too long in the pan) , and then top both off with a blackened fish steak. Side it with some garlic mashed potatoes, a lemon wedge, and maybe even some butter sauce for dipping. Congrats on the catch by the way.
Try it with just a butter, garlic and olive oil. Baste it throughout the cook. Lemon on top. Simple and delicious. Great video. Looked like a flying fish to me.
It's sad to see an oceanic monster like that die, but it's really fascinating to see them up close and examined like that without fear of accidentally exhausting them to death. Also love the dolphin surf session on the way home.
We got a sail one time, decided to eat it. Took filets off, smoked most of it, I ate some as steaks and it was really good! We bled it on the water though. I cooked the filet chunks on the grill with some lemon slices on it, some minced garlic, a little oil ... Idk why people say they aren't good to eat, they eat pretty good.
I love it! Are you guys lock down are you allowed to fish? We’ve been going to the spillway and spearing fish for catch clean cook as well as catching snakes here in Texas
I believe they are...their govenor was leaving it up to the county's and recently was made state wide, I believe. Fishing during this time has always been allowed, however access has not. Beaches, bridges (keys), public boat launches are closed. Florida, Alabama, North Carolina and Pennsylvania. Although, PA fish commision owned launches are open. Go figure.
Here in MS, our governor just issued “shelter in place” starting yesterday at 5pm. But most public boat ramps are still open but we can’t have more than 2 people in a boat. Hope everyone stays healthy and God Bless
That was an easy sale. I hear I can get more Vik cooking content, I subbed without hesitation! I’d also love to see you and Brooke go on a hunt sometime! Keep up the great work guys!
I've bought Sail fish. It is different, and I like it. I just cooked it in a pan with salt and pepper in butter. I bet that super fresh fish is better. I like the thick cuts, though yours was super thick. I watch it the whole way, under done is great.
This is Steven and Maria we love watching your show I'm so happy you're doing a cooking channel Victor you're amazing cook and so is Brooke we just love her cooking as well
For the best roast potatoes, use russet potatoes. Boil them first until they are tender but not falling apart. if some of the skins come off, that's fine. Oven roast with some sort of fat - saved bacon grease works perfectly. Spice it however you like - we use Hy's Seasoning Salt. That said, your potatoes looked yummy!
Totally correct when you said each Sail has it's own personality. I feel like the midsize fish give a better fight than the big one's. I haven't eaten it yet but I agree you should've cut thinner pieces. I'm not a big fan of thick pieces of fish. Great job on the video. Tight Lines
Fresh sailfish tastes amazing in Baja style sashimi, we add purple onions to it and soy sauce infused with serrano or habanero. add plenty of lime juice! we prepare lots of fish this way. Blue Marlin meat is almost white when you fillet it also really good to eat. Shout out from Cabo San Lucas.

