  • I'm not going to lie to you. I was never one to jump up and down with anticipation at the thought of Ratatouille. You'd never catch me ordering it at a restaurant, and it's not the first thing I'd think of making using leftover vegetables. It just never sounded, well, exciting.
    How terribly wrong I've been all this time. It turns out I just never knew how to make it properly, and how good it can be when it is.

    I'm an American who lives in France and -please believe me; THIS is the way to make a correct ratatouille! The water bled from the zukes; every component pre-cooked a little before being combined with the other ingredients; and It MUST be a little "mushy" when it's finished (it's not really a main dish, but a side!!). Don't trust a 'ratatouille' that's served with each ingredient firm! (It might taste 'OK' .. but not as yumm as a French style!) Bon appetite, y'all!

    Hands down this is the BEST Ratatouille I have tasted and made. Your recipes always work, your channel and blog are my no1 Go To places. Your recipe notes are also really helpful. I served this with Chicken Marbella and your Couscous recipe; a big hit!! And used the leftover ratatouille in a lasagna with ricotta and Parmesan- delicious!! 👏🌟💖

    Currently in France on holiday. Went to the shop earlier, ingredients here are unbelievably fresh. Got the ratatouille cooking away in the pot now, smells amazing cant wait to eat 😊

    nice. i've not seen it made with olives before but that'll give it a mediterranean feel. and i love the way you cook each vegetable separately then bring it together for the last part. i'll be making this, and i'll add some feta at the end

      There's quite a lot of oil in this recipe & it's quite decadent (but definitely delicious) for a vegetable stew.
      A healthy version would involve tossing the vegetables in a light coating of a controlled amount of oil (maybe even 1/4 the amount), then grilling or broiling the vegetables instead of sauteeing before stewing with the tomatoes. This is something you can do with most meat & vegetables which will go quite a long way if eating healthier is your goal. Though portion control on the bread would probably be the most important part here.

      @@InnuendoXP yes true i would probably sautee most the vegetables in butter instead and ive stopped eating bread now so would probably make this as a side with roasted lamb

      @@aish0059 because the surface area contact required to cook the food is less, with higher heat, so far less cooking fat is required to prevent sticking or conduct heat into the food's surface to achieve a sear. The food doesn't need any kind of immersion in the fat - just a light coating will do.
      Not that there's anything wrong with consuming fat (and the method with more oil is definitely going to be delicious), but the calorie density is high & that's typically people's concern where eating healthy is concerned. You could make the recipe as-is and still be eating healthy - you just need to be a bit more mindful of it against everything else you'll eat that day.

      @@InnuendoXP oh ok thats good to note im trying a higher fat protein and fiber diet while cutting out as mich refined sugar and carbs as i can. So would air frying be beneficial maybe not for this recipe but others?

    Its rare enough for me to find the right recipe, let alone a halfway decent ones. Half the ones online call it a stew even if its clearly an oven recipe.

    So much oil. Is it really necessary to use olive oil every time you fry vegetables? I mean, you are using the same pan, there must be more than enough oil on it

      This recipe is for 8 people (as a side dish) and it calls for 6 tbsp of oil. That's barely over 2 tsp per person. Also just use less if you prefer and you're good.🤷🏼‍♀️

    What kind of black olives are you using? I think the oil cured may be too salty, kalamata maybe too bitter and the plain black perhaps not enough flavor. I’ve never made it with olives but may add them tonight! 🫒

      No people, so much oil is not good for your health, it doesn't matter if it's just vegetables, what's wrong with you? Did you ever hear about heart diseases?

    This is the second time i come back to this channel to cook this recipe😅. It works for my vegetarian soon to be ex husband. Anyway this is probably the only french recipe with plenty of spices. Even though they got many of the best culinary techniques, they food is extremely boring and bland.
