    I think you forgot the most important; to clean the basket after the extraction with a kashmir cloth and to rinse the cup with water from the dead sea for a neutral ph, also I would add to brush of any excess coffee with a panda bear hair brush to give it a polish feel

      You are right, but since I think that red panda' hair is more superb, I will be using that instead.

    I have been using my Gaggia Classic Pro for two years now and have developed my own workflow but I have to say I really like what you're doing here. I'm going to adjust mine this morning to see how it works. Thanks for sharing!

    Just picked up a GCP used with a Eureka Mignon Manuel grinder. Upgraded from a 10 year old DeLonghi ESE. Happy to find your channel. Thank you for sharing! Great video quality! Your steam tip upgrade recommendation led me to the Shades of Coffee site, where it looks like I’ll be spending some money once they are off Easter break. Thanks again for posting the videos. It is very educational to see what you do and read your instructions.

      @@QTHomeCafe I am enjoying this journey! I use TH-cam to learn about everything. From home and car repairs to a deeper understanding of nearly any topic. It’s all here. But video/review quality varies greatly. I’ll probably go at this slower...normally I jump all in. I just received the 18g basket. Debating the spring mod next. Did your cut spring work as well as the new lower pressure spring?

    Very nice workflow you have. I used to be super precise with everything at first but honestly, you will not notice it one bit if you’re a little over on the weight. To save time, skip the weighting after the grind and wdt. WDT is only useful when doing straight espresso. You will NEVER notice a difference in a milk drink. Just being critical here but everything looks awesome and had fun watching! Thanks for putting it out there it’s been a pleasure!

      It’s a very nice additional to the workflow except for the part where you have to fish it out from the knock box. It should also helps with water distribution from group head to the coffee puck.

    Same set up as I have! I just installed Shades PID this past weekend, changed to 9 bar opv, and "the one" hole steam tip. After changing to 9 bar, espresso was coming out so fast (18g IMS basket doing 2:1 in 10 seconds!) so I had to install one shim in the Sette 270 to get the grind up to like 7ish setting for grind size. Still experimenting...

    I followed your videos SO closely when I first got my Gaggia and was learning the art. Took me a long time but I finally worked out how to steam the milk perfectly after a lot of trial and error. I do feel like I've outgrown the Gaggia though, do you feel the same? If so, what machine would you look at getting next?

      I’m glad to hear! It’s a great feeling once you get a hang of the milk steaming on this little machine😄if you’re on IG, share the latte art with us sometimes.
      And I hear you, I do feel an urge to upgrade as well but my wallet probably need to wait😅Before getting a new machine, I probably would want to upgrade our grinder. Something like Niche or a flat burrs grinder like DF64 with an upgraded SSP burrs. For espresso machine, I’d love a Breville Dual Boiler, Decent, or La Marzocco Linea Mini😄

      Yeah I was deciding between manual grinder and electric for a long time, in the end I went with the DF64 and couldn't be happier with the results and convenience. I do like the Decent and the La Marzoccos, and also the Rocket Appartamento, but it will be decided by my wallet too :)

      DF64 is such a great grinder and what it can do. After we owned Gaggia and have PID installed, temperature control is definitely something that we need to have on our next machine. The other thing that we really want is the ability to control the brewing pressure. Rocket Apartamento is slightly behind in terms of its technology compare to like Profitec 500 but its such a beautiful machine!!

      Gaggia is a great machine! If you don’t mind used machine, there’s a lot of modded-out Gaggia for cheaper! Either way, good luck!! Let us know how it goes! Grinder also play a very important role of espresso!

    Nice workflow! I never can get a consistent milk texture with my GCP PIDed. When you Air the milk, do you just wait till it hits the steam wand line itself or look by how much volume it raised? I always not sure if I air too much or too less.

      Thank you for stopping by and We’re glad the videos are helping! We have added PID, changed to a 9bar pressure, changed the steam wand tip to a single hole, changed group gasket silicone, and changed to IMS shower screen. We are planning to add dimmer mod to it very soon.
      PID and 9bar opv spring are probably the most important mods for this machine. Highly recommended!

      Hello! installing PID on GCP is not the hardest thing. I would recommend read through the manual 1-2 times before doing it. That’d help A lot!