@filthyfuck It stops the meat from having red or dark blood clotting that tastes foul. The fish he filleted had that dark meat that was ruined from not bleeding the catch immediately. It should have been cut out and fed to the sharks!
Just go out and 🐟 fish, They only want to control u Mohamad, world dictatorship.. This coronavirus is a joke, next all new laws will be passed in the name of security. Haha🤣.. Switzerland never closed nothing, lol.. I go fishing every day...👻🏄
Had something similar happen to us once when we weren't even trying to get sailfish. Ended up reeling the fish in backwards as well and wasn't even struggling any longer by the time he got back to the boat. I will say we bled the fish immediately (after photos) and then cooked one of the steaks a different way. I much preferred it seared with thai peanut sauce. Fully cooked it was too thick/hard of a fish for me like swordfish kind of. But just searing it was great!
I have had sailfish once before I made it with butter, apricot jam, and garlic and lemon sauce and that was pretty good that bit of sweetness from the apricot jam just makes it for me That said I have never had any fish in a yogurt-based sauce and I will have to try it on my next fishing trip for sure Great channel
Already subscribed to the second channel, looking forward to more content. I have had Sailfish, and Swordfish, and I always thought it was like a flaky pork chop. They are also some of my favorite fish to eat, because of that fact. Amazing in fish tacos, stir fries, and also in many pork recipes.
Your family is so supportive of you. I wish you guys all the best. I have never had sailfish before. It looks interesting. The bone probably would have made some good fish broth.(I don't know)
Few tips: oil grill before adding your yogurt marinade fish to help with grill marks. Trade secrete for crispy potatoes, blanch then with lemon peel or even just half a lemon. In the water
Victor, that was a awesome video my friend as usual, but I won't to tell you that they are awesome smoked, try it if you have never done it you will not go wrong. AWESOME VIDEO. GOD BLESS YOU AND BROOK.!!!
Where I come from, that would would be considered a “foul-hooked” fish and illegal to keep, unfortunately, due to our fishing regs. Even if it came up lifeless. Despite your hurricanes, you Floridians have it good.
@@dallaserickson2345 They probably do it because it’s not sportsman-like to keep a fish you didn’t rightfully outsmart. Probably the same reason I can’t use gill nets to catch salmon. I’ve personally not once ever had a lifeless fish that was foul hooked. Even so, it wouldn’t be a waste if it perished because the ocean-life would reclaim it in its normal cycle. But again, I’ve never had a mortally wounded fish from being foul-hooked, usually a fin or tail. Most fish are pretty robust, you catch some sometimes that half of their body is healed over from being partially eaten from another predator. But rules don’t get made for no reason, so I’m sure fish & wildlife department had a problem in the past with fishing poachers just jigging away with trebles and shredding tons of fish in the process. Which to me, does seem wasteful if it happened to an excess of fish in one outing, day after day. This is all just my guess though. It’s the law where I am, so I follow it.
Good video! I've been waiting for a Sailfish CCC , was curious to see if it was similar to Sowrd and Deb confirmed it. You did a good job cleaning that fish! I liked the way the meat looked when you were finished with it. I've noticed the cooking portion of the video getting longer, and that's ok... just don't stop catching!
Oh, wow it's looks great, we eat sailfish here in Sri Lanka. But the way you made it with the combination of Asparagus and baked potatoes looks awesome.
Hey buddy! Me and my family just got home from vacation in Cudjoe Key Fl. I turned 49 on this trip and 1 1/2yrs ago I lost my right leg to diabeties. Ever since I was a child I've got an adrenaline rush from catching fish...no matter the size. On this trip I'm on my prosthetic, which I have not mastered yet,but I caught alot of small fish, but I also caught a 54" nurse shark...but with my handicap I really felt I wasnt the one that caught it. Biggest fish I ever caught in my life....exciting...but my son in law was the one that had to bring it in,because I was to scared to stand so close to the water,in fear it would pull me in. That said,I've never seen you bring on a rookie guest, but if you ever do ,I'd love to go out with you guys and catch some big ones in a boat. When you grabbed it by the bill and it was aimed right at you, I was afraid it would give one last jolt and send that bill into your chest.
That's what I was thinking lol
someone called Irwin took 1 liberty too much and sadly suffered for it in the worst way
i was hoping that it did but god hates good youtube videos.
Bad technique. The safe way is grab it with your THUMBS TOGETHER. Thumbs together is like grabbing a kayak paddle because it’s more natural to go over your shoulder instead of pulling towards your chest
Watching him grab the line with bare hands made me more nervous than the bill lol
This is the most underrated channel ever!!!
Finally found a channel whom the sailor eat their own catched fish, this is the truly adventure, eat what we never eat, fishing strangest sea creature, and cruise a new place. Definitely superb
Check out deermeatfordinner

@@etiennebotes tastes OK that way, boomer. lol

Nice to see the feedback from family members- interesting

Hey dude! Stoked for your decision to start a cooking channel! You should reach out to the chefs that have a digital presence and have them teach you (and us) techniques and approaches to cooking (beyond or elaborating on the ideas you learned from "Salt, Fat, Acid, Heat". Regardless of the direction to go with that channel, you've got my support! Keep up the awesome content!
I wanna see a cook off between you and Deermeatfordinner!
Thank you Mike honcho exactly exactly thumbs-up Mike honcho exactly thank you Mike thank you thank you thank you👍👍👍
Great Dolphin Shot, I was speed trolling in Jacksonville last week and had a mama and baby run the bow along with others from the pod. Was super cool.
Love your vids they are really helpful in these boring times love from Western Australia
You both make a Great show on the catch and cook. Brooks dad reminds me of myself. Wishing you both nothing but success. Tom, Cincinnati, Ohio
About time I get to see a sailfish catch, clean and cook... I’m sure there’s a lot of sailfish off of Pompano with some sore lips!

