Just sharing a tip I learned from an old low carb recipe book - if you press as much liquid out of cooked cauliflower as you can (and I mean until it's pretty much bone dry), the cauliflower flavor isn't nearly as strong in any recipe you use it in. Plus, for a mashed potato substitute, with butter and cream, not only does it taste much closer to potatoes, but the texture is a lot closer too.

I'm wondering what would happen if I subbed a bit of oat fiber for the coconut flour - not all, but enough to get a fiber offset of the carbs on both recipes. And maybe Daikon radish (peppery!) instead of onion for the first recipe?
That's how I am with pizza. To me, the crust is what makes a pizza and no keto options make the cut. Rather just save real pizza for when I'm off-keto or a treat. FWIW, radishes instead of potatoes in my beef stew have been a satisfactory substitution.
Thanks for another fun video. The recipe I tried was very similar to the cauliflower one, I think it was a variation of a Maria Emmerich recipe that used zucchini and flax seed meal. The recipe called for the “tots” to be baked in a mini muffin pan. They turn out really crispy and great.

It's not clean keto, but I use my mama's recipe for funeral potatoes (it's a Midwestern Thang), and just swap out the crumbled tots for a couple bags of raw cauli rice, and the original recipe's cornflakes for pork panko. So, - 1 can cream of chicken and mushroom soup - 16 oz sour cream - 16 oz shredded cheddar, divided - 30 oz raw cauli rice - 1 cup pork panko crumbs (or crushed pork rinds) Stir all together with half of the shredded cheese, then press into greased 9×13. Top with the other half of cheese, and the pork panko. Bake at 375°F until cheese is deep golden across the top.

Love the sweetashoney recipe! I make these for my 3 yo all the time. He loves these; they’re awesome with ranch or BBQ. Great way to sneak in extra veg and protein. I don’t usually add the onion to mine. Instead I use garlic powder and chipotle chili powder as seasonings.
Hi Wes! About the overload of onion in the first recipe; Carine from the Sweet as Honey website is French and in Europe in general the onions are much smaller than they are here in the US. I am European, born and raised, but I moved to the US almost a decade ago. One thing that blew my mind when I got here is how ridiculously large the onions are in the US. One average onion here in the US weighs at least twice as much as the average onion back home in Europe, if not three times more.

(My honorary brother is diabetic and hired me as his personal chef when the pannie started, so I make and deliver fancypants meals that are under 20g net carbs, twice a week, to him and our friends that've signed on.)

@@germangirl1509 you could also coarsely shred turnips or peeled kohlrabi and precook them in the microwave, then blot them dry on paper towels or a linen dishtowel. Add some seasoning ans extract, and use those as a hash-brown texture in a chaffle iron, if you wanted to make it latke-like.

Hi Wes, I just received the cookbook and it is wonderful. It would be a great resource for someone just starting out and needs ideas, and for anyone else who needs the same. Radishes are a great substitute, and have I used them shredded for a breakfast side and as a component in a casserole to give it that potato feel. It's now regularly in the grocery store already sliced up or as matchsticks. I grew some in my garden but could never grow enough to do all there is to do with them. Hopefully you are getting well settled in, unpacked and finding your way around your new neighborhood. All the best to you and your family!

Tried the cauliflower recipe and they came out good! A bit dense but yummy. I made them into more of a chicken nugget size and did ten minutes on each side.
I may adapt that second recipe a bit and try using this riced broccoli and cauliflower mix called FullGreen Riced that I came across at Walmart. The texture is so much like what you would see in actual tater tots or hashbrowns.

The second recipe is good while they are warm. The next day i used them as the tater tots in a breakfast casserole and they were great! Like i couldn't really tell and added some sugar free ketchup... mmmm. Thank you for posting!
I wonder if you could roll these into a small long log, maybe with some kind of wrap to help with shape. Then you could chill so they would firm up and slice off small pieces to make the tots.
The frozen are full of fillers even though they taste pretty good but rather try the cauliflower recipe and make my own! As always, thank you Wes for making keto doable!
What about using turnips or radishes? Those have the closest taste to potatoes … to me. But I will watch to see your thoughts on these veggies. Thanks again Wes!!

do you remember drop cookies, using two teaspoons back and forth to make a shape and drop it on the cooking sheet. I bet that would work well for the broccoli tot to get them to size. BTW happy to hear you and Serious Keto are doing some collab. work. Steve is great. Take care Wes.

I wonder how they'd turn out if you actually fried them in oil, instead of baking? I didn't really eat real tater tots in my pre-keto days (not a big fan of potatoes), but once in awhile they hit the spot.

Amoretti potato extract is a great addition for tater-like things. But make sure you add a bit of extra salt.

You could use a silicone mold to keep the shape of the tots and get the exact amount with each.

I roast quartered radishes and toss with seasonings for a really solid analog for potatoes al forne.