    Great video! Thanks for sharing! I do have a couple questions if you don't mind. For a Gaggia Classic Pro, is it really worth investing in the PID kit for temperature control? This kit is sold by Shades of Coffee, can I trust that product? could it cause damage to the machine? I really want to have the best experience with the Gaggia but don't want to lose it. In addition, reading about the OPV springs, the same questions, is it worth it? do you feel a significant difference?, and can you trust Shades of coffee??? do you really feel the difference brewing the expresso? For some reason, I have been reading when people install the OPV 9 bar they are struggling with the timing and settings after the change. ---------------- I know is a lot but if you can answer I will highly appreciate it!

      just stumbled upon your comment and i will be glad to answer with my personal experience too. Shades of coffee is somewhat the place that has everything gaggia classic related, people who don't want to source themselves with PID kits from aliexpress or other places are always going the shades way, i would totally recommend them, they provide all of their stuff with clear instructions and if you run into issues with their products, they will absolutely help you fix them. Investing in a PID kit is a must if you don't want to guess about temperature and develop a temp surfing routine, with the PID kit you can have a lot of control and you can also improve your steam power for your milk drinks. I've installed a PID kit on my GCP just two days ago and i love it, i really recommend it. And the OPV spring mod is one of the simplest yet greatest mods that you can make to your Classic, i already have it for over a year and made it about two months after buying the machine. You might struggle a bit after the changes because you will need to dial in your shots since you're dealing with a new brewing pressure, maybe grinding finer/coarser and stuff, but once you find the sweet spot, there's no way back.
      It is also worth noting that all of these mods are totally reversible, meaning that you can get back to a factory stock Classic and no one will ever notice that there was a PID or different OPV spring, don't be afraid to mod your machine! any mod you make will be considered an improvement and also a learning experience

    Nice video! It was very helpful for me. We just started in this world.. we are kind of new.. We followed all your steps.. however, if we wait 35s there is a lot of coffee.. are we doing something wrong (99% we are)? Should I press more the coffee? Thanks in advance!

      Thank you so much! I would recommend looking at your espresso instead of the time. If you grind 18g of espresso and brew 45g, it should take about 25-30seconds without pre-infusion. Tamping is hard if you have never done it before. I would recommend looking at self-leveling tamper like normcore to make it very easy and consistent. There should be a link under the description. Let me know if you still having issue.

    Great video :) I’m almost set to use my old gaggia classic after replacing the boiler and the shower block. I also have that bottomless portafilter ordered too which I’m quite excited about lol.
    Would you recommend that grinder? I normally just buy illy pre-ground and I’m looking to take the next step. Thanks again 👍

      That’s very exciting for you! It depends on what’s your budget is. Sette 270 is a great grinder if you can get it at 300 for refurbished. I would recommend DF64. It’s a flat burrs grinder and you can use SSP burrs if you wish to upgrade!

    How do you like the black mirror? I am looking at this exact machine scale combo and I was afraid that the black mirror would be too thick and I would not like the tight fit between the scale, cup, and portafilter. Especially if I don't have a bottomless portafilter

      Black mirror is a very good scale; responsive and accurate. It’s a little bit tricky using it with a regular drip tray. Regardless of this scale, we still recommend you getting a lower drip tray (either buy one or 3D print one) and a bottomless portafilter. It’s a pain sometime dealing with a tight fit but we have been doing it for a year so we do get used to it.

    I have an identical setup, it’s pretty funny. Down to the stainless pitcher.
    What coffee do you use and what setting on your 270 is it? Reason I ask is I can’t get my shots dialed in to save my life

      That’s really funny! We typically get coffee beans from our local roasters. Have you change the brew pressure from factory setting to 9 bar? Also, you can try to do a “poor man pre-infusion” to help with the extraction too. Every grinders are typically different so we don’t usually recommend you going off of what we are using. Standard espresso recipe is 18g of ground coffee and that should yield around 36-40g of espresso in 25 seconds and you adjust that according to how it tastes. I hope that helps!

I actually did upgrade to the single hole steam tip from Shades of Coffee and like it much better. There’s a video where I shows the comparison between the two if that helps🙂

    Does the PID allow the Gaggia to make temp. adjustments automatically or is it just for visual guide to tell you the status of the boiler?
    Also, is the steam from the one hole tip dryer compared to the stock two hole tip?

    Question : I just got my Gaggia Classic Evo Pro and was wondering if it’s normal for the Portafilter spouts to drip after pulling a shot ? Mine drips for a bit until I shut it off. Doesn’t drip from the head or anywhere else. Just the side spouts.

    Is it okay for the "brew ready" indicator light to go on and off while pulling a shot? I imagine the boiler is turning on to maintain the temp.

      Thank you for checking out the video! PID does make it easier to froth milk but it shines the most when you are brewing espresso. There’s a single hole wand tip call the One from shades of coffee and that helps us a lot with the milk texture.

      Thank you sooo much!! 🥰 it actually doesn’t come with a milk pitcher so you will have to buy that extra and I also recommend grabbing a 58mm blank basket to do the back flushing or clean the machine! I hope you enjoy it!

