How does the Evolution of Gaggia stack up?

  • For many of you, the Gaggia is the ultimate home espresso machine because it allows the owner to easily upgrade, mod and repair. But what if you don't have the skills to tinker with it? Does it lose its value because at it's core, its just a simple single boiler with a couple of rocker switches? It's a classic but are classics still in fashion?
    At only $500 USD/ $900AUD its one of the cheapest machines on the market and while its limited in its functions (ie: no PID, No Preinfusion or ability to flow control or pressure profile) its elegant look and minimalist 1930s design, will still have people flocking to it as an entry level or first coffee machine.
    The improvements or Evolution from the Classic Pro are minor but they could make a huge difference to your morning brew and if your main focus is getting the best coffee and not the fanicest or most expensive devices, and for those with a smaller budget, the Gaggia Evo Classic Pro can provide its owner who is willing to put in the effort to learn and grow, the greatest rewards.
    I take a look at the new "Evolved" Gaggia Classic Evo Pro to see if the average home barista can get a good coffee from it and I was surprised at what I found out.

    I am OK with a plastic tamper because realistically if someone is buying this machine they are not new to coffee, they already have a tamper.
    What I do have an issue with is that after Covid people started buying espresso machines, so it went from just enthusiasts buying these to regular people who just want a good cup of coffee.
    The issue is a regular person is not OK with 15-20 heat-up time, this is why Breville and the new Gaggia that were developed after Covid have super fast heat-up times.
    Gaggia needs to update the bowler if it wants to sell to non enthusiasts.

    I just ordered one (the 85 anniversary edition)! I will roll the dice and hope I don't have the boiler issue.

    I have the gaggia pro put a 9 bar spring and bottomless portafilter some upgraded baskets a good scale nock box rocky grinder. I love my little set up. It's all you need. I'm having grea espresso and cappuccinos. Can't recommend it enough.

    Picked up this exact model second hand last week specifically to mod. The Gaggiuino mods (the PIP at 12.54) turns the humble Gaggia into a flow profiling and pressure profiling machine like a DIY Decent. That is phenomenal potential at a super low price point.
    Even though the Classic Evo Pro doesn't come with automatic pre-infusion, by turning the steam knob a half turn at the start of the shot for a few seconds (make sure there is a jug or a cup under the steam wand) manual and repeatable pre-infusion is easy to achieve.

    Was going to buy one, but then heard about the flaking boiler problem. That would have been very frustrating.

    Gaggia and Boilergate are a fact unfortunately I am one of those affected, sad I really like Gaggia but don't buy one before they remove the coating in the boiler

      I also am affected by the issue. I hate myself for buying it but I hate Gaggia much more for going through with the stupid move to coat their alu boiler instead of using stainless steel ones.

      'Boilergate'. As I understand Gaggia is going back to the uncoated boiler with their new products. It remains to be seen what will happen with the bulk of new Classics with the coated boiler.

      @@alexanderkowollik3681 AFAIK, they haven't gone back to the uncoated boilers, but instead they have "changed" the coating process. That does not invoke much confidence in gaggia, for me anyway.

      ​@@surfacepro5519 That's what the distributor in The Netherlands told me as well. However you could be right. And there still must be a lot of brand new Classics with the coated boiler out there in shops. In my case: I had the boiler issue with my Evo as well and the distributor replaced the coated boiler with the uncoated previous version in accordance with official guidelines by Gaggia.

    Now, unfortunately, I have an EVO with the problem of flaking, but I have never heard anything about the EVO having a new heat stabilizer, no one else has mentioned anything about this, can you elaborate a little more on that detail, I don't really follow how it worked!?

    Had to return my new Gaggia Evo after a week of having it due to nonstick coating flaking off through the steam wand and group head. Manufactured 06/2023. So disappointed! I had already purchased gagguino mod kit as well, so now I’m thinking about trying to install it in a Rancillo Silvia or a Profitec GO. There should be a class action lawsuit!!

      Thanks for sharing, I haven't heard of it happening a lot so maybe can't get a class action. As for your next machine, go with the Go! 👌

      I am in the exact same boat. Idk what to do now. They sent me a new boiler, also coated. Was about to start on my gaggiuino build

      Not this batch. I have heard that one particular batch with manufacturer date of 6/23 had flaking. I'm confident it was an isolated event but I also hope the company is working to ensure it doesn't happen again.

      @@Rydecoffeecoach It can only be true if Gaggia can travel back in time because people have received machines well before that date 6/23 that are affected and continue to receive machines into the new year that are also affected,they must have made such a hell of a big batch that day!

      not a particular batch,mine is manufactured 10/23 and have the problem as many others in forums and groups for gaggia,the date have nothing to do its general problem due to mistake at polymerization of coating inside of boiler@@Rydecoffeecoach

    Hoping to buy a home machine soon, I'm curious if the MiiCoffee Apex (Turn - Legato), actually will stand the test of longevity vs the Gaggia Classic Pro... only 20 years into the future will we truly know right? Am I wrong to notice that the Capresso EC Pro and the Apex-Legato are similar looking machines?

      The Capresso EC pro might look similar at a glance but they are vastly different machines and I wouldn't trust the build of the Capresso. The Turin Legato "Apex" is the one you want! 👌

    Isn’t the new gaggia espresso style/deluxe machine the newer version you’re asking for? It is still simple with pid.

    Well the Turin Legato (also under other names) is definitely competing with the Gaggia offering. I'm also disappointed with this latest model, not much of a difference really, just internal upgrades as you pointed out.

      There are lots of tampers with a stainless steel base and timber handles which are nice and weighted. You should be able to find any cheap 58mm tampers online and if you want the best ones then look at Pullman tampers.
