Thanks so much for sharing this amazing vegetarian hotpot recipe. Being a vegetarian for 5 years, I miss hotpot so much. I always don't know how to get the soup base right. Will definitely try it out.
PRO TIP I like to freeze a package of firm tofu the night before and then defrost it before cutting it up for hotpot as usual. It gains a nice spongy texture and soaks up WAY more broth Also I often use my 2 liter rice cooker for hotpot since I live in a tiny apartment. It's serviceable but because of the small volume and verrry limited heating settings temperature management is a HUGE issue, especially when I add ingredients
Thanks to your dad for another for us vegetarians. It looks like a great recipe. I will probably try also adding water chestnuts etc. to give the style that I see in the HP restaurants. Big fan of the pickle style bases!
Haven’t commented in a while but I still love watching your Father cook, his “IDGAF” this is how it is” style is amazing. Do you have a cutlery or cookware sponsor? I’d love a video on the tools of the trade he chooses and why
The hot pot is a great way to socialize. You don't need any fancy equipment and you don't need to cook things ahead of time, especially not vegetables. It works best for a small group around a small table; after a few minutes I could understand Cantonese!
I've just found your presentations, they are so informative and simple to follow. I love how you include your amazing family and demonstrate the love and respect we should all show. Thank you from a new follower in England.
When I make Hot Pot I use my electric Fondue set for it. I don't make two soups, just one, so it's no problem to only have one pot and since I can take out the skewerholder it has for Fondue, it's wide enough.
can't tell you how much i appreciate your family thinking of cooking plantbased/vegetarian from time to time!!!!!! and also showcasing how people don't need to subscribe to any label exactly in order to eat food w/o meat or eggs and still have a delicious time
Erm it's pretty common to eat vegetarian in Asian countries. I'm from Malaysia and the vegetarian / vegan / plant based food we have in Malaysia that I know is Chinese vegetarian and Indian vegetarian. I think I know that Adventist Hospital Penang do serve vegetarian as well and I heard about their delicious bakery food. Vegetarian food in Malaysia basically are pretty easy to find, especially Chinese or Indian descendant populated regions especially in the states like Penang and Kuala Lumpur. Not sure about other states since I'm not that familiar LOL
By the way, I would recommend you to follow WoonHeng, ChefDave VeganJourney, Raw Chef Yin. They are TH-cam channels hosted by Malaysians with their own veganized dishes especially food that are pretty common be found in Malaysia. Enjoy ;)
Hotpot is always the best and easiest way to prepare dinner for a group of family and friends. Just have to prepare a simple soup base and prep the ingredients. Heck you can even ask guests to byo some ingredients. There's something for everyone and uncooked leftovers can be kept for next day's meals.
Thank you for offering some of the names in 普通话. I learned some in college, and now I'm trying to cook more, but I'm only finding recipes in Cantonese. I love Cantonese cooking, but it always feels like a missed chance to also be practicing my language skills.
Randy, you are very lucky your dad cook at home ,my dad is a Chinese chef but rarely cook at home maybe he is tired cooking at work want nothing to do at home😢

I want to learn chinese language , I know japanese english and french , I Really like chinese language and chiense stuff and culture ... and yeah that is the WAY ! my town here we have native chinese guys who opened a vegan restaurant , chinese people good vibes people
I've been wondering what kind of dipping sauces daddy Lau likes to make for dumplings and such. The simple sugar soy vinegar is fine, but what other ones did he have at his restaurant?
I love and make a lot of your recipes, I made this one this weekend and wow!!! Thank you I also emailed you a message because I was late for ordering the new year menu after the dead line. Is this still available please let me know thank you.
Now that we’ve done a vegetation recipe, can we try a Kosher dish? Take a traditional meat dish and due a kosher version? I bet there’s a million Jews out there who would love to see a world class chef like your dad cook a kosher version of our people’s favorite food 😂.
If the ingredients are kosher, its kosher. For most dishes without pork, there is no real problem unless you are very strict with the rules and also keep it for vegetables.
@@liortepper3619. @. inaccurate description of kashrut, but I think you’re referring to the fact that this particular recipe appears to be פאַרעוו. I edited my comment to avoid this question being asked again. Be well.
Well i actually worked in a kosher Chinese restaurant where the chefs would make anything they wanted for their own meals, including a special Chinese new year staff meal that they served after the restaurant closed. So one thing they would make was salt and pepper ribs made with veal ribs. Really good!
There’s a lot of ingredients I wouldn’t normally even think about or look at. But idk why… just watching the process makes me wanna eat everything lol. The end is gonna kill my stomach cuz I know I can’t make all this
I made hot pot for my partner and I last night for our thanksgiving feast. I cheated and use a soup base & can confirm the instant pot on our coffee table works swell. I use the sauté function and turn it off as needed to adjust cooking. I’ll be trying your homemade soup base next time we enjoy hot pot. :) Thanks for the tips! Would the addition of 紅棗 and goji berries or other medicinal/herbs to the soup base be acceptable? What do you recommend?
You can add anything you want. Ordinarily I think that medicinal ingredients are not added, unless there is a sick person. A person who needs medicine does not have to share it with other people, and the hot pot is a social occasion.
It’s actually very typical to use ingredients that are considered medicinal in Chinese soups. The two I named in my original comment are the ones I see most commonly in hot pot. Medicinal ingredients/herbs are used on a regularly basis to maintain health and not only used when someone is ill. I wasn’t recommending you turn hotpot into a healing meal for the sick 😂
I think it will taste good if they are matching to create compatible flavour together. Red dates and Goji berries has their own very distinctive aroma and some people really hate the smell and the taste; 100% any red dates or Goji berries will adulterate the whole pot and you won't able to 'clean up' the smell and the taste unless you finish up the whole pot, wash thoroughly the empty pot and to make a brand new one from the beginning, again. And please please please, to put Goji berries when you are ready to eat all of them. Overcooked Goji berries taste really disgusting LMAO
Just throw some meat up in that pot to make it even more delicious! Up here in the cold north I like to use game like reindeer or moose, and even seafood like fresh whale or king crab claws.
Because you do not have enough cooking time to soften the shitake mushrooms if you throw dry shitake mushrooms directly into boiled broth. Dried shitake mushrooms require soaking. It is different with western cooking style.
@@catchnkill I wonder in Malaysia there are fresh Shiitake mushroom to buy LOL My whole life I only see dried Shiitake mushroom, maybe it's because I seldom do the groceries LOL