      You’re welcome!😃And the pitcher I steamed in is from Breville - I got it awhile back. The rainbow color one I pour latte art in is from Diano on Amazon - I have it linked in the video description. Honestly for you, I’d recommend trying the 15oz pitcher from Slow Pour Supply knowing what IK now. I went through a lot of pitchers in the learning process😅it’s a good one to start with.

    What Size are your Loveramics Cups? The Links in the video description seem not to work. I am struggling between 200ml and 250ml and wonder what you prefer?

    We have two Gaggia Classics. One 14 years old, the other 20 years. We are fussy, and only enjoy very good coffee. Sorry, but this is toooo slooow. Too cold. Too pedantic. Life is too short for this. Buy very good coffee. Press the button and let the Gaggia do the work. THAT is why it is one of the best and highest regarded machines ever. Dont need to measure everything. If you cant use for eyes and ears, then you havent been making coffee for long enough. Your result, visually, is great. Well done. But by now I would be on my second coffee!!!

    ngl, i really hate that scale.
    it's the slowest freaking scale to tare and it always fluctuates. sometimes it never goes back to zero. i ended up just getting a cheaper and more lower profile scale.
    i also got a magnetic kitchen timer that has multiple timers so i can time pre-infusion and time from when coffee starts coming out of the porta filter. if you didn't have the pid, it helps for the temp surfing routine too.

      Hello there! It works well enough for us but I wouldn't recommend it for Gaggia. It's definitely on the larger size and make it a little inconvenient on some cases. Luckily, we did put in PID and that really makes a huge difference in our work flow.

    Hello can I ask what you have your offset at? I see that your pid temp was at 218°F , but I’m struggling to dial in my temperature and see that yours is fairly high

      Hello there, I don't believe that my machine has set an offset. Regardless, 218 is definitely high. If you are doing the poor man pre-infusion, I would maybe try 205 with no offset and if not 200 is not bad, you will have to do some testing too. Then I would leave it at that and try to adjust the grinder instead of the temperature. Thanks!

      Not a problem at all! Typically, I used a 15oz milk pitcher for steaming. Sometimes 12 Oz milk pitcher if I want to drink a smaller drink.

    No one has questioned the non-stick coating inside the boiler. Gaggia uses Exelia 3010-B242. Exelia is used in the cooking and baking industry. The Food & Drug Administration has also approved the use of Exelia 3010-B242. Does it matter? The FDA also approved the use of Teflon and which has been proven to cause cancer. Boiling water is not as hot oven temperatures but it does not mean using Exelia 3010-B242 is safe either. Fluctuating water temperature, from refrigerated to near boiling, sits inside the boiler for multiple hours, days, and weeks. Can the Gaggia Classic Espresso Machine cause cancer? Where is the data proving that Exelia 3010-B242 is safe? What is the list of chemicals in Exelia 3010-B242? Why isn't the list of chemicals used in Exelia publicly available? How are the chemicals bonded together? How is Exelia 3010-B242 bonded to the aluminum boiler? Too many questions. Zero answers....

      Sette 270 is a great grinder! Congrats! Currently, we are using around 6a-c. Our machine has 1 shim already installed and we just recently added another shim so 2 shims in total. The most important thing we learned from using it is that you need to have to run the machine while changing your grind setting and always “rinse” your grinder every time you adjust your grind setting.

    Nice setup and art. Question-210F seems pretty hot for a Shades of Coffee PID. Do you have it set that high to compensate for the drop in water temp when you pre-infuse using the steam knob ? What is your offset set at on the PID?

    Why are you not doing temperature surfing? Drain after boiler light goes up until it's off, then wait for it to go up, wait 10s, put into steam mode for 5s and then pull a shot.

      But really there isn’t any maintenance needed except for wiping off coffee stain when I have a bad shot and it gets on the coffee somehow. The color has been staying the same since I got it

    I hope you're still responding. I got a GCP last month and learning a lot about it. The only thing I've done was change to the 9 bar OPV. I am struggling with steam though. I tried the "start steaming right before the boiler turns off trick" but I always seem to run out of steam before I can even bring my milk up to temp. Does the 1 hole tip fix this. Does the PID fix it as well by forcing the boiler to stay on?

      @@QTHomeCafe About 150g of milk. I flip the switch about 1 - 2 min after I pull a shot. I then wait 25 seconds before turning the steam knob.

      That amount of milk and you waited 25 seconds after flip the steam button should be plenty with the steam power. You might want to do it more of an angle to get that vortex.