What I like is that you season your food!
I am impressed 🤣
It's sad to see an oceanic monster like that die, but it's really fascinating to see them up close and examined like that without fear of accidentally exhausting them to death. Also love the dolphin surf session on the way home.
We got a sail one time, decided to eat it. Took filets off, smoked most of it, I ate some as steaks and it was really good! We bled it on the water though. I cooked the filet chunks on the grill with some lemon slices on it, some minced garlic, a little oil ... Idk why people say they aren't good to eat, they eat pretty good.
You can't get good sear marks while covering the source of heat with foil.
Sear marks are for show and don't add much flavour.
Sear marks are for show and don't add much flavour.
It’s a pellet smoker. You cover the heat deflector with foil to keep it clean and prevent flareups. It’s more of a smoker than a grill.
Congratulations on the new channel can’t wait for the new recipes
I love it! Are you guys lock down are you allowed to fish? We’ve been going to the spillway and spearing fish for catch clean cook as well as catching snakes here in Texas
Texas Jungle what spillway? Thankfully the governor is letting us
I believe they are...their govenor was leaving it up to the county's and recently was made state wide, I believe. Fishing during this time has always been allowed, however access has not. Beaches, bridges (keys), public boat launches are closed. Florida, Alabama, North Carolina and Pennsylvania. Although, PA fish commision owned launches are open. Go figure.
Roland Fero thanks!
Here in MS, our governor just issued “shelter in place” starting yesterday at 5pm. But most public boat ramps are still open but we can’t have more than 2 people in a boat. Hope everyone stays healthy and God Bless
Loving the kitchen decor. It looks like a real cozy place to eat.
I watch it the whole way, under done is great.
his house is mad nicee 🔥🔥🔥🔥
Patience and perseverance to get the big sail, well done.
You had me at "snappin her doughnut for the sunrise"
This is Steven and Maria we love watching your show I'm so happy you're doing a cooking channel Victor you're amazing cook and so is Brooke we just love her cooking as well
We got a dan d donuts in Panama City fl I thought it was just here it’s a great place
Good stuff man!!!
Wow Victor it's 11 a.m. and I'm craving fish my man, great video as always, I really enjoy the clean and cooking part of the video's, it's amazing how many different spices, herbs, dips, etc., you use and it always looks awesome. God bless you and Brook along with both of your families in these times that will soon overcome. Keep the video's rolling...
Awe yes I’ve been waiting for this. And still waiting for that lady fish catch and cook.

Bro,,,out of the few subs that I have and watch,,,,your kitchen talent is by far F,n phenomenal. Both you and Mrs.Brook are great to watch. I'm newer to y'all's channel. I'm glad I subscribed. Okeechobee fan.
bleed the fish, you'll enjoy the meat much more
I don’t find a difference in taste when I bleed my fish.
Absolutely!
I immediately bleed the fish I catch, the food tastes so much better.
Super Dave What does it do?
I’ve always thought that it depended on how you cooked it.
@filthyfuck
It stops the meat from having red or dark blood clotting that tastes foul.
The fish he filleted had that dark meat that was ruined from not bleeding the catch immediately. It should have been cut out and fed to the sharks!
I agree with you Vic that is one thick piece of fish . I have never eaten a sail fish but it looked good
Man I wish I could go out and fish but my city is in lockdown since 3 weeks 😩
Mohamad ali .D. I hope you stay safe and healthy. I’m praying that this will end soon. God bless you and yours
Just go out and 🐟 fish,

Had something similar happen to us once when we weren't even trying to get sailfish. Ended up reeling the fish in backwards as well and wasn't even struggling any longer by the time he got back to the boat. I will say we bled the fish immediately (after photos) and then cooked one of the steaks a different way. I much preferred it seared with thai peanut sauce. Fully cooked it was too thick/hard of a fish for me like swordfish kind of. But just searing it was great!
Amazing!
I have had sailfish once before I made it with butter, apricot jam, and garlic and lemon sauce and that was pretty good that bit of sweetness from the apricot jam just makes it for me
That said I have never had any fish in a yogurt-based sauce and I will have to try it on my next fishing trip for sure
Great channel
Already subscribed to the second channel, looking forward to more content. I have had Sailfish, and Swordfish, and I always thought it was like a flaky pork chop. They are also some of my favorite fish to eat, because of that fact. Amazing in fish tacos, stir fries, and also in many pork recipes.
Your family is so supportive of you. I wish you guys all the best.
I have never had sailfish before. It looks interesting. The bone probably would have made some good fish broth.(I don't know)
Is there going to be a marlin catch and cook in the future of this channel.
I would like to learn some good recipes for marlin
He already has one I believe!
Wow, I think it was nice to watch the whole time. you caught the fish. I'm lra lot I followed your cooking too.plus everything looks good 👍

Few tips: oil grill before adding your yogurt marinade fish to help with grill marks. Trade secrete for crispy potatoes, blanch then with lemon peel or even just half a lemon. In the water
Sailfish is one of the best taco making meat!
So you have to dump a lifeless jigged fish? That's messed up and wasteful.
Vice I have been watching you and brook for a while l love your show and I love to cook fish my self
I think your cooking channel is a great idea! You keep getting better and better at it! Congrats!

Right now I'm watching you catch a sail fish and it looks so exciting. Anyway ty for all your videos and tips on the catching and cooking. All you guys are so awsome. Wish I could somehow go back when I was 22 or so and do what your doing. Love you guys, keep up the great work!
