Really nice presentation and review! As a side note, having a carving axe sharpened at 15 dps and holding up just fine is a good indication that knives with above than 15 dps edges are essentially on the overbuilt side. JMO.

I was looking forward to this axe jig but it doesn’t fit my Gransfor maul at 45mm wide or my Muller Biber maul at 60mm wide.😑 I’m not sure it’s worth $50 bucks and then having to modify it with longer bolts.
I would recommend an 18 degree bevel for knot free wood and take that up to about 25 degrees if you're dealing with knotty stuff. On an 18 degree bevel I'd add a 25 degree micro bevel, on the 25 degree bevel I'd increase that micro bevel to around 30 degrees. For felling, thinning the bit as you sharpen is important, maybe more so than the actual cutting edge, since you want the axe head to penetrate deeply into the wood. Fortunately, axes generally just have a harden cutting edge, so shaping the sides isn't too difficult.
Great question! Funnily enough, I did try that while playing around with the jig. No, the edge on an axe extends too far out from the Universal Support Bar. The KS-123 max knife size is 80mm tall (3 5/32"). If you've got a very small, 3"ish edge to poll axe, it might work.

I'm pretty sure Julia puts 30 degree total on her axes.