    Hi guys I need some advice! Im looking at either a gaggia CP with a sage smart grinder pro or just getting the new sage barista express impress as it does all the work! Would I really get better tasting expresso with the gaggia CP and separate grinder or should I go the more automated route of the sage machine?

      GCP is a good espresso machine but to make it great, you will have to modify the machine and that will take time and void the warranty. Sage Barista Express is great right out of the box. However, Sage grinder pro is better than Sage Barista Express grinder but not by a lot. Grinder is actually what makes espresso taste great. You won’t regret going either one of those. There’s a lot of tips and tricks out there to make espresso great from your selection. Whatever is cheaper or looks better for you. I would highly suggest you save up money and get an even better grinder though. Hope that helps!

      Thank you so much! I’m not sure which stirrer you are referring to. If you are talking about the WDT for the coffee ground before I tamp, you can get that from Etsy by Appamakes for 10$. If you are referring to a stirrer for the espresso shot, you can use anything to stir to make sure that all the espresso is well-mixed before you taste your shot.

      Hello there! It most definitely does help but it’s not the only thing that will help with producing consistency shots. Keeping consistent recipe such as 18g in and 36g out in 25sec and addiction of 5sec or pre-infusion so total brew time is 30secs and a great puck prep with WDT tool.

      If you are doing what we are doing, make sure you don’t do it too long or else the water won’t be hot enough. 5 seconds should be long enough. Temperature is very very important to espresso making. Medium-dark roast beans are less sensitive to temperature but if you are using light roast then it will be hard to dial in. Do you happen to have PID or know about PID?

      218F was definitely too high 🥲 we learned about that pretty quickly. We dropped the temp to 210F now and it seems to be much better even with 7sec pre-infusion. Honestly, we are just experimenting things. Pre-infusion is definitely a must do to increase quality of the shot and it’s consistency. Dimmer mod is definitely our next project. We have been looking around for a more aesthetic pleasing answer than some of the other GCP dimmer mod out there 😅 We really want to play with flow control.

      It does lose crema faster that way. Sometimes though, it can be difficult to fit a cup/mug underneath the group head with gaggia.

      We are currently using the 25lb spring one. We have tried the 15lb one and it was a little bit too light for our liking. It doesn’t really make any difference though to be honest.

      Hello! When we first got GCP, it takes us awhile to get used to it. Our biggest recommendation would be to try to change the default pressure of the machine down to 9 bar pressure. That’s the ideal and it should help with the extraction. Every grinders are different so we recommend you dialing in and find that sweet spot around 18g of ground coffee, extract 36-40g of espresso around 25 seconds and go from there. However, we are usual long grind around 7A-C. We hope that help!

I made a distribution tool which works well. th-cam.com/video/PIlVPYVreAA/w-d-xo.html I have found turning on machine at least 15 minutes a head of time make the unmodified Gaggia work better. I had to step up my game as you just suggested. I also found that on the unmodified Gaggia that turnning on the steam switch for 15 seconds on then back off. then hit the brew switch. I have made 6 wonderful espressos. I have tried 1to 2 1 to 2.5 and 1 to 3 after 1 to 3 shots start get bitter. I ramble on anyway thanks for links and advice.

      That’s amazing and I’m glad that it’s been going great for you! Yes, turning the coffee machine on whether or not your machine has PID, it makes a huge different. Espresso is really temperature sensitive so if everything that the espresso goes through is cold, it will drastically reduce the espresso temperature and chagrin the way it tastes. I would recommend getting a smart plug where you can set a timer so it comes on everyday at the time you want it on or you can remotely turn on the machine. I’ve been really into 1:2.5 ratio right now!

      Hey there! For my grinder, it’s typically at 7A-C but every grinder is different. You will have to experiment and see what works for you.
      I really would recommend you getting a PID and change the brew pressure from stock to 9 bar pressure. It makes brewing espresso a lot more controllable and easier to do.

      It can be a good idea to get a "barista" version of the alternative milks if your local store stocks one! regular alternative milks won't usually make as good of foam when steaming, though steaming will heat them up and make some foam.

    10 minutes to make a cappucino. Dear lord. All that puck work is so excessive most of that really wont make a diccerence at 9 bar... also the pre-infusion step is most likely detrimental to the shot since opening the steam wand is going to drop boiler temp. I would not do this, especially sincd you are making a milk drink. If you still want to do low pressure preinfusion just get a dimmer mod for flow control.
    Cant say nothing about your steam milk and latte aet though. That was beautiful latte art.
    You can make this drink in less than 2 mins and itll taste the same. Grind straight into portafilter, tamp, pull shot, steam milk. Done. Especially since you have a PID it should be a breeze.
