芒果班戟 🥭 Hong Kong’s Famous MANGO PANCAKES!

- A Yum Cha staple: soft egg crepes filled with whipped cream and fresh juicy mangoes. This treat is fun to make and very beginner friendly, so give it a try and let me know what you think! Happy Baking:)
Ingredients
Crêpes:
✰ 1 cup whole milk (240g)
✰ 3 large eggs
✰ ½ tsp yellow food coloring
✰ ⅓ cup all purpose flour (45g)
✰ ¼ cup cornstarch (30g)
✰ ¼ cup powdered sugar (25g)
✰ vegetable oil
Whipped Cream:
✰ 1 cup cold heavy whipping cream
✰ 2 tbsp powdered sugar
✰ 1 tsp vanilla extract
Mango filling:
✰ 2-3 ripe mangoes
Notes:
✰ Yields 8 mango pancakes
✰ Add more powdered sugar to the whipped cream if your mangoes aren’t sweet enough
✰ Cook the crepes on medium-low heat for around 2 minutes; avoid any browning
✰ You can omit the food coloring if you don’t have it
✰ Use a non-stick pan and lightly brush with oil
✰ Pan dimensions: Base is 21x21cm
